Weekend Events

Hello everybody.

Full busy weekend as usual, best thing about it is the warm sunny weather, we even had lunch outdoors today.

Yesterday’s lunch was spaghetti with tomato sauce, minced meat and mushrooms,then we had guests coming in the evening so I made a simple basic cake, another batch of walnut cookies and a colorful cheese veggies platter.

This morning I went to a lovely farmer’s market, got a bunch of fresh basil which means pesto sauce was done immediately then lunch was crunchy chicken breasts, Nigella Lawsin’s recipe again, a big bowl of fatoush and a delicious Caprese salad.

Ramadan Preparations.

Hello everybody.

Busy morning preparing for Ramadan cause I get too tired first day so thought I’ll do some things to be at ease.

Did some samboosek, cheese rolls, roasted bread and a big pot of syrup for the sweets.

Lunch was various fries, potatoes, eggplants and cauliflowers with pickles and tahini sauce.

Salad was Rita’s recipe, wide green beans with garlic and cherry tomatoes.

Lovely Lunch at My Sis.

Hello everybody.

Busy Saturday morning as usual,grocery and many errands, good news is no cooking cause we’re invited at my sister’s house,very good feeling sometimes 🙂

Lunch was superb,well done and tasty as always, tomato soup, baked fish with saucy tomato garlic and herbs sauce,spiced rice with nuts and raisins and fatoush. Dessert was a new recipe,cream with Oreo yummy yummy.

I baked her favorite cake and took it with me Orange Poppy Seed Cake.

We really had great time,thank you my lovely sis.

Family Dinner <3

Hello everybody. Today I invited my lovely family,I waited till now wishing that my sis and husband may come to spend last days of Ramadan and Eid here,but unfortunately they couldn’t 🙁

As for ftoor I made  curry rice with  vegetables and chicken,meat loaf and roasted potatoes,shushbarak with tomatoes, fava beans fatteh,fatoush,broad beans salad (Rita’s salad) and of course lentil and mushroom soup.

For dessert I made crunchy fried samboosek sheets with caramel sauce ( will post recipe later also) plus desserts from last night’s gathering,3eish el saraya and cake.

Chicken with Herbs.

Hello everybody.

Today is chicken day ,I brought with me different kinds of mixed herbs from Cyprus so I did the recipe Chicken with sesame seeds and oregano and added some of new ones to it.

I also did sauteed vegetables,Armenian freekeh with cheese and I have some potatoes from yesterday. Made more lentil soup and fatoush.

Dessert today is qatayef again, nobody says no to it 🙂

Ramadan Kareem.

Hello everybody.

Ramadan Kareem  family and friends,though this holy month must be spiritual,full of prayers and good will,but as usual all housewives face a big dilemma each day,what to cook? who to please? is it enough? need more kinds? who to invite? make qatayef or no? each member will start asking for certain dishes and cravings.

Best thing to do in Ramadan though hard to apply is to decrease  quantity you usually cook so as not to have many leftovers,plus try to make all your grocery shopping once a week to minimize the effort and time. Well as I said this might not work out everyday but worth trying.

I will post what I cooked everyday after Maghreb to give you ideas about what to make the next day,hope you all go through this month with good health and less tiring work in the kitchen,I think moms or whoever is the one responsible for feeding the family specially at this time of the year,deserves a prize cause each year everybody I know starts with a decision not to cook a lot and eat less cause of the heat and high prices but you’ll always find full tables and full lines in supermarkets and exhausted moms ,God bless you all moms and dads in the Muslim world.

 

As for today,a tradition since long time ago,first day begins with stuffed vine leaves and courgettes with yogurt and cucumber salad,fatoush,lentil soup,some sambousek and a must to my son mushroom soup . though many families believe specially in my family that you must cook something white the first day like mansaf,or anything cook in yogurt but it’s not a must,well I made cucumber with yogurt,guess this is white enough 🙂

Dessert is QATAYEF stuffed with walnuts and cheese,I usually bring the small ones that’re supposed to be stuffed with cream and put each pair together,they look cute and small in size. I dip each one in vegetable oil then bake them in the oven then add syrup on top,yummy yummy!!

Sheep Pluck (معلاق خاروف)

Hello everybody.

I know many didn’t understand my title,both English and Arabic.

Well sheep pluck means liver,kidneys,heart and lungs of sheep, personally I never tasted or cooked it ,it’s my hubby”s specialty ,many people consider it a fancy meal,mostly done in Eid Al-Adha where sheep parts are abundant and fresh or you can ask your butcher to keep them for you,we usually bring them cut and ready to cook.

Today I invited my sister in law and her husband,who usually dig in with my husband,it’s a favorite of both. Of course I made extra things to go along with it and for me to eat 🙂

I made french fries,aubergines and fatoush and my mother in -law made mloukhieh with minced meat. It was a lovely Saturday lunch,followed by the sweetest most delicious melon ever.

 

Ingredients and method:

* cut,cleaned pluck.

*2-3 big coarsely chopped onions.

* 1 hot pepper.

* salt,pepper and bay leaves.

* olive oil.

*saute onions and pepper in olive oil till tender then add meat parts.

* keep stirring till color is changes to brown,then lower heat and leave to simmer for 1 hour,keep stirring it every 10-15 min,

 

I know it might be a strange dish but everybody who eat it say it’s very good,a delicacy even 🙂

Kofta with Vegetables.

Hello everybody.
  Weekend almost over, hope everybody relaxed and boosted for next week.
  My husband brought various vegetables from Ghor Thursday so today I made kofta or kebab fingers with a selection of veggies, as I recall some people call this ” Masfoufeh” meaning lined up cause of the way you arrange it in the pan. Please confirm this info if correct or not.
  I also made Fatoush, kind of salad with toasted bread and summaq.
  Plus, I bought some fresh fruits and mixed them into a great refreshing cocktail.
Ingredients and method:
* 1 kg ready mixed kofta (minced veal with onions and parsley).
* sliced mixed veggies: eggplants, courgettes, pumpkins, potatoes.
* sliced tomatoes and green peppers.
* 1 pack tomato paste.
* 1 cube maggi.
* 1 1/2 cups water.
* salt and pepper.

* form the kofta to fingers shape then cook on low heat till golden and done.
* grill veggies till brownish on both sides, some people fry them but dish will be too oily.
* arrange veggies in rows then add kofta in between. * dissolve tomato paste and maggi in water then add on pan.
* add salt and pepper.
* cook on low heat for 1 hour.
* serve with white rice.

Fatoush:
This salad is of Libanese origin, it’s basic salad with the addition of radishes,watercress (بقله ), toasted pitta bread with summaq, pomegranate sauce, lemon and olive oil as dressing.
 
I was lucky my best friend came by for coffee after lunch, great with some dark chocolate.

BBQ♡♥♡♥

Another sunny warm day..in honor of many happy occasions (حمدلله ),, baby boy, marriage, engagement,and arrival of my dear cousin from abroad..my beloved uncle (الله يحفظه ) invited us all to lunch in Jerash…a city known by its beautiful scenery and specialized in restaurants of libanese style…serving BBQ with all mezzeh that goes with it.
BBQ was a variety of lamb meat.kebab.lamb chopps.chicken or sheish tawouq.

As for appetizers…..well they are a variety of cold and hot dishes…
Cold ones are fatoosh, hummus, eggplant dip (like the one I made yesterday),pickles, salads, stuffed vine leaves in oil.
Hot ones are kubbeh, grilled cheese, fries, chicken liver in pomegranate sauce, sausages,chicken wings.
