Weekend Events

Hello everybody.

Full busy weekend as usual, best thing about it is the warm sunny weather, we even had lunch outdoors today.

Yesterday’s lunch was spaghetti with tomato sauce, minced meat and mushrooms,then we had guests coming in the evening so I made a simple basic cake, another batch of walnut cookies and a colorful cheese veggies platter.

This morning I went to a lovely farmer’s market, got a bunch of fresh basil which means pesto sauce was done immediately then lunch was crunchy chicken breasts, Nigella Lawsin’s recipe again, a big bowl of fatoush and a delicious Caprese salad.

Persian Walnut Cookies.

Hello everybody.

As always I like to try a new recipe,it’s becoming like a weekly challenge for me. Today’s trial was an interesting cookie one from the Persian cuisine.

Ingredients can give you a hint that it’s delicious, all nutty and aromatic but next time I’ll make them a bit smaller cause they spread well when baked.

Ingredients and method:

* 1 1/2 cups crushed walnuts.
* 3/4 cup sugar.
* 3 egg yolks.
*  1 tablespoon rose water.
* 1 tsp cardamom.
*  1 tsp vanilla.
* 1 tsp baking powder.
* pinch of salt.
* 1 extra egg yolk plus one tablespoon water.
* extra whole walnuts for garnish.

* Beat eggs, vanilla, cardamom, sugar well.
* add walnuts,rose water, baking powder and salt.
* dough will be sticky so use two spoons to scoop small amount on baking tray layered with wax paper.
* put a walnut on each cookie then brush with egg water mixture ( I think I’ll skip this next time maybe)
* bake in a medium heated oven (180 c) for 15-20 minutes only or till edges are brownish.

Note: cookies will be soft when hot but don’t worry they’ll harden later on.

Store in a closed jar later, they great with coffee or tea,rich in flavor and extremely delicious.

Apple Raisins Rice Pudding.

Hello everybody.

Last night as I was about to turn off the TV the Italian chef Lidea caught my attention making this recipe, rice pudding but with a twist, she added apples and raisins which really looked yummy and rich. Actually I think anything with cinnamon is delicious.

Well today I decided to implement it right away, a nice dessert for my hubby cause he’s on diet, I used skimmed milk, sativa sugar and only a small spoon of butter and cornstarch instead of egg yolks.

Ingredients and method :
* 4 cups milk.
* 1/2 cup sugar.
* 3 tablespoons cornflour.
*1/4 cup rice.
* 2 large peeled sliced apples.
* 1/2 cup raisins.
* 1 tsp butter.

* heat 3 cups of milk till warm.
* in the remaining cup dissolve cornflour and sugar well.
* boil rice for 10-15 minutes,drain and cool.
* add rice and cornflour sugar mixture to boiled milk.
*stir well and leave to simmer for 20-25 minutes.
* in a deep baking dish, spread butter then add apples,raisins and cinnamon.
* pour rice milk mixture on top then into a minimum heated oven for 20-30 minutes or till volume reduces.
* serve with vanilla ice cream or fresh cream.

Baking Day!

Hello everybody.

Two busy days, was invited to a big family lunch at my cousin’s in Irbid , loving gathering with lots of yummy food. Always a pleasure to visit my hometown.

Today started with baking Eid bread ( افراص عيد) traditional old kind of bread usually done in Eid time ,this time I tried to correct what I did wrong each time I did them before by making them thick and bake them in a very hot oven.Result was really good this time !

Then I cooked lunch ,Kabseh with hot sauce and fresh salad .

meanwhile I baked a beautiful cake for my friend’s son birthday ,chocolate and strawberries with ganache drippings.

Peanut Butter Cookies In Brownies.

Hello everybody.

We had a small lunch gathering today,my hubby made sheep pluck a meal not all favor so another dish was a must, made chicken fatteh was the option.

For dessert I searched for a new chocolate recipe cause I know it’s a favorite for my boys and niece. Came across this easy two in one kind of thing.
Peanut butter cookies dough scooped into brownie dough then baked all together, end result was really delicious. Actually not a bite left.

Ingredients and method :

Brownies batter :

* 1/2 cup butter.
*1 cup sugar.
* 1 egg.
* 1/2 cup flour.
*1/3 cup coccoa.
* 1 tsp vanilla.
* 1/2 tsp baking powder.
* 1/4 tsp salt.

