Anarokrema.

Hello everybody.

How are you all? hope you’re not tired from fasting long hours!!

Today’s ftoor is kofta with sliced tomatoes and green peppers,chicken quesadillas,broad beans salad and Greek salad the way we ate it in a cozy restaurant in Limassol Marina called Derliciuos ,it’s basic Greek salad but with cute presentation.

As for dessert I made this also Greek dish called anarokrema, which is roasted phyllo or puff pastry  and cream with honey and nuts on top.

Ingredients and method:

* puff or baclava pastry roasted till golden.

* Anari cheese or any sweet white cheese with some sugar and rose water added to it ( like the one you use for qatayef)

* cream.

* walnuts and cinnamon.

* sugar syrup pr honey.

* After toasting the pastry layer it in a deep dish.

* mix cheese with cream,sugar and rose water and add on top.

* add walnuts and cinnamon.

* crush remaining pastry and add on top.

* keep in fridge to cool then add honey or syrup upon serving.

Chicken with Herbs.

Hello everybody.

Today is chicken day ,I brought with me different kinds of mixed herbs from Cyprus so I did the recipe Chicken with sesame seeds and oregano and added some of new ones to it.

I also did sauteed vegetables,Armenian freekeh with cheese and I have some potatoes from yesterday. Made more lentil soup and fatoush.

Dessert today is qatayef again, nobody says no to it 🙂

Ramadan Kareem.

Hello everybody.

Ramadan Kareem  family and friends,though this holy month must be spiritual,full of prayers and good will,but as usual all housewives face a big dilemma each day,what to cook? who to please? is it enough? need more kinds? who to invite? make qatayef or no? each member will start asking for certain dishes and cravings.

Best thing to do in Ramadan though hard to apply is to decrease  quantity you usually cook so as not to have many leftovers,plus try to make all your grocery shopping once a week to minimize the effort and time. Well as I said this might not work out everyday but worth trying.

I will post what I cooked everyday after Maghreb to give you ideas about what to make the next day,hope you all go through this month with good health and less tiring work in the kitchen,I think moms or whoever is the one responsible for feeding the family specially at this time of the year,deserves a prize cause each year everybody I know starts with a decision not to cook a lot and eat less cause of the heat and high prices but you’ll always find full tables and full lines in supermarkets and exhausted moms ,God bless you all moms and dads in the Muslim world.

 

As for today,a tradition since long time ago,first day begins with stuffed vine leaves and courgettes with yogurt and cucumber salad,fatoush,lentil soup,some sambousek and a must to my son mushroom soup . though many families believe specially in my family that you must cook something white the first day like mansaf,or anything cook in yogurt but it’s not a must,well I made cucumber with yogurt,guess this is white enough 🙂

Dessert is QATAYEF stuffed with walnuts and cheese,I usually bring the small ones that’re supposed to be stuffed with cream and put each pair together,they look cute and small in size. I dip each one in vegetable oil then bake them in the oven then add syrup on top,yummy yummy!!

Hello everybody.

Hope you’re all enjoying your weekend.I was really busy grocery shopping for Ramadan, all ready and set up!

I’ll be taking this week off,a break after posting daily for 6 months now,I think I do deserve a little break,I’ll try to arrange a list of appetizers,salads,soups,main dishes and sweets for the Holy month to try to give you ideas and variations. I’m sure what to cook each day in Ramadan is a kind of problem cause you want to make sure everybody eats well after a long hot day of fasting.

How to make Pickles.

Hello everybody.

Today I cooked a repeated dish ,eggplant with rice (maqloubeh),I think made it with cauliflower,it’s the same but with eggplants instead.

Last week I bought these lovely mini cucumbers,great for making pickles,many housewives now starts to make them for Ramadan,they’re very tasty though people with high blood pressure must avoid them,but I usaully make them not too salty. I might even need to make another batch cause I’m sure they’ll be gone soon as Ramadan comes.

Ingredients and method:

* cucumbers (or any other vegetables you like e.g. cauliflower,beets,green tomatoes,small eggplants…etc)

* water.

*salt.

*sugar.

* vinegar.

*garlic.

* chili powder or flakes.

* In an clean empty juice or water bottle or glass jar insert cucumbers.

* make a salt water mixture, 1 big tablespoons for 1 cup of water,I usually make 4 cups of water for this bottle.

* fill water solution in bottle then add 2 cloves garlic and chili (optional)

* add 1 small spoon vinegar and 1 small spoon sugar.

* close well and shake.

* pickles will need one week to 10 days to be ready, you can leave it stored or open bottle ( be careful cause it’ll be very fizzy) then store it in the fridge.

Onion Soup :)

Hello everybody.

When I asked the kids what do you want for lunch tomorrow?  They suggested onion soup.I usually make it in Ramadan, then forget about it rest of the year.so onion soup it is.I’ll make a pasta salad on the side with a bit of beans from yesterday. .that’ll be a nice lunch.
For the soup you need:

*4 large onions.
*1/2 cup vegetable oil or butter.but oil is much lighter.
*4 big tablespoons flour.
*4 cups water.
*1 cube chicken stock or you can use homemade chicken stock if you have instead of water.
*One small spoon :salt.pepper. cinnamon.all spice.
*Pinch of nutmeg powder.
*Any kind of cheese.
Cut onions to small pieces, I used to cut it to thin slices but small ones are easier when you eat.heat the oil then add onions till very tender on low heat.add all spices.salt.chicken cube and flour..mix well,then add water, leave to boil then turn down the heat, leave to simmer .you may need to add more water if soup is too thick.
Serve the soup with croutons topped with mozzarella, cheddar, kashkaval cheese or any kind you prefer.or you can roast buns in the oven, remove the pulp and pour soup in it.

As for the salad you need:
*Mixed colored sweet peppers sliced.
*Fresh mushrooms slices.
*One cup sweet corn.
*1 big spoon lemon juice.
*2 big spoons mayonnaise.
* 1 small spoon balsamic vinegar.
*1 small spoon of salt and oregano.
*Half a cup olive oil.
*2 cups boiled shaped small sized pasta.

Mix lemon juice, mayonnaise, vinegar, salt, organo together. Add all peppers, mushroom, corn and mix with sauce.
Add pasta and toss it well before serving.
I’m positive kids will love it…plus it’s a way to let them eat some veggies.
