Black Forest Cake.

Hello everybody.

I know I said I’m on diet,still holding on honestly, lunch was one cup Mujadara with yogurt and that’s it.

As for the cake,I actually did two today,one plain with chocolate frosting for my cousin who’s resting after a minor operation and the the other chocolate black forest for the afternoon visit at my mother in-law’s cousin who moved to a new house. So I’m not guilty till now right?

Ingredients and method:

* 2 eggs.

* 1 1/2 cups both brown and regular sugar.

* 3/4 cup cocoa.

* 3/4 cup vegetable oil.

* 1 1/4 cup yogurt.

* vanilla and 2 tsp baking powder.

* 1 1/2 cups flour.

* whipping cream and blueberry topping for decoration.

 

* beat eggs,vanilla and sugar till creamy.

* add cocoa ,oil and yogurt and beat well.

* add baking powder and flour.

* split batter in two round baking pans and bake in a medium heated oven for 30-40 minutes or till done.

* beat the cream and put in fridge till stiff.

* remove cakes from pans and then assemble by adding cream and blueberry in middle and top.

*Note: you can add grated chocolate pieces on top also.

Diet Starts Today !

Hello everybody.

New month resolution DIET and back to daily WALKING habit, too much events and invitations since end of Ramadan,so now after school opened and sadly said goodbyes to most of Summer visitors it’s time to stop our mouths a bit don’t you think? hope this decision holds on cause only today I got two invitations for the next upcoming weeks , well I’ll do my best to compromise 🙁

I won’t start a fixed written diet,will try to cut down bread,carbs in general and portions cause I do have a family to feed and I won’t cook special meals for myself .

Today’s dish is very simple and easy,chicken breasts stuffed with spinach and garlic with herbs, lemon juice and soy sauce for seasoning,no salt and a bit of olive oil.

* Ingredients and method:

* chicken breasts cut in the middle.

* garlic and spinach.

* lemon juice and soy sauce.

* broccoli and mushrooms or any vegetables you prefer.

* oregano,basil or any herbs for seasoning.

* crush garlic and mix with spinach then stuff inside breasts.

* season with lemon juice and herbs.

* heat some olive oil in skillet then add breasts,keep turning till golden on both sides.

* add veggies and sprinkle all with some soy sauce then leave to simmer on low heat till all done.

* serve with simple salad .

Chicken Fajita.

Hello everybody.

Another full of events weekend,last night was the Henna party for our lovely bride Tara,lovely alive party and delicious food catered by Gourmet,wish the bride and groom an everlasting love and happiness. Today we’re invited to a wedding at the Four Seasons,best wishes to newlyweds as well!

Well lunch today was chicken fajita,very hot weather and dinner out needs a light lunch.

Ingredients and method:

* 1 large shredded boneless chicken breast.

* 1 shredded green or dry onion.

* shredded carrots.

* shredded colored peppers.

* fajita spices ready or homemade like the ones I made for quesadillas.

* pitta bread.

 

* marinate chicken in a bit of lemon juice or vinegar and 1 tablespoon of spices .

* heat some vegetable oil then add chicken and stir till dry and colored.

* add the onions,carrots and peppers and stir fry till all done.

* before serving add some sour cream or labaneh or avocado dip on the pitta bread then add chicken mix.

* wrap and toast a bit on the toaster.

Serve with simple lettuce vinaigrette salad or any of your choice.

Pear Crumble Cake.

Hello everybody.

I was honored  to have my hubbies’ aunt and our favorite cousin for lunch today,she came for a doctor’s appointment then came to lunch before going back to Irbid,we really had a great time.

I made rice with vegetables and curry chicken (Banan’s Rice ),roasted ribs,chili potatoes and salad with labaneh.

Dessert was a new recipe,pear crumble cake, I had some ripe pears so they were perfect for this.

* Ingredients and method:

* 2 cups water.

* 1 cup sugar.

* 1 stick cinnamon.

* 2 thinly sliced pears.

* 3/4 cup butter.

*2/3 cup sugar.

* 2 eggs.

* 1 1/2 cups flour.

* 2 tsp baking powder.

* 1 tsp vanilla.

* Crumble topping:

* 1/2 cup plain flour.

* 1/3 cup sugar.

* 1/2 cup butter.

* 1/2 cup coconut.

 

* combine water,sugar and cinnamon stick stir over heat till sugar dissolves then add the pears.leave to simmer till tender then drain and dry.

* mix butter and sugar till creamy then add eggs and vanilla.

* add flour and baking powder and mix well.

* pour the batter in a buttered spring pan then add pears on top.

* make the crumble by mixing all ingredients till crumbly, you may need extra flour.

* add crumble on top of pears.

* bake in a medium heated oven for 1 hour or till center is dry.

NOTE: make sure pears are very thinly sliced cause cake may sink in the middle if they’re thick.

* serve with whipped cream or vanilla ice cream.

Most Perfect Dinner !

Hello everybody.

