Artichoke Spinach Baguette.

Hello everybody.

Since yesterday’s lunch was so old fashioned today’s choice is extra Italian!
Fettuccine Alfredo with mushrooms and chicken was the main dish, on the side I made this yummy sort of garlic bread but with rich stuffing.
Saw this recipe on Facebook yesterday,you mix some chopped artichokes, spinach, cream cheese, mozzarella or kashkaval or cheddar as you like, season with garlic powder  salt and pepper and any other herbs like basil or oregano.

Cut the baguette to three pieces, remove the inside and  stuff it with the mixture . Cut to small slices  then brush all with butter, garlic powder and parsley ( I used thyme instead).

Wrap the loaf with foil paper, bake for 20 minutes then uncover and bake for another 10 minutes.

Serve hot with any pasta or pizza, so easy and delicious.

Artichoke Cherry Tomato Chicken.

Hello everybody.

Another new chicken recipe today since I have lots of cherry tomatoes so this one is the choice.

Chicken breasts seasoned with salt, pepper, herbs then sautéed in some olive oil.When almost done add the tomatoes and artichokes.

Leave all to simmer for 20 minutes then sprinkle with parmesan cheese and roast a bit in the oven.

Healthy light and easy.

Artichokes!

Hello everybody.

My big artichoke plant needs harvesting,they’re much much better than last year’s ones, no insects at least.

But as usual though big only the end of bulp is used, after boiling them with some lemon I peeled them and made a nice rich salad with baby corns and palmetto.

Artichokes.

Hello everybody.

Didn’t know whether to cook or no today cause I still have courgettes from yesterday but not that much,it needs an appetizer or a small thing with it.

Had to manage something from what I have in fridge or freezer cause my son took my car,so after searching I took out a bag of frozen artichokes,cooked mince meat and some carrots and peas, they’ll do for a stew !

Out of curiosity I searched for benefits of artichokes and usage, turned out to be a very useful plant, actually great for liver and digestive system,read the link for more info if you like.

As always when staying home,I baked something,za’tar sticks but added cheese and coarse sea salt on top and made Rita’s salad ( this is its name from now on )

Ingredients and method of artichoke stew:

* 1 pack frozen artichokes.

* cooked mince meat.

* cubed carrots.

* peas.

* small onion.

* salt,pepper and lemon juice.

 

* saute chopped onions in some oil till tender then add carrots,peas,salt and pepper.

* simmer on low heat till tender.

* stuff meat in artichoke hearts and arrange them on top of veggies.

* add lemon juice and a bit of boiled water and leave to simmer for another 30 minutes.

* serve alone or with rice as you like.

Quesadillas and Artichoke Salad.

Hello everybody.

I’m so sorry for the delay,I’m having trouble uploading,will rewrite the post again.

Today’s lunch is Mexican, chicken quesadillas are famous appetizers or even main dish,ate them a while ago at my uncle’s house,and been waiting for a chance to do them since then,

After a quick search and finding many different recipes,I made this one,they’re all basically the same, but I liked this cause they even have ingredients of the seasoning,better to use instead of ready ones. You can even keep them in a closed jar for later on.

Ingredients and method:

* 2 large finely chopped chicken breasts.

*1 finely chopped onion.

* 2 finely chopped garlic.

* finely chopped sweet colored peppers.

* grated sharp cheddar cheese.

* tortilla bread.

* seasoning : 3 tsp cornstarch,1 tsp salt,1 tsp sugar,1/2 tsp pepper,1 tsp paprika,1 tsp chili,1/2 tsp chili flakes,1 tsp garlic powder,1 tsp onion powder,1 envelope maggi powder ( optional)

mix well and keep in a well closed jar.

* heat some oil then add chicken,stir till dry.

* add 2 tsp of seasoning and mix well.

* add onions,garlic,peppers and simmer till done.

* grease oven pan.

* fill each tortilla in half,top with cheese then fold and sprinkle top and edges with a bit of water to seal.

* bake in a medium heated oven till golden and crisp on both sides.

* serve with sour cream or guacamole.

As for the salad:

*chop lettuce,cucumbers,mushrooms,cherry tomatoes,baby corns and slightly boiled artichokes.

* make dressing by mixing: mustard,honey,balsamic vinegar,pomegranate sauce,lemon juice,salt and olive oil and drizzle it on top.

Note: you can marinate artichokes in dressing for tastier flavor if you have time.
