Wild Pigeon With Mushrooms and Tomatoes.

Hello everybody.

While I was packing cleaned pigeon breasts that my husband did after his last hunting trip I thought why not surprise him with something,cause usually I don’t deal with hunting stuff neither cleaning nor cooking.

After a thorough search I found this one in The Field hunting magazine,simple and easy.

One Pot Veggies Pasta.

Hello again.

Lunch for the rest of us was one Pot Pasta with lots of veggies.

I used carrots, broccoli,onions garlic, tomatoes, mushrooms and avocados added when done instead of cream.

All in one Pot with salt, pepper, oregano and basil, topped with water and olive oil then cooked for one hour.

Really yummy specially with parmesan cheese on top.

Lemon Crinkles.

Hello everybody.

Another gift today for special people who asked for chocolate crinkles so I thought I’ll add some lemony ones with them.

Recipe is simple but though I felt something was wrong when I was making the balls cause dough was so sticky and loose but I made a mistake not to add more flour, I should’ve really cause the melted upon baking and got stuck all together.Taste is good but chocolate rules for sure.

Ingredients and method :

2 1/2 cups flour.

1 1/2 tsp baking powder.

1/2 tsp salt.

1 cup sugar.

2 tsp lemon zest.

1/2 cup butter.

1/4 cup lemon juice.

2 eggs.

1 tsp vanilla.

1/2 cup caster sugar.

 

#beat sugar, lemon zest and butter till creamy.
# add eggs vanilla, lemon juice.
# add baking powder, salt and flour.
# cool in fridge for 30 minutes.
#roll to balls then coat with caster sugar.
# flatten a bit with the fork.
# bake for 10-12 minutes in a medium heated oven.

Cheesy Seperable Loaf.

Hello everybody.

On the occasion of my son’s birthday yesterday I did his favorite dish of all, stuffed courgettes with tomato sauce, still love it since he was a one year old till now, many happy returns my young man.

Another thing he always asks for is something easy to eat for breakfast, so today I tried this way, you make a simple dough  ( 3 cups flour,1 tsp yeast,1 tsp sugar ,1 tsp salt,1/2 cup oil and warm water to make a firm dough) shape it as a big rectangle then spread any kind of cheese, herbs you like( you may add garlic,parsley,fresh oregano ). Cut it all to even squares then stack them all on top of each other then flip them on the side in a greased loaf pan.

Leave to rise well then bake in a medium heated oven for 30–40 minutes.

Really easy nice way to serve a breakfast or appetizer.

Kibbeh Fiesta.

Hello everybody.

When there’s a will there’s a way, never ever did I make kibbeh at home, always said I don’t know how and never tried,but upon my husband’s frequent request for kibbeh in a pan  specifically which is the easiest kind I thought  why not try .So he ordered the shell which is burgul and meat mixed together in specific proportions from the butcher and today was my first trial.

First of all I cooked the minced meat to make the filling then added to it chopped onions,salt, pepper, all spice, some walnuts, pine nuts and pomegranate to give it a sour taste.

Then I made three kinds of the kibbeh ,one spread in a pan, regular round ones for frying and tried these cute mini ones in the cupcake tray.

All was super yummy thank God, good job for a first timer I guess.

Artichoke Cherry Tomato Chicken.

Hello everybody.

Another new chicken recipe today since I have lots of cherry tomatoes so this one is the choice.

Chicken breasts seasoned with salt, pepper, herbs then sautéed in some olive oil.When almost done add the tomatoes and artichokes.

Leave all to simmer for 20 minutes then sprinkle with parmesan cheese and roast a bit in the oven.

Healthy light and easy.

Muhalabieh With A Twist.

Hello everybody.

Upon several request I did the caramel muhalabieh or pudding today,a quite cool light delicious dessert.

 

This time I thought why not give it a twist which is serving it with caramel dipped figs,result was amazing both in looks and taste ,really yummy:)

Ingredients and method:

Note :this quantity yields 12 small jars or pots.

* 6 cups milk.

* 6 big tablespoons starch.

* 1 tsp mistaka finely crushed with 1/4 cup sugar so as not to stick to the grinder.

* 1 tsp rose water (optional)

* more sugar also optional cause the caramel sauce is sweet.

* leave one or two cups of milk aside and mix starch in them very well.

* add to other quantity,mix all very well then boil till it thickens.

* add mistaka and sugar and the rose water.

* pour in one big bowl or small glass bowls or jars.

* cool in the fridge for at 2-3 hours .

 

Caramel:

* 1/2 cup sugar melted till caramelized and golden.

* 1/2 cup water added very carefully to the browned sugar.

