Carrot Zucchini Pie.

Hello everybody.

Tried this recipe that’s been popping in front of me whenever I open Pinterest and since my husband and son are on diet cause of stomach flu plus I have these lovely zucchinis from the farm.

 

A lovely zucchini carrot pie,crust is salty pie dough and filling is same as asparagus pie but I omitted the egg then you line up thin slices of veggies consequently till you get a nice shape and bake.

ingredients and method:

For the crust:
* 1 egg, beaten.
* 1 tsp salt.
* 3/4 cup butter.
* 1 1/2 cup flour.
* 2 big spoons cold water.

filling:

* 2 tablespoons labaneh or sour cream.
* 1 tsp mustard.
* 1 egg ( I added 2 tablespoons yogurt instead today)
* 1/2 cup grated cheese ( any kind that melts or Parmesan)

* salt and pepper.

* oregano to sprinkle on top.

* thinly sliced zucchinis and carrots.

* knead dough and leave to rest for 30 minutes then spread in a pie pan.

* mix filling very well then spread over pie crust.

* line the veggie slices consequently till all covered then sprinkle oregano on top.

* cover with foil then bake in a medium heated oven for 30-40 minutes or till veggies are done ( you can boil carrots a bit before lining them cause they stayed hard a bit)

* roast surface till crispy and serve when cooled a bit.

 

 

I also made pasta with yogurt garlic and mint and potato soup.

Chili Cheese Potatoes and Tehran Salad.

Hello everybody.

Feels like late Autumn days today it even rained a bit.

Dinner today was leftover ablama from yesterday, I added up some string beans in olive oil, noodles soup.

I tried a small portion of two new recipes, an appetizer and a salad.

Salad is a Persian recipe, grated cucumbers in yogurt with some chickpeas, raisins, walnuts, cumin powder and mint decorated with crispy bread pieces on top.

As for the other dish it’s a potato stew or bake that I saw last night on instagram.

Ingredients and method :

* 2 large cubed potatoes.
* 1 small chopped onion.
* one minced garlic clove.
* 2 cups pasta sauce ready or homemade.
* some sliced mushrooms.
* some sweet corn.
* chili powder or Tabasco.
* salt, pepper, oregano.
* mazorella cheese.

* fry potatoes till golden.
* saute onions and garlic till tender.
* add pasta sauce,chili salt and pepper and leave to simmer till onions are done.
* in a deep oven pan line half of the potatoes then mushrooms and corn on top then another layer of potatoes.
* pour sauce over all,then sprinkle cheese on top and in the oven for 20-25 minutes.

Great with roasts or steaks.

Mhammara ( محمره)

Hello everybody.

Today I made a selection of appetizers with the leftovers of yesterday in very little amounts.

One dish which is a favorite of mine is mhammara, usually done in Lebanese restaurants.I also made baba ghanouj which is roasted eggplant with tomatoes and parsley.

One the side I made some chicken liver sautéed in olive oil and pomegranate sauce and chili potatoes.

Ingredients and method of mhammara :
# 1 cup walnuts.
# 1 cup breadcrumbs or toast bread.
# 2 tablespoons tomato paste.
# salt,pepper.
# chili powder.

# 1 tsp cumin powder.
# 3/4 cup olive oil.
# water till paste is smooth.

# mix all ingredients together in food processor till all homogeneous add water till you get a good consistency.

#garnish with walnuts and olive oil.

Day 4 is done, now thinking about what to cook tomorrow.

Homemade Qatayef.

Hello everybody.

Today I decided to try my cousin’s recipe of Qatayef ,a homemade one cause she lives abroad and this typical Ramadan dessert is not available, but my version was to make a big one filled half with cheese and half with walnuts.

ingredients and method:

* 1 cup flour.

*1 cup semolina.

* 1 tablespoon corn flour.

* 1 tsp vanilla.

* 2 tsps baking powder.

* pinch of salt.

* 1 tablespoon sugar.

* 2 1/4 cups warm water.

* syrup

* Mix all ingredients well in a blender then leave to rise or bubbly.

*heat a nonstick pan till very hot then reduce heat and pour a bit of dough the size you like.

* leave till all dry then remove to cool on a clean cloth.

* stuff and close with sweet cheese or walnuts.

* fry or bake as you wish then dip in syrup.

 

Dinner tonight was a bit of leftovers a plus a steak sandwich loaf ,which is usual steak sandwich filling ( shredded beef,onions,peppers,mushrooms) spread over a rectangular pizza dough , I added mustard and cheese also. Fold the dough and bake all in a medium heated oven till golden and crispy.

 

Usual appetizers were mashed fava beans and fatoush.

Ramadan Kareem.

Hello everybody.

First day of the Holy month of Ramadan, wish  Muslims all around the world a month full of spirituality and forgiveness.

A usual custom in our house first dish will be stuffed vine leaves and courgettes with yogurt cucumber salad, fatoush and mushroom soup. My sister in-law will bring lentil soup and boiled eggs and potatoes.
I also baked a big loaf and sliced it to squares a must for my son every year.

Good thing weather is warm so as we’ll eat outdoors.

Light Lunch.

Hello everybody

No cooking today not only cause tomorrow is the first day of Ramadan but nobody’s home lunch time so I fixed myself a labaneh and Seniora sandwich with a pickle with remaining beans salad, desert was white cheese with apricot jam I made last night.

Noon time I made a big brownies pan for my son going to a picnic and some extra pickles.

Ramadan Preparations.

Hello everybody.

Busy morning preparing for Ramadan cause I get too tired first day so thought I’ll do some things to be at ease.

Did some samboosek, cheese rolls, roasted bread and a big pot of syrup for the sweets.

Lunch was various fries, potatoes, eggplants and cauliflowers with pickles and tahini sauce.

Salad was Rita’s recipe, wide green beans with garlic and cherry tomatoes.

Energy Bites!

Hello everybody.

Did a massive fridge and freezer cleaning today and took out many things stored since a long time so as to do something useful or throw them away.

Result was a mix dried fruits,nuts, crushed biscuits,blueberries, oats all bound together with honey and molasses with a bit of cinnamon, cardamom and ginger. They’ll make a super snack during Ramadan specially at suhour time cause they’re full of nutrients and fiber which will help during fasting next day.

Another outcome was a plate of chickpeas with tahini sauce ( مسبحه) decorated with parsley and nuts.

Lunch was Shakshouka, no cooking till beginning of Ramadan, that’s my decision so far.

Fresh Stuffed Courgettes.

Hello everybody.

My hubby started planting some veggies in the farm in a small scale for household use.

First crop started yesterday, a big box of fresh courgettes, separated big ones for sautéed use, mediums stuffed today and cooked in tomato sauce and small ones to stuff with meat for ablama, I’ll prepare  and freeze them for Ramadan, a rescue in a busy or tiresome day.
