Baked Mazorella Sticks.

Hello everybody.

Plan for today was kofta topped with tomatoes, onions and potatoes with Iranian rice on the side.

That was the main dish, then I decided to try this appetizer when my son sent me the video while in lectures, thought it’ll be a nice surprise when he comes home.

End result is good but definitely fried ones are better but they’ll do as healthier alternative.

You simply coat the mozzarella sticks in flour then dip them in eggs then in breadcrumbs mixed with oregano and spices. Then you repeat process again with eggs and crumbs.

Leave in fridge or freezer then coat with melted butter and bake for 15 minutes.

Kofta with Tomatoes.

Hello everybody.

Waiting for my sister in-law and her son for lunch, upon his request his grandma made freekeh and I made kofta with tomatoes peppers and potatoes.

Ingredients and method:
* 1 kg ready mixed kofta (minced veal with onions and parsley).
* sliced mixed veggies: eggplants, courgettes, pumpkins, potatoes.
* sliced tomatoes and green peppers.
* 1 pack tomato paste.
* 1 cube maggi.
* 1 1/2 cups water.
* salt and pepper.

* form the kofta to fingers shape then cook on low heat till golden and done.
* grill veggies till brownish on both sides, some people fry them but dish will be too oily.
* arrange veggies in rows then add kofta in between. * dissolve tomato paste and maggi in water then add on pan.
* add salt and pepper.
* cook on low heat for 1 hour.
* serve with white rice.

Kofta Eggplant Bundles.

Hello again.

Lots and lots of eggplants in my fridge, have to cook them before they’re ruin I guess.

Lucky me my sister came to lunch today and she’s an eggplant lover cause half of my family doesn’t eat it at all by the way.

Quick lunch solution, kofta balls wrapped in fried eggplants as bundles then cooked in tomato sauce. Though the shape wasn’t perfect but taste was very good.

I also did some Gazpacho soup, good in this hot weather.

Kofta with Tahini Sauce.

Hello everybody.

Today I splitted the cooked kofta balls into two pans to satisfy all family members.

One pan with onions, garlic, potatoes and tomato sauce for the boys and the other with some potatoes and tahini sauce on top. All then in the oven till a bit roasted.

Love kofta with tahini and this was the only solution to eat it cause mostly I’ll eat it alone, don’t mind that at all :mrgreen:

Kebab with Tomatoes ( كباب هندي)

Hello everybody.

Had to go  to Irbid this morning so I needed to cook something quick, after giving the boys two options kofta or spinach they agreed on the first, I even cooked the onions and tomatoes last night to save time.

Early this morning I added ketchup, mustard and  to kofta, made them finger shaped,sautéed them in some oil then added them the the sauce, I even cooked the rice in case I was caught up in time which is exactly what happened.

Ingredients and method:

* kofta meat ( ready from butcher)
* onions.
* garlic.
* tomatoes.
* green peppers.
* 1 can chopped tomatoes
* 1 spoon ketchup and mustard.

* mix kofta with ketchup and mustard.
* form it to small kebabs finger shaped.
* coat them with flour then keep in fridge for a while.
* heat some olive add the kebabs till brownish from all sides.
* add chopped onions, garlic, peppers sautee with meat till tender.
* add 2 peeled chopped  tomatoes and the can.
* leave to simmer for 30-40 minutes. Or you can put it the oven if you like.
* serve with rice.

Friday Lunch.

Hello everybody.

Though general atmosphere in all Jordan is still sad and angry after the tragic passing of away of the Jordanian pilot but I’m sure he’s included in all our prayers all the time.R.I.P Muath Kasasbeh.

Lunch today was kofta with tomatoes and potatoes on top, Iranian rice, avocado dip, roasted courgettes and hummus. I tried to use all vegetables and stuff in the fridge in order to clean and rearrange the fridge for tomorrow’s shopping.

Kofta Fatteh(فته كفتة).

Hello everybody.

Yesterday’s lunch was a recipe from Al-Rai newspaper 3 weeks ago,wanted to do it since then.
It’s basically Kofta balls or fingers cooked in tomatoes,onions and some tomato paste (كباب هندي) but instead of eating it with rice you serve it as usual fatteh.
Start with a layer of toasted or fried bread,then meat tomato layer then tahini sauce. Finish the dish with chopped parsley and toasted nuts on top,really good try it.

Well as for today’s lunch,we ate at Mom’s. Stuffed vine leaves and courgettes, salad and fruit salad. Delicious thank you my dear mommy.

Kofta with vegetables and Chicken Wings.

Hello everybody.

Long working day also,bright side is we finished early so had an hour nap before entering the kitchen!

Today’s ftoor was kofta with vegetables,only potatoes,peppers and tomatoes,no eggplants or courgettes and a some hot spicy chicken wings.

I also made mashed fava beans and a bowl of salad.

Anarokrema.

Hello everybody.

How are you all? hope you’re not tired from fasting long hours!!

Today’s ftoor is kofta with sliced tomatoes and green peppers,chicken quesadillas,broad beans salad and Greek salad the way we ate it in a cozy restaurant in Limassol Marina called Derliciuos ,it’s basic Greek salad but with cute presentation.

As for dessert I made this also Greek dish called anarokrema, which is roasted phyllo or puff pastry  and cream with honey and nuts on top.

Ingredients and method:

* puff or baclava pastry roasted till golden.

* Anari cheese or any sweet white cheese with some sugar and rose water added to it ( like the one you use for qatayef)

* cream.

* walnuts and cinnamon.

* sugar syrup pr honey.

* After toasting the pastry layer it in a deep dish.

* mix cheese with cream,sugar and rose water and add on top.

* add walnuts and cinnamon.

* crush remaining pastry and add on top.

* keep in fridge to cool then add honey or syrup upon serving.

Kofta with Vegetables.

Hello everybody.
  Weekend almost over, hope everybody relaxed and boosted for next week.
  My husband brought various vegetables from Ghor Thursday so today I made kofta or kebab fingers with a selection of veggies, as I recall some people call this ” Masfoufeh” meaning lined up cause of the way you arrange it in the pan. Please confirm this info if correct or not.
  I also made Fatoush, kind of salad with toasted bread and summaq.
  Plus, I bought some fresh fruits and mixed them into a great refreshing cocktail.
Ingredients and method:
* 1 kg ready mixed kofta (minced veal with onions and parsley).
* sliced mixed veggies: eggplants, courgettes, pumpkins, potatoes.
* sliced tomatoes and green peppers.
* 1 pack tomato paste.
* 1 cube maggi.
* 1 1/2 cups water.
* salt and pepper.

Fatoush:
This salad is of Libanese origin, it’s basic salad with the addition of radishes,watercress (بقله ), toasted pitta bread with summaq, pomegranate sauce, lemon and olive oil as dressing.
 
I was lucky my best friend came by for coffee after lunch, great with some dark chocolate.
