Potato Cake.

Hello everybody.

Really cold and cloudy today,as if we’re in Autumn not beginning of Summer, I hate this weather,undecided !!!

I made Kofta with tomatoes and peppers on top, as a side dish I thought I’ll try doing this recipe I saw on Ro’ya Tv the other day,but I didn’t use the ready mix for seasoning,I made them myself . It’s very simple and I’m sure kids will love it, Looks like a cake at the end that’s why they called it potato cake.

Ingredients and method:

*4-5 boiled and sliced potatoes.

* 2 crushed garlic cloves.

* 1 tsp butter and 1 olive oil.

* salt,pepper,chili,paprika.

* different kinds of cheeses.

* oregano or basil or rosemary as preferred.

* mix butter,oil with crushed garlic then add spices.

* in a spring pan brush bottom with butter mixture then line potato slices in overlapping pattern ( keep ends and crumbled pieces to the inside).

* brush potatoes again then sprinkle with cheese and oregano.

* add another layer of potatoes and cheese then bake for 15-20 minutes.

* remove from pan and garnish, serve with any kind of meat or chicken.

Watermelon Fiesta !!!

Hello everybody.

Nobody home for lunch today and I was busy all morning making Date Rolls for my friend, when when done I was in no mood to cook anything.

This morning I bought a lovely watermelon, been waiting for it’s season to make these lovely servings or decorations all done with watermelons,fruits and cheese, as usual shape wasn’t as perfect as photos you see in magazines or websites but not bad for a first time, I’m sure this needs lots of practice and special cutters and lots of Photoshop :).

I also made a lovely refreshing juice with them,thanks to my Facebook friend who recommended it, I mixed watermelons with Tang lemon and mint and two ripe bananas with lots of ice. Very cooling in this hot day 🙂

Pasta and Armenian Tabouleh .

Hello everybody.

Busy Busy day,Newly weds coming home from honeymoon,went to pick them from airport and the flight was late plus I had to take my mom for some errands,and of course drop and pick from school.

I made the only quick easy dish ever PASTA, always a savior . I already have cooked minced meat and all other ingredients always ready in the pantry,I made some white sauce to put on top to make a change a bit.

As for the Armenian Tabouleh, it’s the same as regular one but they use cooked brown lentils instead of burghul and use a good amount of pomegranate sauce, you can add pomegranate seeds if available also.We always eat this dish in the famous Levant Restaurant and many others.

Pasta ingredients and method:

* any kind of pasta.

*minced meat.

* one finely chopped onion.

* tomato puree and paste.

* mushrooms.

* white sauce.

* mozzarella cheese.

* salt,pepper,oregano and chili or Tabasco.

* saute onions in some olive oil then add meat and mushrooms.

* add cooked pasta and tomato puree and paste.

* add 1-2 cups water and season.

* leave to simmer a bit then add white sauce.

* put it in the oven or up on the stove over low heat till done (30-40 minutes).

* add cheese on top and toast it till golden.

 

Tabouleh:

* cook lentils till done .

* chop parsley,fresh mints,tomatoes and onion very fine.

* to lentils add lemon juice,salt,paprika,pomegranate sauce and olive oil.

before serving mix all ingredients together.

Lovely Breakfast Gathering.

Hello everybody.

Thanked God for the lovely weather this morning,cause as I mentioned yesterday I have friends coming for breakfast, and setting outside was great, though it became hot around noon but we were almost done.

I love breakfast gatherings,as I said earlier to my Facebook group,you can have a simple homemade menu,and make a stylish table setting, results can be very nice and enjoyable,better than any fancy restaurant, at least you can chit chat freely and eat food made with love though it’s simple labaneh and cheese.

Today I didn’t bother myself a lot,dessert is ready in fridge ( chocolate mousse ). My friend volunteered to bring hummus and fatteh on her way, I made fava beans ( foul ), boiled eggs in my molds, plus a variety of cheeses,labaneh and olives.

We really had a great time,love you all 🙂

Veal with Mushroom Cream Sauce.

Hello everybody.

Back to normal routine after a long vacation, kids will want a good satisfying meal after school for sure.

My cousin posted this dish on my Facebook group last week and I promised to make it soon,though he made made it with chicken but today I used veal, but  same other ingredients.

Turned out absolutely delicious,only guilty thing is that recipe contains fresh cream and butter,won’t be the same without them, though tastes great but I always try to avoid these fatty ingredients as much as possible. Guess once in a while won’t hurt don’t you think ?

Ingredients and method:

* Veal steaks.

* Fresh cream.

* Mushrooms.

* salt,pepper,all spice,ginger,garlic powder and oregano for seasoning.

* 1 maggi cube.

* mozzarella cheese.

* vegetables : carrots,courgettes,cherry tomatoes,sweet peppers, broccoli,corn and potatoes.

 

* Season veal with all mentioned and leave for 1 hour.

* saute veal with some butter on both sides till almost done.

* remove to another pan then saute sliced mushrooms till tender.

* add fresh cream and maggi cube and leave to simmer 10  minutes then pour over veal and leave all to simmer on low heat or in the the oven till done.

* add mozzarella cheese on top to melt before serving.

* bake veggies with a drizzle of oil in the oven.

* bake foiled potatoes and serve it with sour cream on the side.

* steam broccoli florets then cover them directly with iced water so as to keep the green color.

I don’t like to brag but it really  looks and tastes better than any fine restaurant !!!!

Quesadillas and Artichoke Salad.

Hello everybody.

I’m so sorry for the delay,I’m having trouble uploading,will rewrite the post again.

