Pizza in a Pan.

Lazy cold cloudy Friday, why does it become like this on weekends????

Well at lunch time I suddenly decided to try this pizza recipe my cousin posted last week, a spreadable kind of dough in a pan, topped with pizza sauce, toppings and cheese then cooked on the oven. Turned out really good and extremely quick to be done as said in video.

While pizza on stove I made some Rock Cookies for the empty jar and send some to my friend on the occasion of birth of her first grandson, congratulations

Baked some of the cookie dough in a skillet,super yummy.

 

 

Ingredients and method of pan pizza :
# 1 cup flour.
# 2/3 cup warm water.
# 1/2 tsp baking powder.
# 1 tsp instant yeast.
# 1 tsp salt.
# 1 tsp honey.

# mix all these ingredients well together then spread evenly in a nonstick pan.
# add pizza sauce then any toppings you like ( basil,oregano, tomatoes, olives…)
# top with cheese.
# cover tightly and cook on the stove on high temperature for 5 minutes.
# remove pan lid a bit and lower heat to minimum and leave for another 10 minutes.
# toast top till crispy.

Minced Meat in Pitta Bread (3arayes)

Hello everybody.

Long hot day,had to go to Roya TV again on such very short notice so I hadn’t enough time to cook.

A quick resolution, passed by the butcher on my way home and got fresh ground meat,then to the bakery for fresh pitta bread.Mixed meat with grated onion,tomatoe,chili pepper, garlic, some burgul,salt and spices.
Stuffed it in pittas,brushed with olive oil and into the oven till crispy.Loveliest 3arayes ever.

Excellent choice in this weather specially with some yogurt.

Grilled Cheese Dried Tomatoe Salad.

Hello everybody.

Long hot hectic day, among-st all day work Roya TV called to ask me to go cook tomorrow another time, doubled my chores for today but never-mind I’m so happy and excited, this means yesterday’s episode was a success.

Lunch today was many leftovers with a big green salad with sun-dried tomatoes, grilled white cheese and some pine nuts,dressing was simple vinaigrette with a bit of pomegranate sauce.

I also made another special requested Humming Bird cake for my lovely cousin’s birthday. Many happy returns dear.

Grilled Chicken with Broccoli Mushrooms and Pesto Pasta.

Hello everybody.

Had to cook something quick today cause I had to meet my friends to go watch Mammia Musical and it was really worth every minute and penny, absolutely amazing,music still in my ears till now.

Saturday lunch is always fresh cause it’s grocery day, marinated chicken breasts in this yummy rich dressing marinate sauce my husband bought yesterday, then grilled them with garlic, sage and rosemary, added fresh broccoli and mushrooms then left them to simmer a while. Made some pesto pasta on the side and that’s it, quick and easy.

Hello again.

Lunch today was a big fish in the oven stuffed with garlic, onions, tomatoes, parsley, lemon, salt,pepper, chili and cumin with a drizzle of olive oil on top.

Of course with its companions French fries, fried bread and tahini parsley salad.

Humming Bird Cake.

Hello everybody.

Did this beautiful cake for my best friend’s son birthday, a traditional American recipe full of flavors and looked elegant as well.

Ingredients and method :
# 3 eggs.
# 1 1/2 cups suger.
# 3-4 ripe bananas.
# 1 can pineapple with syrup.
# 3/4 cup vegetable oil.
# 3/4 cup crushed walnuts, almonds or pecans.
# 1 tsp vanilla.
# 2 tsp baking powder.
# dash of salt.
# 1 tsp cinnamon.
# 3 cups flour.

Cream cheese frosting:
# 1 pack cream cheese.
# 1/4 cup icing sugar.
# 1/4 cup butter.
# some roasted crushed nuts.

# Beat eggs with vanilla, sugar and oil till creamy.
# mash and mix in blender bananas and pineapple can all together.
# add puree to cake mix.
# add rest of ingredients alternatively.
# bake in two small pans or one if you don’t want it layered.
# bake in a medium heated oven for 30-40 minutes or till dry from inside.
# beat frosting ingredients well and cool in fridge till stiff.

Decorate cake with filling inside out.

Chicken on a Can.

Hello everybody.

Found this can stand that I bought long time ago and thought I’d try it.

This recipe is originally done with a beer can,well I won’t use beer for sure so I used non-alcoholic one.

Just rub the chicken with all spices,garlic,chili , butter and lemon slices then pour 1/4 of the can in the pan and place the chicken over the can and bake in the oven for hour and a half.

Crispy and yummy.

Kofta with Tahini Sauce.

Hello everybody.

Today I splitted the cooked kofta balls into two pans to satisfy all family members.

One pan with onions, garlic, potatoes and tomato sauce for the boys and the other with some potatoes and tahini sauce on top. All then in the oven till a bit roasted.

Love kofta with tahini and this was the only solution to eat it cause mostly I’ll eat it alone, don’t mind that at all :mrgreen:

Grandma’s Pasta and Tuna Salad.

Hello everybody.

Mid week light meal, we usually have one either Tuesdays or Thursdays, no meat, chicken or heavy cooked stuff.

Each one of the boys wanted something and since they’re both easy and needs minimum effort I did the two.

Old fashioned local pasta with local white cheese and parsley or as we used to call it Teita’s pasta,simple delicious one I even bought the old kind (Ghazal number 1) a must for this dish.

Other one was tuna salad, made a rich dressing containing mustard, mayonnaise, relish, chili jam, lemon juice,oil and salt then added all salad ingredients and tossed everything together, fresh and nutritious.
