Crunchy Courgettes.

Hello everybody.

I saw this recipe on Pinterest last week,got some courgettes the to try it. turned out really good,healthy light appetizer can be an alternative to fried or heavy dishes.you simply cut them,dip them in egg white then coat with breadcrumbs and bake till crunchy,you can add pepper,chili,oregano and salt of course to the crumbs as seasoning.

Well lunch was okra in the oven,couldn’t resist not buying those lovely small green okra yesterday,always be sure that fresh vegetables when in season make the best dishes 🙂

When I was done cooking my husband called to tell me his friends are coming at night,so I baked a simple orange cake with syrup on top and small buns ( pizza dough recipe) with some oregano and dry basil, then filled them with different kinds of cheese and labaneh.

White Beans.

Hello everybody.

Though it’s supposed to be still Summer you can feel a cold crisp wind specially at night so a wintry meal won’t be too hot to eat today.

I posted this dish earlier in February,as I said then didn’t think I’ll do it till next year,but seems Winter is coming very early , plus it’s a favorite of my husband and youngest son. It’s really good with green peppers and onions.

As for the diet I’m on, I ate a small cup of rice with some beans and one piece of meat,fair enough I guess !!

Eggplants with Kibbeh (Iraqi dish)

Hello everybody.

Since I have a loads of eggplants,tomatoes and peppers my husband got from the farm,had to make something with them right?

I learned this dish from my sister in-law,it’s an Iraqi recipe resembles a lot moussaka but using special kind of flat kibbeh with eggplants and tomatoes instead of usual minced meat,really good and tasty.(كبه تبسي ) the name of the dish is تبسي باذنجان.

Ingredients and method:

* flat meat stuffed kibbeh ( the ones I found today were small usually they use bigger wider ones) you can find it in most store called ( كبه تبسي)

* fried or roasted eggplant slices.

* peeled sliced tomatoes.

* sliced sweet peppers.

* sliced onions.

* chopped parsley for decoration.

* tomato and pomegranate sauce (دبس رمان)

* salt,pepper and all spices.

 

* boil kibbeh if not cooked before freezing in a some water till it softens a bit.

* add eggplants on top .

* add tomatoes,peppers and onions.

* dissolve 2 tablespoons of tomato sauce and a tsp of pomegranate sauce in 2 cups water then pour them over layers.

* season with salt and pepper.

* leave to simmer or in the oven till all done ( approximately 1 hour).

* serve alone

with rice or pitta bread.

Eggplant Pizza.

Hello everybody.

I was planning to make eggplant with rice for lunch today ( maqloubeh) but my youngest rejected the idea cause he doesn’t like it,so I switched to homemade kebabs and made this new eggplant recipe that my cousin posted on my fb page.

Turned out really tasty nutritious and light,eggplants are very full of fiber and you can find so many recipes for them,but in general not so many people like them, I have many in my family 🙂

Ingredients and method:

* 2 large eggplants half peeled and thickly sliced.

* 1 small finely chopped onions.

* 1 clove garlic.

* 2 large chopped tomatoes.

* feta and kashkaval or mozzarella cheese.

* salt ,pepper,pesto,oregano and olive oil for seasoning.

 

* Mix all ingredients together except the eggplants.

* brush a pan with some oil then add eggplants with topping.

* cover and leave to cook on low heat,when almost done add cheese on top and leave to melt.

 

Rest of eggplants I dipped them in some eggs and breadcrumbs then deep fry,really crunchy and yummy.

Kushari and Baked Pumpkin.

Hello everybody.

Didn’t know what to cook today till late noon,as usual nobody gave an answer,as you wish they all said, I already wanted a no meat or chicken dish so choice was mujadara then I thought why not try to do kushari.

Kushari is a traditional  Egyptian dish that you can find in special restaurants or even carts in the road all over Egypt, it’s  healthy full of protein,very fulfilling yet light at the same time. It’s made of lentils,rice,chickpeas ( though I forgot them today) ,small pasta with hot tomato sauce and fried onions on top. In some recipes small pasta (شعيريه)is cooked with the rice and lentils or you can do without. This is the first time I cook it,turned out a success,everybody loved it.

I also roasted a pumpkin I have since last week with some garlic,lemon juice,rosemary,salt,pepper,herbs and olive oil.

Ingredients and method:

* 1 cup cooked brown lentils ( a new tip from my sister’s husband to soak it in green tea and cumin before cooking it so as not to reduce stomach bloating) .

* 1 cup rice.

* cooked chickpeas.

* cooked small size pasta, seasoned with salt and pepper.

* hot tomato sauce ( sauteed garlic,onions,1 can chopped tomato,cumin,salt,pepper,dried chili powder) all cooked together till thick.

* fried onions.

* cook rice with lentils as you make mjadara.

* before serving assemble all ingredients together as layers, rice and lentils,chickpeas,pasta,sauce then the onions.

Really yummy.

Apple Pudding Eclairs.

Hello everybody.

Back from a short trip to Taba/Egypt,though tiring long drive but it was worth it.Fun in the sun is the exact description , beautiful Sofitel Hotel with lots of pools and activities all day,the only disadvantage was the quality of food, all inclusive buffets but nothing good to eat.Thank God for bread and butter,but all in all it’s the company of good friends that made this trip memorable,we had a blast and lots of funny stories to tell for sure 🙂

Today as my son said we need something with rice,a good homemade meal is so satisfying after 3 days of eating out,I made Kebabs with tomatoes and rice or as we call it Indian Kebabs.

Tomorrow we’re going to spend the day at my friend’s house by the pool,another fun in the sun day,so I prepared this cool Summery dessert to take with me, very easy to do and a chance to use all the apples my husband brought while I was away !

ingredients and method:

* 5-6 large apples.

* 1 tsp cinnamon.

* 1 tablespoon flour.

* sugar if desired.

* 1 pack whipping cream.

* 1 pack fresh cream.

* 1 pack cream cheese.

* 4 packs vanilla pudding or you can use homemade pudding also.

* plain biscuits and some milk.

 

* peel and chop apples then add flour,cinnamon and sugar and mix well.

* mix together whipping cream,fresh cream,cream cheese and pudding very well .

* line the biscuits in a deep serving dish and sprinkle with some milk.

* add half the amount of cream then half of apples.

* repeat the layers then decorate with crushed biscuits and cinnamon.

* keep in fridge overnight for better results.

String Beans in oil (لوبيا بالزيت )

Hello everybody.
Still in the mood of no real big meals after Ramadan and Eid festivities.
Today I made simple string beans with olive oil, garlic, some tomatoes, salt and pepper.
Light lunch but delicious specially with toasted Arabic bread and pickles, yummy yummy 🙂

Kofta with vegetables and Chicken Wings.

Hello everybody.

Long working day also,bright side is we finished early so had an hour nap before entering the kitchen!

Today’s ftoor was kofta with vegetables,only potatoes,peppers and tomatoes,no eggplants or courgettes and a some hot spicy chicken wings.

I also made mashed fava beans and a bowl of salad.

Kabseh :)

Hello everybody.

Wanted to cook kabseh from last week,but always got objection from my youngest cause he doesn’t like it,so since I have a hamburger left from yesterday Kabseh it is then.

I also made aubergine dip ( matabal) and a salad plus the hot tomato coriander sauce that I usually make alongside the rice.

No dessert today,a piece of chocolate did the job 🙂