Today’s lunch is Mexican, chicken quesadillas are famous appetizers or even main dish,ate them a while ago at my uncle’s house,and been waiting for a chance to do them since then,

After a quick search and finding many different recipes,I made this one,they’re all basically the same, but I liked this cause they even have ingredients of the seasoning,better to use instead of ready ones. You can even keep them in a closed jar for later on.

Ingredients and method:

* 2 large finely chopped chicken breasts.

*1 finely chopped onion.

* 2 finely chopped garlic.

* finely chopped sweet colored peppers.

* grated sharp cheddar cheese.

* tortilla bread.

* seasoning : 3 tsp cornstarch,1 tsp salt,1 tsp sugar,1/2 tsp pepper,1 tsp paprika,1 tsp chili,1/2 tsp chili flakes,1 tsp garlic powder,1 tsp onion powder,1 envelope maggi powder ( optional)

mix well and keep in a well closed jar.

* heat some oil then add chicken,stir till dry.

* add 2 tsp of seasoning and mix well.

* add onions,garlic,peppers and simmer till done.

* grease oven pan.

* fill each tortilla in half,top with cheese then fold and sprinkle top and edges with a bit of water to seal.

* bake in a medium heated oven till golden and crisp on both sides.

* serve with sour cream or guacamole.

As for the salad:

*chop lettuce,cucumbers,mushrooms,cherry tomatoes,baby corns and slightly boiled artichokes.

* make dressing by mixing: mustard,honey,balsamic vinegar,pomegranate sauce,lemon juice,salt and olive oil and drizzle it on top.

Note: you can marinate artichokes in dressing for tastier flavor if you have time.

Courgettes in White Sauce ( كوسا بالبشاميل).

Hello everybody.

Usual  Saturday morning, went grocery shopping and  found lovely fresh courgettes,plus a new butcher just opened near the grocery store I  go to,still bright new and meat looks really fresh,so thought why not try it?

So lunch ended up to be courgettes with minced beef and bachamel or white sauce. I guess this is an Egyptian dish,actually I learned how to do it from the old Egyptian landlady  my late father used to rent  at her house while studying  in Alexandria/Egypt. She used to come visit us often  and taught us this dish. May God rest their souls both .

Ingredients and method:

* 2-3 kg medium sized courgettes.

* 1/2 kg minced beef.

* 1 onion,finely chopped.

* for the white sauce: butter,milk,flour.

* mozzarella or kashkaval cheese .

* salt,pepper,all spice.

 

*Peel courgettes but not all (lines) then sprinkle with salt and leave 15 minutes till excess water is out.

* saute them with a bit of oil or as i usually make them cover and put them in microwave for 5-7 minutes till they’re a bit tender.

* saute meat till done,add onion,salt,pepper,all spice and /or a bit pomegranate sauce if you like.

* make the white sauce by melting butter then flour and stir till golden then add milk and stir very well. Add seasoning and leave to boil till it thickens.

* layer courgettes in a Pyrex or oven pan, add white sauce then cooked meat.

* repeat layering courgettes and white sauce on top.

* bake covered in a medium heated oven for 40-50 minutes then add cheese on top and toast it till it melts.

Must mention that this is my big bro’s FAVORITE dish,will definitely invite him to launch or keep  his share !

Aqaba Trip Goodies :)

Hello everybody

My son and his friends are going to Aqaba tomorrow morning, thought i’ll make them some goodies to eat during their stay cause they’re staying in an apartment not a hotel.

Best thing to do for easy handling is some some hot dogs,cheese and za’tar pastries,perfect for breakfast or snacks. i also made some cinnamon rolls,a new recipe I got from www.foodlve.com.

 *Pastries

ingredients and method:

* 4 cups flour.

* 1/2 cup vegetable oil.

* 1 cup warm milk.

* 1 tsp salt.

* 1 big spoon instant yeast.

* 1 tablespoon sugar.

* some water if needed for kneading.

 

* Mix all dry ingredients then add milk and oil,knead well for 5 minutes then leave to rest and rise in a warm place.

* prepare stuffing: hot dogs with ketchup and mustard,cheese,and za’tar with oil.

* I made hot dogs like rolls,cheese as balls and za’tar as parcels,of course you can chose any shape you like.

* bake in a well heated oven till golden.

Hope they’ll like them,look and taste are perfect.

Spinach Cheese Pie.

Hello everybody.
Have you ever seen this picture?

I did try it few months ago but result was nothing like it at all.
Well today I encouraged myself for a second trial, this time with more patience . Result was very much better,  not as perfect as the picture but not bad at all 🙂

It’s basic dough, today with mixed whole wheat and white flour. Stuffing is spinach and white cheese.
You can use other kinds if stuffing. It’s the shape that counts.

Maccaroni and Cheese

Hello everybody.

  No time at all to cook today, had to go with my sister to do errands . But as usual I always have pasta in stock for days like these.
    I learned this super easy quick recipe from a dear friend who’se been living in the States and still is . We were still at freshman year when we went for a sleep over to her house and cooked it..Miss you dear Nancy ♡♥.

Ingredients and method :
* 1 pack snail shaped pasta.
* 1 pack mushroom. Sliced.
* 1 small finely chopped green pepper.
* 1 green or dry onion finely chopped.
* 1 pack mushroom soup mixture.
* mozzarella or kashkaval cheese.

* cook soup as directions on envelope.
* saute onions, peppers and mushrooms.
* add soup on them and leave to simmer for 15 minutes.
* cook past till done un salted water.
* drain and add to soup mixture.
* season with salt, pepper and oregano. Mix very well.
* sprinkle cheese in top and put in oven till cheese melts.

That’s it..very easy and sure tastier than ready mac and cheese !!!!
