Hello everybody.

Though I try not to take orders Friday but this one I couldn’t say no to cause it’s from a special old friend to her family.

Thank God though order was a bit variant but all went smoothly and was done on time.

Corn Chicken Soup.

Hello everybody.

Woke up with a terrible flu,headache and fever that shouts out for hot drinks and soup.

I boiled some chicken with whole onion, carrot and seasoning ( cinnamon stick, pepper kernels, cardamom and bay leaf)  with the intention to make chicken vegetable soup but then I switched to corn and cream cause kids prefer it I’m sure.

Ingredients and method:

*one small onion finely chopped.
* 1 cup corn.
* some cooked chopped chicken pieces.
* 2 tablespoons butter.
* 3 tablespoons flour.
* 4 cups chicken broth.
* 1 cup fresh cream.
* salt,pepper and a pinch of nutmeg.

* heat butter then saute onions.
* add flour and whisk well.
* add broth and keep whisking or you can use hand blender if you got clots.
* add corn and chicken.
* season and leave to simmer for 20-25 minutes.

Serve with sticks or garlic bread.

Today’s order was a special request for my beloved niece, Sable cookies and simple cake and I made another one with Sativa sugar for us.

Weekend Events

Hello everybody.

Full busy weekend as usual, best thing about it is the warm sunny weather, we even had lunch outdoors today.

Yesterday’s lunch was spaghetti with tomato sauce, minced meat and mushrooms,then we had guests coming in the evening so I made a simple basic cake, another batch of walnut cookies and a colorful cheese veggies platter.

This morning I went to a lovely farmer’s market, got a bunch of fresh basil which means pesto sauce was done immediately then lunch was crunchy chicken breasts, Nigella Lawsin’s recipe again, a big bowl of fatoush and a delicious Caprese salad.

Italian Cream Cake.

Hello everybody.

Tomorrow we’re celebrating the birthday of two precious people, Mom and my cute bundle of joy, my nephew who turned one Tuesday.

I’ll make many things for the party among them is this amazing cake, been waiting for a special occasion to make it, so guess it’s the best time right?

Found many recipes on Pinterest and came out with this at the end.

Ingredients and method :
Cake :

# 5 large eggs.
# 1 1/4 cups suger.
# 1/4 cup light brown sugar.
# 1 stick butter.
# 1 tsp vanilla.
# 1 cup buttermilk ( 1 cup milk with a tsp of lemon juice in case you don’t have buttermilk)
# 1/2 tsp baking soda.
# 3 tsp baking powder.
# 2 cups flour.
# 1/2 cup roasted coconut.
# 1/2 cup roasted pecans.

Frosting :
# 1 pack cream cheese or 12 pieces Kiri.
# 1/2 cup butter.
# 1 pack cream.
# 2 envelopes dream whip.
# 1 tsp vanilla. #half cup of roasted coconuts and pecan.

# Beat sugar and butter till smooth and creamy then add eggs one at a time.

# add vanilla, buttermilk,baking soda, baking powder and flour consequently with the flour.

#add coconut and pecans and mix with a wooden spoon.

# pour batter in three greased small pans.
# bake in a medium heated oven for 25-30 minutes.

#Beat all frosting ingredients well till creamy then add coconut and pecan.

ٍStrawberry Cake.

Hello everybody.

Invited to another breakfast at my cousin today,very busy eventful week right?

Just this morning I decided to do this cake to take with me, my friend’s famous recipe ( Suhaila’s cake I call it) usually done with cherries but strawberries will do .

Very delicious as usual ,all gone in minutes.

 

Ingredients and method:

* 5 eggs separated.

* 2 coffee cups (small like espresso cups) (فنجان قهوه ) vegetable oil.

* 4 small cups sugar.

* 5 small cups flour.

* juice and zest of a lemon.

* 1 tsp vanilla.

* 2 tsp baking powder.

* pinch of salt.

* cherries or strawberries sliced.

