Kofta Eggplant Bundles.

Hello again.

Lots and lots of eggplants in my fridge, have to cook them before they’re ruin I guess.

Lucky me my sister came to lunch today and she’s an eggplant lover cause half of my family doesn’t eat it at all by the way.

Quick lunch solution, kofta balls wrapped in fried eggplants as bundles then cooked in tomato sauce. Though the shape wasn’t perfect but taste was very good.

I also did some Gazpacho soup, good in this hot weather.

Pizza in a Pan.

Hello everybody.

Lazy cold cloudy Friday, why does it become like this on weekends????

Well at lunch time I suddenly decided to try this pizza recipe my cousin posted last week, a spreadable kind of dough in a pan, topped with pizza sauce, toppings and cheese then cooked on the oven. Turned out really good and extremely quick to be done as said in video.

While pizza on stove I made some Rock Cookies for the empty jar and send some to my friend on the occasion of birth of her first grandson, congratulations

Baked some of the cookie dough in a skillet, super yummy.

Ingredients and method of pan pizza :
# 1 cup flour.
# 2/3 cup warm water.
# 1/2 tsp baking powder.
# 1 tsp instant yeast.
# 1 tsp salt.
# 1 tsp honey.

# mix all these ingredients well together then spread evenly in a nonstick pan.
# add pizza sauce then any toppings you like ( basil, oregano, tomatoes, olives…)
# top with cheese.
# cover tightly and cook on the stove on high temperature for 5 minutes.
# remove pan lid a bit and lower heat to minimum and leave for another 10 minutes.
# toast top till crispy.

Quick and easy way to make your favorite pizza.

Turmeric Smoothie and Eggplant Pasta.

Hello everybody.

Was reading an article the other day about how much turmeric is beneficial to humans health, immunity booster, anticancer, metabolism inhacer and much much more and because I don’t use it much thought I’ll add it to a recipe so nobody can notice it,not a favorable spice in my house.

Found this lovely fresh smoothie recipe, blend all together mango, orange juice, pineapple or strawberries with a teaspoon of turmeric and a bit of cinnamon, really refreshing and delicious.

Lunch was a old recipe is have, eggplant with pasta in a mold. You fry eggplants and cook pasta with tomatoes, meat and red sauce then arrange eggplants alongside of a cake mold, pour pasta in between and bake till all holds on together. Result wasn’t that perfect maybe it needed some time to cool down before I flip it or more baking, but taste was great and rich.

Stuffed Courgettes and Pulp.

Hello everybody.

Today’s lunch is my oldest son favorite dish ever, stuffed courgettes with tomato sauce.

On the other hand my youngest doesn’t eat it at all so I usually make the pulp with garlic and dry mint cooked in olive oil.

Mash ‘Allah all was wiped out in minutes.

Here’s the method again :

*Wash them from inside with salted water then stuff them with the same filling as cabbages, but be careful to leave an empty inch from top so as rice will fill it when done.
*Make a tomato sauce of fresh tomatoes, paste, small onion, some cloves of garlic and a cube if chicken stock.
*Boil the sauce, dip the courgettes and eggplants,, you can stuff green peppers also by the way.
*Boil for 10-15 minutes then leave to simmer for 1 hour on low heat.
*Add some dried mint powder to the sauce, it’ll give a nice aroma.

Kabseh :)

Hello everybody.

Wanted to cook kabseh from last week, but always got objection from my youngest cause he doesn’t like it,so since I have a hamburger left from yesterday Kabseh it is then.

I also made aubergine dip ( matabal) and a salad plus the hot tomato coriander sauce that I usually make alongside the rice.

No dessert today,a piece of chocolate did the job 🙂

PIZZA.

Hello everybody.

I’m pretty sure all kids won’t say no to pizza.specially if coming right from the oven and topped with each member’s taste

To solve this problem and save time at the same time.I bought large rectangular oven trays,I spread the dough and make 3 kinds of pizza toppings .all will be happy and eat it hot at the same time.

One can find many recipies for pizza dough, I usually stick to this one.
You will need:
*1 big spoon instant yeast.
*1 small spoon sugar.
*1 big spoon powdered milk.
*1 cup flour.
*1 cup warm water.
Mix all together till creamy.cover and leave for 10-15 min or till bubbles are formed.then add:
*1/2 cup vegetable oil.
*1/2 cup olive oil.
*5 cups flour.
*1 spoon salt.
*1-1/2 cup warm water.
Knead well for 10 min.leave in a warm place to rise.
This dough is called the 10 minutes dough، cause it does rise quickly and it’s very easy to handle.

As for pizza sauce. I usually mix canned tomatoes, tomato paste, clove of garlic, oregano, basil..then leave to simmer.cool and use.
Toppings are various according to your family’s choices. Today I have mushrooms.black olives.courgettes.I will make 2 small ones..one with za’tar , the other with labaneh, rocca leaves and tomato slices.
Bake the pizza in a well heated oven.add the cheese when it’s almost done not before.then drizzle a bit of olive oil on top before roasting.makes it extra crispy.