Can’t think of any other title to describe last night,they say you can feel you’re pouring your love when you cook as much as you love the people to you’re cooking for,well I guess it’s kind of true

Dinner last night was to the  dearest loveliest group of friends, though I did do my best to make everything perfect,or maybe cause the whole atmosphere was warm and loving but food was really fantastic . Love you guys <3

As for the menu, it was:

* Greek and Caprese salads.

* Penne Arabiata and Pesto Pasta.

* Grilled vegetables and baked potatoes.

* Roasted boneless chicken marinated in lemon and herbs.

* Grilled steaks with mushroom sauce.

* Dessert was cheesecake pots and chocolate balls ( done by crumbling old brownies and chocolate cake then mixing with butter,cinnamon and coconut)

Cheesecake Pots.

Hello everybody.

I’m sure many many moms are delighted today right? Well it’s the first day of school for most students,though I feel sorry for them cause of the heat wave, they’ll all come back home sweaty and tired for sure. Nevertheless it’s back to order and routine, bye bye Summer vacation 🙁

Lunch today was simple Kofta,it’s too hot to do anything more complicated, I even regretted not making pasta with yogurt and mint instead,cooling dish.

I also started preparing for tomorrow’s diner party,made these cute cheesecake pots,very easy light recipe I have from an old magazine, they’ll be nice dessert after dinner.

 

Ingredients and method:

* digestive biscuits.

* 1 spoon butter.

* some strawberry jam.

* 1 can carnation ( condensed milk)

* 1 pick whipping cream.

* 1/2 cup plain yogurt.

* 1 pack cream cheese.

* juice and zest of one lemon.

* strawberry or cherry topping.

* crush the biscuits and rub in the butter till crumbly.

* divide the amount in glasses or pots.

* add small spoon of jam on top of biscuits.

* mix all other ingredients till creamy.

* add over biscuits then leave to cool in the fridge.

* decorate top with strawberry or cherry topping (will do that tomorrow)

What a Weekend !!

Hello everybody.

What a crazy busy full of events weekend, actually events started since Thursday where we had a Mansaf on the honor of our lovely cousin coming back home from Germany and on the occasion of my son’s 20’th birthday the next day, was followed by brownies and ice cream for dessert. Then dinner invitation at my auntie’s house .

Friday morning we all gathered for breakfast, usual Friday menu. Afternoon we went to Irbid for Caraway at my husband’s cousin to congratulate her for the new baby boy, then went to my cousin’s house for a big family gathering as a farewell for those leaving back after the vacation, we had Knafeh and a big cake on the occasions of both my dear twin cousin’s birthday and wife of one of them. It was a very nice party full of love <3

Today I helped my dear friend baking cookies for a party she’s holding,I made her chocolate chip  and oatmeal raisin cookies and cupcakes .

Lunch was my son’s favorite burgers with onions and mushrooms, above all this I made fig jam and as usual went grocery shopping !!

Am I right or not that this weekend was crazy??

Stuffed Courgettes and Nescafe Croquant Cake.

Hello everybody.

Tonight we’re invited to a BBQ ,but I have to cook for the boys anyway,thought stuffed courgettes and pulp will be a good choice,they both love it !

I think this dish is a favorite in most Jordanian homes,you seldom find anyone who doesn’t like it, I usually stuff eggplants also but not today,I usually cook the pulp with it,everybody loves it, my youngest sometimes hides the remaining amount in the fridge for dinner or the next day.

I also made my traditional Nescafe croquant cake to take with me for our hostess at night.

Greek Style Quesadillas.

Hello everybody.

Very hot and busy morning , don’t know why streets and shops are full, finished grocery shopping as fast as I can to go back home 🙁

Lunch today was noodles with vegetables and chicken,with soy sauce,ketchup and ginger. It’s a favorite of ours all the time .

I also made a quick side dish, light vegetarian quesadillas,found this recipe on Pinterest. You can add chicken to it if you like, your choice. Tasted really really good,will certainly do them again !

Ingredients and method:

* large tortilla bread.

* feta cheese.

* mozzarella cheese.

* fresh parsley and mint , chopped.

* black olives.

* chopped sweet peppers.

* pesto sauce or fresh basil leaves.

* cherry tomatoes.

* oregano,salt and pepper.

* optional additives : onions or shredded chicken.

* add feta and mozzarella on half of the bread then add toppings as you like.

* grill or toast in the oven after brushing pan with a bit of oil.

Up to Hometown Huwwara :)

Hello everybody.

Had a marvelous day, me and mom headed up North this morning and visited many relatives and as usual ate lots of food 😉

First stop was at my new fb friend and cousin for breakfast and a cup of coffee,all delicious and we had such a great time catching up and knowing each other face to face,a real pleasure. Visit ended with a superb piece of Teramisu since my cousin lives in Rome so she’s an expert,really yummy.

Then next visit was to my lovely colleagues and best cousins for lunch,we had rice with fava beans with salad and Irbid yogurt of course. Ha great time as usual 🙂

Trip ended by paying condolences for a relative then a must buying labaneh and yogurt on our way back from Husson.