* beat egg yolks,oil,2 cups of sugar,lemon zest and juice,baking powder and flour together very well, batter will be a bit thick in texture,

* beat egg whites,remaining 2 cups of sugar and vanilla very well till frothy and creamy.

* fold in batter into egg white mixture and mix well but not hard.

* pour mixture in greased oven pan,then arrange pitted cherries on top.

* bake in a medium heated oven for 10-15 minutes then lower heat to minimum till top is golden.

* cool then add icing sugar as decoration on top.

Anise Bars.

Hello everybody.

Though we’re Mansaf-ing today but it’s not me cooking so I baked these bars this morning,good choice with coffee as a quick breakfast for my son before leaving to college everyday.

Recipe is very easy almost a simple cake but you bake it in a big wide pan then slice it when done and ready bake or toast bars till crunchy.

Really yummy.

Ingredients:

* 4 eggs.
* 1 cup sugar.
* 1/2 cup olive oil.
* 1/2 cup vegetable oil.
* 2 big spoons anise powder.
* 2 big spoons anise seeds.
* sesame seeds
* 2 tsp baking powder.
* 1 tsp vanilla.
* 2 cups flour.

Method:
* mix eggs, vanilla, sugar with electric mixer till fluffy. Add rest of ingredients.
* sprinkle bottom of pan with sesame seeds, add the cake mixture and bake in medium oven for 30 minutes or dry in center.
* when cooled cut to slices and roast again till golden from both sides.( مثل شكل القرشله)
* leave to cool completely then keep in well closed jar or tin.

Cousin’s Lunch Gathering.

Hello everybody.
Had a warm loving lunch for my cousin and her cute daughters visiting Jordan from Rome, it was really a pleasure.
Menu was Banan’s rice, Fava beans with cooked yogurt and steaks, a pesto pasta and salad.Dessert was plain cake with chocolate Ganache on top and fruits.

Cherry Cake and Pasta with White Sauce.

Hello everybody.

Unfortunately not a bite from yesterday is left so I had to cook something today specially that my son has finals and wanted to eat quickly and go out to study.

So after searching for what to do I grabbed a pack of pasta and quickly made white sauce and some meat tomato sauce then fixed a big pan of bachemel pasta for today and tomorrow as well.

When done I made a lovely cherry cake upon my husband’s request, it’s been a while since I baked something, love this one it’s amazing with tea and coffee.

Lemon Velvet Cake.

Hello everybody.

ً Went out to celebrate my friend’s birthday this morning to the Boulevard-Abdali ,first time for me to go and I was really impressed, beautiful place and scenery, didn’t expect it to be like this.

Birthday cake was a new recipe “Lemon Velvet Cake ” very similar to the red velvet but with lemons, really delicious and fresh,will definitely be on my favorite list.

Ingredients and method :

# 3 eggs.
# 11/2 cups suger.
# 1/3 cup margarine or butter.
# 2/3 cup vegetable oil.
# zest and juice of one big lemon.
# 1 tsp lemon essence (optional)
# 1/2 cup yogurt.
# 1/2 cup milk.
# 1 tsp vanilla.
#3 tsp baking powder.
# 3 cups flour.

Frosting :
# 3/4 cup butter.
# 2 cups icing sugar.
# some lemon zest.
# juice of half a lemon.
# some milk.
Note: I think next time I’ll make cream cheese frosting with lemons it’ll be better, this one is good but too rich in butter.

#Beat oil, butter and sugar till creamy then add eggs, yogurt, milk, vanilla.
#add lemon zest and juice.
# add baking powder and flour.

# pour batter in two small round oven pans.
# bake in a moderate heated oven for 35-40 minutes or till dry from inside.
# leave to cool then assemble two cakes with frosting in between and all over.
# decorate with lemon zest or roasted coconut.

Happened that I have two chocolate decorations one for a girl graduate and the other a boy which were so convenient cause my friend has both occasions for her children aside from her birthday.
