Fava Beans and Eggs ( Iraqi Dish,باقلاء بالدهن)

Hello everybody.

Special brunch today at my sister in-law’s house,her hubby made us a famous Iraqi dish which is usually done for breakfast but we had it as lunch this time.

Main ingredients are cooked fava beans and scrambled eggs , it’s a sort of fatteh type of dish  cause bread is soaked a bit in boiled water of cooked beans is the base , then you add over it a good amount of beans,lemon juice, very hot oil ( usually the oil used in frying the eggs), butnuj ( which is a dried wild mint) then chopped tomatoes and onions.

Last thing you add fried eggs,scrambled and sunny side ups and dig in. Very fulfilling meal,you won’t feel hungry till next day for sure ,my late father in -law ( god bless his soul) used to call it the cement mix meal 🙂

Anyone who loves new different food should try it,really good.
اليوم الغداء طبق عراقي “باقلاء بالدهن ” الباقلاء يعنى بها الفول ويكون بالعادة فول ناشف منقوع ومسلوق ويمكن استعمال العلب للسهوله.
الطريقه تشبه مبدأ الفتات المعتادة حيث يشرب الخبز بماء سلق الفول ثم يضاف الفول، الليمون والبطنج (نعنع بري ناشف) ويسقى بالزيت الحار أو السمن حسب الرغبه.تضاف بندوره مفرومه ناعم وبصل مفروم، آخر طبقه عباره عن بيض مخفوق مقلي أو بيض عيون.
وجبه دسمه نوعا ما لمحبي الفطور مع إننا اعتبرناها غداء اليوم.

Hubby’s Birthday Celebrations.

Hello everybody.

Big Intercontinental breakfast this morning or actually noon celebrating my beloved hubby’s birthday,his favorite dishes eggs in different kinds and cheeses, it was really a nice gathering since we seldom meet for breakfast, a benefit from this storm at least 🙂

We skipped lunch cause all was full and now we’ll have the cake he asked for Red Velvet and of course a must every year Cream Caramel also a big big favorite.

Hope you’re all having a good time in this cold weather, I know it’s boring and makes one eat a lot but what else to do ?

Shakshuka.

Hello everybody.

Invited to breakfast this morning so I wanted to cook something as quick as possible, this simple rich dish was the rescue recipe, my husband saw and wrote it down  long time ago in Fatafeat cooking channel. Though the original recipe on the net usually doesn’t contain sausages like this one so you can do it with or without. Very tasty and good for a Friday brunch by the way.

Anyway breakfast was at a nice place in Taj Mall called Majnoon Qahwa, though service is slow as always in MOST Amman restaurants but food was really good and all in all atmosphere is cozy and nice,most important thing is that smoking area is completely separated so no Argileh smoke to suffocate you !

And they do have excellent Yemeni coffee,really strong and aromatic.

 

Ingredients and method of Sahkshuka:

* 1 large thinly sliced onion.

* 4 cloves of garlic ( used my new mortar to crush them)

* 1 can or 5 big diced tomatoes.

* some fresh sausages (optional).

* chili powder,salt and pepper.

* some chopped parsley (optional)

* 4-5 eggs.

* olive oil.

* saute onions and garlic in hot olive oil till tender.

* chop sausages and add  them.

* add the tomatoes,salt,pepper and chili then leave to simmer till done.

* crack the eggs on top and cover .

* leave over low heat till eggs are done the way you like them.

Puff Pastry Cream Triangles (وربات بالقشطه)

Hello everybody.

Eventful Friday ,started with boiled eggs for breakfast then followed by a nice coffee at a lovely aunt’s house.Of course coffee wasn’t alone,she made some pastries and a delicious lemon cake.I made her a nice Cherry Cake as a gift :).

Afternoon my dear uncles came by for a cup of tea, such a short notice visit,couldn’t think of anything to serve,After looking through my fridge and pantry for something quick to do, best thing I could manage was some cheese rolls and olives, nuts,chocolate and marshmallows plus I found a pack of puff pastry in the freezer so I thought these would do as dessert, stuffed in cream and topped with syrup and pistachios.

Visit was really pleasant and joyful as always <3

Ingredients and method:

* 1 pack squared puff pastry.

* Cream filling:

* 1 cup powdered milk.

* 1 cup water.

* 1 tsp butter.

* 2 big tablespoons flour.

* 2 tablespoons cream.

 

* Mix all ingredients except cream very well then boil till sauce is thick.

* add cream and whisk well till all is homogeneous.leave to cool.

* spread each square of pastry a bit,add one tsp of filling then fold to make a triangle.

* press sides with a fork to close well.

* bake in  a medium heated oven till puffed and golden.

* make some sugar syrup (2 cups sugar with one cup water and few drops lemon juice)

* pour syrup over triangle while hot,decorate with crushed pistachios.

Eggs in a Bun.

Hello everybody.

