Chicken with Sesame and Oregano.

Happy Labor Day everybody. Though Moms deserve this holiday cause they’re on call 24/7 , but it does seem hard to take a day off doing absolutely nothing, don’t you agree?

I have a pack of Knorr ready chicken sesame and oregano seasoning, been in my  pantry for a while,so I bought 2 packs of chicken thighs marinated them since morning.

Ingredients and method:

* chicken thighs or whole chicken.

* 1 pack knorr sesame oregano seasoning.

* extra sesame seeds,oregano and lemon juice.

* few cloves of garlic.

* olive oil.

* marinate chicken in all ingredients as long as you can.s

* roast them in a medium heated oven in a baking bag or wrap them in foil paper as you wish

Chicken Burgers.

Hello everybody. As every Friday what to eat for lunch is always a problem.

I was about to tell the boys to order food cause I was busy helping my brother moving his stuff to his new house. Can’t believe my little bro getting married this week. I’m so excited ♡♥♡♥.

Back to lunch plans, found out I do have time to cook when done, kids said burgers, decided to make chicken not beef this time for a change. Also I made hot potatoes as a side dish, will try new kind of mixed spices i bought last Saturday.

Ingredients and method:

* 3 big boneless chicken breasts finely chopped.

* 1 chili pepper.

* 1 green pepper.

* 2 cloves garlic.

*1 small onion.

* 1/2 cup bread crumbs.

* 1/2 cup milk.

* salt and pepper.

* mix all ingredients very well in food processor .

* wet your hand with water and form round balls, cover them with bread crumbs and flat them to burgers.

* keep in fridge to harden for 1 hour.

* grill them or roast in the oven till golden.

* serve with veggies and cheese.

Potatoes were good but kids said spices I usually use are tastier, these have too much curry. image image image image image image image image image

Quesadillas and Artichoke Salad.

Hello everybody.

I’m so sorry for the delay,I’m having trouble uploading,will rewrite the post again.

Today’s lunch is Mexican, chicken quesadillas are famous appetizers or even main dish,ate them a while ago at my uncle’s house,and been waiting for a chance to do them since then,

After a quick search and finding many different recipes,I made this one,they’re all basically the same, but I liked this cause they even have ingredients of the seasoning,better to use instead of ready ones. You can even keep them in a closed jar for later on.

Ingredients and method:

* 2 large finely chopped chicken breasts.

*1 finely chopped onion.

* 2 finely chopped garlic.

* finely chopped sweet colored peppers.

* grated sharp cheddar cheese.

* tortilla bread.

* seasoning : 3 tsp cornstarch,1 tsp salt,1 tsp sugar,1/2 tsp pepper,1 tsp paprika,1 tsp chili,1/2 tsp chili flakes,1 tsp garlic powder,1 tsp onion powder,1 envelope maggi powder ( optional)

mix well and keep in a well closed jar.

* heat some oil then add chicken,stir till dry.

* add 2 tsp of seasoning and mix well.

* add onions,garlic,peppers and simmer till done.

* grease oven pan.

* fill each tortilla in half,top with cheese then fold and sprinkle top and edges with a bit of water to seal.

* bake in a medium heated oven till golden and crisp on both sides.

* serve with sour cream or guacamole.

As for the salad:

*chop lettuce,cucumbers,mushrooms,cherry tomatoes,baby corns and slightly boiled artichokes.

* make dressing by mixing: mustard,honey,balsamic vinegar,pomegranate sauce,lemon juice,salt and olive oil and drizzle it on top.

Note: you can marinate artichokes in dressing for tastier flavor if you have time.

Chocolate Macaroon Cake .

Hello everybody.

We have relatives coming from Irbid for dinner, so didn’t bother about lunch today, at last minute I made a big bowl of Caesar salad, add chicken slices from yesterday so It  became a delicious fulfilling meal.

 

As for tonight my share was to make dessert. Made this cake so many times, always a success, everybody loves it specially chocoholics ♡♥.

Ingredients and method:
For the filling inside cake:
*2 egg whites.
* 2 cups coconut.
* 3 tablespoons sugar.
*2 tablespoons flour.

