Hello everybody.
Well lunch today was two opposite dishes, first very old and traditional the other kind of new and modern. Had to do this to please everyone and hopefully to have enough leftovers for tomorrow.
Okra with olive oil, a simple dish with few ingredients, you simply fry okra with some olive oil till crispy, add chopped garlic and tomatoes. Add salt, pepper and chili and leave on very low heat till all done.
Other dish was chicken cubes cooked till done with some chopped onion and garlic, then I added fresh mushrooms, broccoli and fresh cream and cooked till cream is thick and veggies tender,all served on a bed of fresh yummy pasta from Maysas.Pasta.
Woke up with a terrible flu,headache and fever that shouts out for hot drinks and soup.
I boiled some chicken with whole onion, carrot and seasoning ( cinnamon stick, pepper kernels, cardamom and bay leaf) with the intention to make chicken vegetable soup but then I switched to corn and cream cause kids prefer it I’m sure.
Ingredients and method:
*one small onion finely chopped.
* 1 cup corn.
* some cooked chopped chicken pieces.
* 2 tablespoons butter.
* 3 tablespoons flour.
* 4 cups chicken broth.
* 1 cup fresh cream.
* salt,pepper and a pinch of nutmeg.
* heat butter then saute onions.
* add flour and whisk well.
* add broth and keep whisking or you can use hand blender if you got clots.
* add corn and chicken.
* season and leave to simmer for 20-25 minutes.
Serve with sticks or garlic bread.
Today’s order was a special request for my beloved niece, Sable cookies and simple cake and I made another one with Sativa sugar for us.
Full busy weekend as usual, best thing about it is the warm sunny weather, we even had lunch outdoors today.
Yesterday’s lunch was spaghetti with tomato sauce, minced meat and mushrooms,then we had guests coming in the evening so I made a simple basic cake, another batch of walnut cookies and a colorful cheese veggies platter.
This morning I went to a lovely farmer’s market, got a bunch of fresh basil which means pesto sauce was done immediately then lunch was crunchy chicken breasts, Nigella Lawsin’s recipe again, a big bowl of fatoush and a delicious Caprese salad.
Just had our late lunch or rather dinner you can say, it was a delicious selection of dishes, crunchy chicken which is a recipe I saw on Fatafeat cooking channel , cheese and olives puffs a recipe from my lovely friend Rula and roca salad.
As I saw chicken recipe on Chef Nigella Lawson’s show the other night , so easy and looked yummy and all was proved today.
Ingredients and method:
*4 pieces chicken breasts.
* 1 egg.
* 2 tablespoons mustard.
*1 tsp salt.
*1 tsp cinnamon.
*1 tsp chili flakes.
*1 tsp garlic powder or chopped garlic .
*2 cups crushed cornflakes.
*some oil for frying the chicken.
*beat chicken breasts till flat and thin.
mix mustard , egg ,spices and salt well.
* Dip chicken in mixture in both sides.
*cover with cornflakes .
* you can saute in hot oil on both sides immediately or freeze then for 30 minutes before better.
*Serve with any salad or sauteed veggies.

My son ate this dish at his friend’s house last week and been nagging on me to do it, took the recipe from my friend which is originally Chef Deema Hijjawi’s recipe done on Roya TV.
Easy delicious dish,type that kids love cause it doesn’t need rolling or any effort,just slice and dig in. I also made some spring rolls , sheets are ready but I made the stuffing and sauce, so fresh and crunchy, I’ll post recipe later on .
Ingredients and method of Fajita laof:
shredded chicken breasts ( used 4 today)
1 thinly sliced onion.
1 cup shredded sweet colored peppers.
salt, pepper, cumin, coriander and crushed chili.
fajita spices.
1 loaf of toast bread .
1/2 cup Kraft or Puck cream cheese.
2 cups cheddar cheese ( white and yellow)
1/2 cup cream.
2 tablespoons vegetable oil.
Saute chicken in a heated skillet till done.
remove from pan then add oil, saute onions,peppers .
add chicken pieces.
add salt,pepper,cumin,coriander , chili and fajita spices and mix all well.
turn off heat then add cream cheese.
remove bread crust,line up in a greased oven pan.
add chicken vegetable mix then cover with another layer of bread.
sprinkle cheese on top.
add cream all around sides of pan so then bread won’t be dry
bake the loaf in a medium heated oven for 25-30 minutes.
you can decorate with chopped spring onions and coriander.
Free today, no orders or things to prepare so I cooked at ease though babysitting my bundle of joy but he’s such an adorable boy, even ate some freekeh soup and chicken and loved it.
I made mloukhieh, both coarse and fine, grilled chicken and freekeh soup. So yummy with pickles and peppers on the side.
Had a big lunch gathering for my mother in-law’s friends,a group of lovely cheerful ladies.
Menu was as follows, curry veggies rice with chicken, kibbeh both spread and mini, fava beans fatteh, kibbeh with eggplants,Iraqi dolma done by an Iraqi lady, rocca apple cranberry salad and green salad.
I’m not bragging or even hate to talk about myself but to be honest food was really delicious, all guests said so!
I’m 100% convinced that any dish cooked with love and willingness will taste great and this depends on your mood and to whom you’re doing it for sure.