In no mood to cook today,my son suggested to do this eggs in the bun thing he saw once on Instagram so we did, tasted good but more a breakfast than a lunch option but a good choice with the remaining chicken pie from yesterday.You simply remove the inside of the bun,stuff it with cheese,turkey or salami and add the eggs then cover with foil paper and put it in the oven till eggs are done.

I also made some orange marmalade cause I have lots of citrus fruits from Ghor sent to us from our dear aunt, love this kind of jam, my favorite actually.

I also made some jam biscuits,needed the jar to be honest,they’ll be a good treat for tomorrow’s hunting trip.

Well full long day , hoping for a relaxing weekend !!

Pineapple Cake (كيكه الاناناس).

Hello everybody.

It’s Thursday already? don’t you agree this week ended quickly?  even all days  I guess!

Anyway I did this cake for the hunting trip tonight,old fashioned pineapple cake, I remember maybe in the 80’s when people started doing this cake it was a must in every occasion or gathering, I always love to make it, burned sugar is so yummy right?

Ingredients and method:

* 4 eggs.

* 1 1/2 cups sugar plus extra one for caramelizing the bottom.

* 1 cup vegetable oil.

* 1/2 cup pineapple juice.

* 2 big spoons yogurt.

* 2 cups flour.

* 1 tsp vanilla and 2 baking powder.

* 5-6 slices canned or fresh pineapples.

* in a metal cake pan burn one cup sugar till it’s golden and caramelized.

* add pineapple slices in a line.

* mix all other ingredients to form a smooth cake batter.

+ pour over pineapples then bake in a medium heated oven for 40-50 minutes.

* when cooled turn it upside down,you can add some pineapple juice over it if you like.

Potato Cups (بطاطا كاسات).

Hello everybody.

Still have some cabbages from yesterday but a small side dish is needed for sure cause it won’t be enough for all and because I’m going out for coffee with my friends to the Cake Shop I did this simple dish.

My mom used to make these cups too much when we were kids specially end of the week,really yummy, today they tasted exactly the same as old days, a pinch of nutmeg is the secret I guess.

Ingredients and method:

* 3-4 boiled till done potatoes.

* 2 eggs.

* small bunch chopped parsley.

* grated cheese ( white and cheddar usually)

* salt,pepper and pinch of nutmeg.

* mash potatoes with some salt,pepper then form it into cups and put them in fridge a while.

* mix eggs,cheese,parsley,salt,pepper and nutmeg.

* grease an oven pan then place potato cups and fill with mixture.

* bake in a well heated oven for 25-30 minutes.

Easy quick delicious yummy what else to say??

Happy Morning Breakfast.

Hello everybody.
We had the liveliest gathering this morning for my sister in -laws family,it was really great having you all.
  I made usual breakfast menu, labaneh,cheese platter, za’tar,hummus,Fava beans,fatteh,olives,eggs..etc.
Extra dishes were turkey cheese club sandwiches, labaneh murtadella wraps and small falafel tahini salad sandwiches.
Dessert was my mother in-law’s famous rice pudding and some End cookies.
May we always gather in good health and happy times.

Citrus Almond Syrup Cake.

Hello everybody.

Morning gathering at my friend’s house with the loveliest ladies ever ,my  old school classmates, great memories and lots of catching up cause it’s been a while since we saw each other.

My friend did many delicious dishes,pastries, tabouleh,cheesecake and chocolate balls , as for me I baked this super easy juicy cake this morning and took it with me.

By the way this cake is flour-less , very convenient for people who has flour sensitivity  ( Celiac desease)

Ingredients and method:

* 2 small oranges.

* 1 1/2 cups almonds.

* 1 cup sugar.

* 5 large eggs or 6 small.

* vanilla.

* 1 tsp baking powder.

Syrup:

* 1/2 cup sugar.

* 1/4 cup lemon juice.

* juice and shredded peel of one orange.

* 1/4 cup water.

 

* cover whole oranges with water and boil for 40-50 minutes or till very soft.

* in a food processor blend sugar and almonds till very fine.

* cut oranges to quarters and remove seeds then process till smooth ( whole orange peel and pulp).

* gradually add eggs while mixer running , add vanilla .

* add almonds sugar mixture and baking powder.

* pour batter in a round or any baking tin then bake in a moderately slow heated oven for 1 hour or till cake is firm.

* combine syrup ingredients and leave to simmer on low heat till syrupy.

* when cake is cooled add syrup and orange peel on top.

Lovely Cousin’s Visit <3

Hello everybody.

Today I was really thrilled to meet my cousin coming for Summer vacation from Qatar, It’s been a long time since we saw each other and had lots and lots of catching up.

Though I was willing she’d come for lunch but due to her full schedule visit ended up in the morning and we had breakfast together.

I also made her favorite chocolate cake,we used to make it when we were in college every week,such great memories <3

Well truth is nothing beats cousins and good old friends,everlasting memories !