For the peanut butter cookie dough :
* 1/4 cup vegetable oil.
*1/2 cup sugar.
* 1 egg.
* 1 cup flour.
*1/4 cup creamy peanut butter.
* 1 tsp vanilla.
* 1/2 tsp baking powder.
*1/4 tsp salt.

* make brownie batter by mixing sugar with butter first till creamy then adding rest of ingredients subsequently.
* line a medium sized pan,with wax paper and pour batter in it and spread it evenly.

* Make the cookie dough, beat oil with sugar then add all other ingredients till you get a firm ball.
* divide cookie dough to equally sized balls then dip them into the brownie batter.

*bake in a medium heated oven for 25-30 minutes, be careful not to over bake so as not to dry.

*when cooled remove from pan and cut into squares.

Great Depression Cake ( No Egg No Milk)

Hello everybody.

Yesterday I met a sweet lady who asked me if I make no egg and milk cake cause as you know it’s fasting time now and she had trouble finding one for her mom on Mother’s day.

Her question intrigued me to look for such recipe which led me to many.Most famous ones are called “big depression” or ” crazy cake” or “wacky cake”. Reason for this name goes back to the great depression time when eggs and dairy products were available so people had to use other resources to make cake. Result was really good and light, I changed a bit in the recipe to add up the flavor and topped it with pineapples and roasted coconuts.

Ingredients and method:

*3 1/2 cups flour.

*2 cups sugar ( I used only 1)

* 1/4 tsp salt.

*2 tsp baking powder.

*1/2 cup coconut.

*1 tsp lemon zest.

*1 tsp vanilla.

*2 tsp white vinegar.

*5 tablespoons vegetable oil.

*2 cups water.

* Some pineapples with it’s juice and roasted coconuts for garnish (optional)

*grease a big oven pan with some oil.

*mix all dry ingredients very well then put them in the pan.

*make 3 depressions in the flour mixture, two small and one bigger.

*put the vanilla in the fist small hole, vinegar in the other and finally oil in the big one.

*add water on top of  and mix all together well.

* Bake in a medium heated oven for 25-30 minutes or till try to toothpick test.

*when cooled add some pineapple juice on top and garnish with pineapples and coconut.

Early Mother’s Day Lunch.

Hello everybody.

All family men were invited to lunch Mansaf-ing as we say, on the occasion of my dear cousin’s wedding.

Well it was a good opportunity for family women to gather, I made a small loving meal for my mom,mother in-law, sisters and sister In-law and we celebrated Mother’s day together.

Made beautiful mini cakes with pineapple, strawberries, croquants and red velvet,though they took lots of time but outcome was really cute.

Lunch menu was steaks with mushroom sauce, baked potatoes on salt, fettuccine, eggplant fatteh and a big salad.

Naked Red Velvet Cake.

Hello everybody.

Went out this morning to celebrate a precious friend’s birthday, lovely people deserves beautiful things that’s why I made a colorful red velvet caked topped with strawberries and red currents.

Recipe is the same one I usually do but this time in three layers and naked style frosting, meaning only a bit of icing around the cake. It was really amazing, light and fluffy.

Here are ingredients and method of the cake:

* 2 large eggs.

* 1 1/4 cups sugar.

* 1/2 cup oil.

*1/2 cup butter.

* 2/3  cup yogurt.

* 1/3 cup milk.

* 1 tablespoon cocoa powder.

* 1 tablespoon vinegar.

* 1 teaspoon baking soda.

* 1 teaspoon baking powder.

* 1 tsp vanilla.

* 2 teaspoons red food coloring.

* 2 1/2 cups flour.

Icing:

* 2 packs cream cheese.

* 1/2 cup whipping fresh cream.

* 2 cups powdered sugar .

or :

*1 pack cream cheese.

* 2 packs dream whip.

* 1/2 cup powdered sugar.

* some red colored food glitter for decoration.

* beat eggs,vanilla,sugar  till frothy and creamy.

* add rest of ingredients consequently.

* bake cake in two round baking pans (same size)

* Beat frosting ingredients well together and leave to cool in fridge.

* when cake is done and cooled assemble the two layers with frosting in between and all over.

* leave in fridge to settle for couple of hours.

* decorate top with sprinkles in any shape you like.