Cake is basic chocolate cake I made

* pour half of batter in a rounded mold then add filling.
* cover with rest of batter.
* bake in a medium heated oven for 40-45 minutes.
* decorate when cooled with chocolate syrup and coconuts if you desire.

Marinated Chicken and Asparagus.

Hello everybody.
Remember the big bunch of asparagus from Friday?
Still have a some of it, today I’ll make them like my dear lovely cousin suggested (guess now this dish will be called Dua’a’s Asparagus).

It’s a marinate for asparagus but I also marinated chicken with the same mix .Super juicy and tasty. Thanks my dear ♡♥.

Ingredients and method:
* 1 whole chicken.
* asparagus .
* for the marinate:
* soy

sauce.
* balsamic vinegar.
* lemon juice.
* olive oil.
* garlic.
* salt, pepper ,paprika.

* marinate chicken and asparagus as long as you can, the more the better, each in a separate bag or bowl.
* grill chicken till done.
* add asparagus and saute till juices are lessened a bit.
* serve with rice or roasted potatoes.

Marinate tastes fantastic!

Rice with Peas and Carrots.

Hello again.

I prepared the strawberry sauce and started to cook  lunch. Today I made rice with peas, carrots, chicken mixed with rice. Didn’t cook this since a while, though my husband doesn’t like it but I still have some leftovers to manage this problem.

Ingredients and method:
* chicken or meat cubes.
* 1 pack frozen peas and carrots or fresh if available.
* 1 small onion.
* 1 cube maggi or chicken broth.
* 2 cups rice.
* salt, pepper, all spice, cardamom, cinnamon, cloves and pinch of nutmeg. ( according to taste or enough to make rice brownish).
*ghee or vegetable oil.

* heat ghee then saute seasoned chicken till tender and golden.
* add chopped onion.
* add peas and carrots and cover all till veggies almost done.
* add maggi cube.
* wash rice and season it .
* add over veggies and chicken.
* add water till above rice by 1 inch.
* cook over high heat till all water almost absorbed, then lower heat to minimum and leave till rice is done.
Note:you can add a bit more water if rice stays hard.
* serve with salad or yoghurt.

Chicken Rolls (مسخن روﻻت ).

Hello everybody.

Going out for breakfast with my lovely friends today. Wanted something easy to make when I come back. So I prepared the stuffing and made rolls  quickly before lunch time.

This dish is an easier version of a big main dish called Msakhan (مسخن ) which is usually done in lunch gatherings, people make it when fresh virgin olive oil is  in season. It Consists of a special kind of bread dipped in onions and summaq cooked in olive oil with roasted chicken and nuts on top. All in one big serving tray.
Today I made an easier smaller scale musakhan by rolling chicken and onions mix into thin bread then roasting them.

Ingredients and method:
* 1 cooked chicken.remove skin and bones.
* 2-3 chopped onions.
* 2 big spoons summaq.
* 10 large thin bread (شراك ) cut to quarters.
* toasted pine nuts (optional)
* olive oil.
* 1 cup chicken broth.

* shred chicken to small pieces.
* cover onions with oil and cook slowly till tender a bit.
* add the chicken, summaq, broth, salt and pepper and leave to simmer till liquid is lessened.
* put mixture in a sieve when done to remove excess liquid.
* roll mixture in bread pieces then line them in a greased pan.
* bake in a medium heated oven till golden all over.
* serve with yoghurt.

I had excess bread pieces so I made some cheese rolls and took out some spring rolls from freezer and baked all together.
I did some sweet and sour sauce as a dip by mixing soysauce, ketchup, sugar, vinegar with cup of water and starch then boil till thick. Great dip !

Turned out a nice quick lunch.

Chicken with Garlic.

Hello everybody.

Summer is here, very warm and sunny today, all home for lunch so I took out a chicken when I woke up,looked through fridge and pantry, came out with this recipe, I usually make chicken with garlic, ketchup,  oregano and paprika or tomatoes.  Today I tried a different marinate. Turned out very juicy and tasty. Wiped out completely. ♡♥.

Ingredients and method:
* 1 whole chicken.
* 1 cup butter milk or shanineh (شنينه ).
* garlic cloves.
*lemon juice.
* fresh oregano.
* olive oil.
* seasoning: salt, pepper, paprika, chilli powder, dried oregano.
* 3-4 potatoes.

