Usual Friday Breakfast :)

Hello everybody.

Hot Summer day since morning,seems all weekend will be like this.

My sister in-law called to invite us to breakfast ,we actually go to visit each Friday noon for coffee,a ritual I guess by now,but today we went earlier and had a cozy delicious breakfast followed by coffee on the balcony which was cool and breezy.

Eggs Day!

Hello everybody.

Today everybody agreed they didn’t want something cooked,eggs and frittata was the option,though when I was done just before Maghreb prayers I regretted the decision. Too much mess and frying plus that I’m known to be not a big fan of eggs,for me cooking a decent meal is much more easier.

I made courgettes frittatas,fried mushrooms and courgettes flowers dipped in special dough ( Rita’s recipe) ,boiled eggs,omelette with hot-dogs,tuna salad and magdoos salad which is normal one with chopped magdoos in it.

all was good and tasty,don’t think I’ll do the same mess all together again though !

Nescafe Croquant Cake.

Hello everybody.

No cooking today, still have cauliflower,plus nobody is coming at lunch time, so it’s sweets day 🙂

My neighbor’s ( which is my husband’s auntie at the same time) birthday is today,we’re going for coffee to celebrate with her so thought I’ll bake a cake.I also made some cookies and Tabouleh, might make the gathering at my house better than taking all this food with me,plus it’s a chance to pamper our sweet Auntie Um Rasheed <3

A friend of my niece asked me a while ago for this cake’s recipe and I promised her to make it soon, so today is a good chance,cause I want to make a kind of birthday cake, this will do just great.

This recipe is very old,I remember when I first learned it I used to make it every weekend, it was such a trend that time , a sweet auntie of mine used to call it the glass cake 🙂

Ingredients and method:

* 5 eggs.

* 1 big spoon Nescafe dissolved in 1/2 cup of water.

* 1 tsp vanilla.

* 1  1/2 cups sugar.

* 1 cup vegetable oil.

* 4 tsp baking powder.

* 2 cups flour.

* 1 1/2 cups sugar and 3/4 cup almonds for the croquant.

* whipping cream.

* extra Nescafe in water for the cake when done.

* beat eggs with sugar till creamy then add vanilla,oil,Nescafe,baking powder and flour alternatively.

* bake in a medium heated oven in two small baking tins for 30-35 minutes or till dry from inside.

* when cooled, place one layer in serving plate then add some Nescafe on it.

* cover with cream and croquant then add other layer and repeat.

* decorate cake with anything you have .

*Croquant :

* heat sugar and almonds till it caramelize.

* pour in a well greased pan till cold and stiff.

* crush or use food processor to make fine crumbles. ( it actually resembles glass 🙂 )

* leave in fridge to settle before serving.

Lovely Breakfast Gathering.

Hello everybody.

Thanked God for the lovely weather this morning,cause as I mentioned yesterday I have friends coming for breakfast, and setting outside was great, though it became hot around noon but we were almost done.

I love breakfast gatherings,as I said earlier to my Facebook group,you can have a simple homemade menu,and make a stylish table setting, results can be very nice and enjoyable,better than any fancy restaurant, at least you can chit chat freely and eat food made with love though it’s simple labaneh and cheese.

Today I didn’t bother myself a lot,dessert is ready in fridge ( chocolate mousse ). My friend volunteered to bring hummus and fatteh on her way, I made fava beans ( foul ), boiled eggs in my molds, plus a variety of cheeses,labaneh and olives.

We really had a great time,love you all 🙂

Eggs and Potatoes.

Hello everybody.

Great party last night,lovely bride and groom and guests,but high heels are torture ,don’t you agree with me ladies???

Too tired to cook today,plus we have a dear guest visiting from Beirut,so I’m kind of busy,but have to make something for lunch anyway. An easy light option is boiled or pouched eggs with boiled potatoes on the side and a big bowl of salad.

You simply boil potatoes till tender,slice them,add salt,pepper and olive oil then boil eggs,slice them beside potatoes, you can add chopped green onions on top if you like.

I do eggs in a special mold I bought long time ago from Cyprus, where you cook them on a water bath,so they’re more pouched than boiled.

I know this seems like a silly dish but it’ll do as long as hubby and kids don’t complain,will make it up to them this weekend 🙂

Rubi’s Apple Cake.

Hello everybody.

Just came back from Irbid,we were invited to a  lovely lunch at my husband’s cousin. Food was incredibly delicious,  have to admit I ate too much, but couldn’t resist 🙂

Early morning I made apple cake to take with me,my cook book says Rubi’s apple cake ( recipe from my dear friend Ruba <3), very simple,juicy and easy.

Ingredients and method:

*2 big peeled sliced apples.

*1/2 cup brown sugar.

* raisins or cranberries.

* 1/2 tsp cinnamon.