* stir very well and leave to simmer a bit till it’s thick.

* Before serving flip the muhalabieh in a slightly deep dish then garnish with crushed pistachios and drizzle with the caramel sauce.

اليكم مقادير وطريقة المهلبية بالكراميل

٦ اكواب حليب

سته ملاعق كبيره نشا

ملعقه صغيره مستكه مدقوقه مع ربع الى نصف كوب سكر

ماء زهر حسب الرغبه.

يذوب النشا بمقدار كوب الى كوب ونص من الحليب المستعمل ثم يضاف الى بقيه الحليب ويغلى حتي يكثف.
يضاف المستكه والسكر وماء الزهر ويحرك جيدا.
يصب في وعاء غميق او زبادي ويترك في الثلاجة من ساعتين الى ثلاثه.

الكراميل :
يذوب نصف كوب سكر حتى ينحرق ويصبح لونه ذهبي ثم نضيف نص كوب ماء بحذر لان حراره السكر عاليه جدا.
يحرك جيدا ويترك ليغلي خمس دقائق على نار هادئة.

عند التقديم تقلب المهلبيه في صحن وتزين بالفستق المطحون والكراميل

Manti.

Hello everybody.

Very hot and dry today,no cooking or heavy dishes are desirable at all.

This turkish recipe crossed my mind this morning, it’s a very famous one all over Turkey and women do it so quickly in a highly professional way.

Well today I made it with our shushbarak, same principle of the dumpling though mantis are much smaller but taste is the same.
I also made some potatoes with oregano,garlic and cheese my favorite dish ever.

Ingredients and method of Manti :
# small meat dumpings or shushbarak. (I made 50 pieces)
# 3 cups chicken broth.
# for the sauce :
2 cups yogurt.
2 minced garlic
1 tsp dry mint.

# for the hot oil:
Heat some olive oil then add dry mints and chili flakes till all sizzle.

# heat broth till it boils then add the dumplings.
# leave to boil for 10 min.
# remove and line them in a wide oven pan.
# add some butter on top and bake in the oven till crispy and golden.
# mix yogurt with garlic and mints.

# before serving and while dumplings are hot add the yogurt sauce then drizzle hot oil on top.

Excellent choice today, boys loved it.

Anise Bars.

Hello everybody.

Though we’re Mansaf-ing today but it’s not me cooking so I baked these bars this morning,good choice with coffee as a quick breakfast for my son before leaving to college everyday.

Recipe is very easy almost a simple cake but you bake it in a big wide pan then slice it when done and ready bake or toast bars till crunchy.

Really yummy.

Ingredients:

* 4 eggs.
* 1 cup sugar.
* 1/2 cup olive oil.
* 1/2 cup vegetable oil.
* 2 big spoons anise powder.
* 2 big spoons anise seeds.
* sesame seeds
* 2 tsp baking powder.
* 1 tsp vanilla.
* 2 cups flour.

Method:
* mix eggs, vanilla, sugar with electric mixer till fluffy. Add rest of ingredients.
* sprinkle bottom of pan with sesame seeds, add the cake mixture and bake in medium oven for 30 minutes or dry in center.
* when cooled cut to slices and roast again till golden from both sides.( مثل شكل القرشله)
* leave to cool completely then keep in well closed jar or tin.

Teramisu.

Hello everybody.
Have a gathering this evening for my sister in-law’s family so I prepared several things one of them is teramisu since I have some mascarpon cheese fresh from Italy that I’d rather use before it’s spoiled.

Cause I don’t prefer using raw eggs though the original recipe requires it, I substituted it with a pack of cream caramel powder, gave it the same color and texture and result was super.

You can find many recipes for it,here’s one option that is very tasty

* 2 packs whipping cream.

*2 packs kiri or cream cheese.

* 1 can condensed milk (or cream and 1/4 cup sugar)

* lady fingers biscuits.

* Nescafe ( 1 big spoon dissolved in 3/4 cup warm water)

* mix cream,condensed milk and cheese together very well.

* arrange biscuits in a deep serving dish then soak them in coffee mixture. * add half of cream mixture then repeat process. * refrigerate for 3-4 hours.

* sprinkle cocoa powder on top.

Or the one I made today:

* 200 gm Mascarpon cheese.

* 6 pieces Kiri.

* 1 sachet whipping cream ( Dream Whip).

* 1 pack of cream caramel powder.

* 1 1/2 pack lady fingers biscuits.

* strong espresso or Nescafe.

* beat cheeses and cream very well till smooth then layer biscuits topped with coffee then cream in a pyrex or any mold you like.

* cool in fridge for 3-4 hours or overnight.