* marinate chicken in butter milk, oil, lemon, oregano, crushed garlic and seasoning. For 2 hours.
* cut potatoes to large cubes then deep fry till golden.
* cook chicken on low heat till almost done.
* add fried potatoes to chicken.
* roast all together in the oven.
* serve with salad.

I also made lemon smoothie to go with summer ambiance. You mix in blender :
*1 pack Tang lemon and mint.
* fresh mint.
* rose water.
* some fresh ginger.
*lemon juice.
* ice.

Rice with Vegetables (Banan’s Rice)

Hello everybody.

Today I had the honor to cook for my big brother’s office colleagues. Each one of them hosts lunch each Sunday so I volunteered to cook in his turn. They’re a group of 20-24 plus the boss is coming today from abroad. Feedback was great thank God ♡
Though I ran a bit out of time and I think rice needed a bit more  cooking
Well my bro sent me this photo in less than an hour after I delivered food.

I got this rice recipe from our dear neighbor when I was a newlywed. Been doing it a lot specially when I have guests..that’s why it became my specialty Banan’s Rice my cousins always say.
I also made caramelized kebab sandwiches with tahini sauce and spiced potatoes. Dessert was basic orange cake and jam biscuits (مبروشه ).
I will post ingredients without specifying amounts cause today I cooked for a big crowd, you can measure according to number of people you’re cooking for. I’m ready for any question of course if anyone needs help.

Ingredients and method:
* large boned chicken pieces.
* basmati rice.
* vegetables include: peas, carrots, mushrooms, peppers and onions.
* raisins.
* almonds and pine  nuts.
* ghee or margarine.
* curry powder, salt, pepper, paprika.
* bay leaves, cinnamon sticks and cardamom for chicken broth.

* first you clean and wash chicken pieces very well.
* make broth from wings backs and necks of chicken by boiling them with salt, pepper, all spice, cardamom, cinnamon, bay leaf plus 1 big spoon curry powder. When done sieve and use broth for cooking rice.
* add same seasoning to breasts and drumsticks with some olive oil and chopped onions and put in a medium heated oven for 2 hours or till tender and golden..also sprinkle them with curry and paprika.

* now prepare veggies,  saute them alternatively ( except onions) with ghee starting with carrots then adding others always sprinkle with curry then add raisins last thing. You can add maggi cube with them, gives a really good flavor but for those who don’t like it add salt and spices. Leave to simmer on low heat.
* in another pan saute sliced onions in ghee then add a bit of broth and leave to simmer till tender.
* wash rice and season it with salt, pepper, all spice and curry powder.
* add to onions, mix all together then add broth till covering rice by 1 inch.
* cook rice and when almost all broth absorbed pour it over vegetables then leave all to cook together on very low heat till rice is done.
* you may need to add a bit more broth or water.
* roast almonds and pine nuts for decoration.
* upon serving turn vegetables and rice pan upside down in a big wide serving tray.
* arrange chicken pieces on top.
* decorate with almonds and pine nuts.

I know this might be a difficult dish with many steps but it’s always worth the hardship. ♡♥

Chicken with Pepsi !!!!

Hello everybody.

I know you’re wondering, how can anyone COOK with Pepsi???
Well I got this recipe 4 years ago from the famous Allrecipes.com website,  I actually have many ones from it. I tried it then and it became a regular on our table . My house helper Eyllene told me that they also cook chicken in Miranda in Philippine. .but I think it’ll be too sweet.
Hope you try this one, very easy and yummy.

Ingredients and method:
* 2-3 boneless cubed chicken breasts.
* 1 can or pack mushroom.
* 1 green or dry onion.
* 2 cloves garlic.
* 1/2 small cup ketchup (2-3 spoons).
* 1 small spoon soy sauce.
* 1 small can DIET Pepsi.
* 1 big spoon cornflour.
* salt, pepper for seasoning the chicken.

* saute chicken in a bit of oil and season till almost done.
* add chopped onions and garlic.
* add mushrooms.
* add rest of ingredients: soy sauce, ketchup, diet Pepsi and cornflour. Mix well so as not to clot.
* leave to simmer till done and sauce is thick.
* you might need a bit of water if necessary .
* serve with plain white rice.