* 3 eggs.

* 1 1/2 cups sugar.

* 3/4 cup oil.

* 1 cup milk.

* lemon zest.

* 1 tsp vanilla.

* 3 tsp baking powder.

* 2 cups flour.

 

* spread brown sugar ( you may add a bit of butter if you like ) ,apples,raisins and cinnamon in a cake mold or high baking pan.

* beat eggs,vanilla,sugar till creamy then add oil,milk and zest.

* add flour and baking powder beat for 5-10 minutes.

* pour batter over apples then bake in a medium heated oven for 35-40 minutes or till dry from inside.

* turn upside down when cooled.

Homemade Creme Caramel.

Hello again.

My hubby’s most favorite dessert, I always make it from time to time.perfect today cause it’s cooling in this hot weather, seems Summer coming early this year.

Took this recipe from a Nestle can (sweet condensed milk) long time ago, way much better taste and flavor than ready packs plus it’s easy .

Ingredients and method:
*1 can Nestle sweetened condensed milk.
* 4 eggs.
* vanilla.
* lemon zest.
* 2 tablespoons powdered milk.
* 1 1/2 cups water.
* 1 cup sugar.

* in a non stick mould ir pan heat sugar till it caramelize to syrup. Take care cause it may burn quickly.
*leave to cool then place in another wider pan filled with water(water bath).
*beat eggs with vanilla and zest till frothy.add milk.
* add the Nestle can and water then mix all very well.
* pour over caramel.
* bake in a medium heated oven for 30-40 minutes or when dried in the middle.
* cool in the fridge  2-3 hours.
* turn upside down and cover with caramel.

Friday Breakfast.

Morning everybody

Lovely Friday, we’re all invited to to my sister in-law’s for a big brunch rather than a breakfast. Her husband made his famous omelet with veggies plus of course many dishes like sunny side ups, hummus, fatteh, falafel, labaneh,  cheese….etc.

I kept them waiting till I come to take photos of omelet making steps.
Ingredients and method:
* eggs.
* 1 small finely crushed clove of garlic.
* finely chopped hot pepper, sweet pepper, tomatoes, small onion, green onions.
* salt and pepper.

* heat some oil ,vegetable or olive,  add onions till tender.
* scramble eggs add garlic salt ,pepper. Mix well.
* add other veggies
* when onions are almost done add egg mixture then stir till all egg is dry but be careful if it over dries it won’t taste good at all.
* you can add double cream or cheese if you like also (optional).

Spinach Quiche.

Hello everybody.

Very long and hectic day, full of events…didn’t have time to cook actually. Thank God I made a spinach quiche yesterday afternoon so we ate the rest of it.
  You can do quiche with different fillings, spinach, mushroom, cheese, vegetables. I made a mix of all cause I had some spinach left after making tabouleh on Thursday and some mushrooms also plus many kinds of cheeses.
Ingredients:
For the crust:
* 1 egg, beaten.
* 1 tsp salt.
* 3/4 cup butter.
* 1 1/2 cup flour.
* 2 big spoons cold water.

* Mix all ingredients together to form a firm ball.keep in fridge for 1/2 hour then spread in a pie pan.
* bake at 250 º for 20 min.

Filling:
* 3 eggs.
*bunch of chopped spinach.
* chopped mushrooms.
* grated cheese, white, feta, cheddar.
* small finely chopped green hot pepper.
* 1 small pack cream or 1/2 cup milk.
* salt pepper and a dash if nutmeg.

Mix all together then add to partially baked crust and bake for 30-35 minutes on low heat.
Serve with green salad.

Frittata with Potato (عجه بالبطاطا )

  Hello everybody.
 
Thursday at last, long tiresome week.glad the weekend is coming.
  Well I’m in no mood to cook plus we’re invited to a big lunch, so I decided to make something quick and light.
Kids suggested frittata (عجه )  , excellent choice. I found a recipe in an Italian cook book which is similar to the usual that I make but with the addition of potatoes and cheese.

You will need:
* 6 eggs.
* 1 small onion.
* 1 small potato.
* 3 spoons yoghurt.
* 3/4 cup flour.
*  1/4 spoon sodium bicarbonate.
* bunch of chopped parsley.
* salt.pepper. paprika.

Method:
* chop onion finely.
* grate  potato or cut to very small cubes.
* mix the eggs with the onions ( half the quantity) yoghurt, parsley, flour, salt, pepper, paprika,  and bicarbonate.
* heat some olive oil in a pan, add half of the onion., stirr till tender, add potatoes.
* Add half of egg mixture, keep in heat till edges are dry then sprinkle with any kind of cheese and put it in the oven till center us dry.
* The other half of mixture, heat a generous amount if oil then add spoonfuls if mixture each at a time.turn over till crispy from both sides.
* Serve with yoghurt or salad.
