Onion Soup :)

Hello everybody.

When I asked the kids what do you want for lunch tomorrow?  They suggested onion soup.I usually make it in Ramadan, then forget about it rest of the year.so onion soup it is.I’ll make a pasta salad on the side with a bit of beans from yesterday. .that’ll be a nice lunch.
For the soup you need:

*4 large onions.
*1/2 cup vegetable oil or butter.but oil is much lighter.
*4 big tablespoons flour.
*4 cups water.
*1 cube chicken stock or you can use homemade chicken stock if you have instead of water.
*One small spoon :salt.pepper. cinnamon.all spice.
*Pinch of nutmeg powder.
*Any kind of cheese.
Cut onions to small pieces, I used to cut it to thin slices but small ones are easier when you eat.heat the oil then add onions till very tender on low heat.add all spices.salt.chicken cube and flour..mix well,then add water, leave to boil then turn down the heat, leave to simmer .you may need to add more water if soup is too thick.
Serve the soup with croutons topped with mozzarella, cheddar, kashkaval cheese or any kind you prefer.or you can roast buns in the oven, remove the pulp and pour soup in it.

As for the salad you need:
*Mixed colored sweet peppers sliced.
*Fresh mushrooms slices.
*One cup sweet corn.
*1 big spoon lemon juice.
*2 big spoons mayonnaise.
* 1 small spoon balsamic vinegar.
*1 small spoon of salt and oregano.
*Half a cup olive oil.
*2 cups boiled shaped small sized pasta.

Mix lemon juice, mayonnaise, vinegar, salt, organo together. Add all peppers, mushroom, corn and mix with sauce.
Add pasta and toss it well before serving.
I’m positive kids will love it…plus it’s a way to let them eat some veggies.

Amazing fresh pesto sauce:)

Hello everybody.today is grocery day as usual I found a bunch of fresh basil leaves so tempting to make pesto sauce and use it right away in a meal.

So I decided to make chicken with mushroom and broccoli,pasta with pesto on the side very easy and delicious dish.
I must mention that my friend and colleague Maha..has the credit of teaching me how to make pesto sauce and it always tastes perfect better than the one bought from grocery stores.I always think of you dear Maha when I make it.

For the pesto you need:
*Bunch of fresh basil leaves.
*1 clove of garlic.
*a small bunch of pine nuts. (I once used almonds and walnuts….yummy also).
*1 small spoon salt.
*1 big spoon grated parmesan cheese.
*olive oil.
Mix all ingredients in food processer..except the olive oil till smooth then start adding the oil till you get a creamy sauce.
Note:you can store the sauce in small containers and keep them in the fridge you can use it with salads.steaks,chicken or anything you desire.

As for the chicken..you’ll need:
*2 large boneless chicken breasts.
*1 pack fresh mushrooms.
*.bunch of fresh broccoli florettes.
*fresh cooking cream.
*1 cup milk.
*grated parmesan or mozzarella cheese.
*salt.pepper.mixed spices.

You cut the chicken to large cubes..then sautee them in a bit of butter till brownish.add salt.pepper. spices.
Arrange mushrooms and broccoli on top.then add cream and milk…
Leave to simmer until cream is thick,I sometimes add 1 big spoon of flour to thicken the sauce if the cream is low fat.

As for the pasta cook it as usual in salted water and when done,remove water.add salt and pepper ..then add the pesto sauce and mix it well.

Serve chicken and pasta together..sprinkle with cheese on top,I’m sure you’ll love it.

Pasta dish for this week: lasagna

I noticed that all family members enjoy pasta of every kind and flavor…I myself , cooks a kind of pasta every week or 10 days.
Today I made lasagna…simple basic recipe..with white sauce..and minced meat with tomato sauce,,, I added some vegetables to the meat sauce..peas, carrots, sweet corn…this is optional of course.

A tip my best friend Sireen once told me is to add one tablespoon of flour to the tomato sauce mixture so as to thicken it.
I also added dried oregano and a big spoon pesto sauce……so yummyyyy.
I also made a basic salad  with fresh green onions and mint leaves.
