Homemade Ravioli.

Hello everybody.

Very busy eventful week,orders dinners and birthdays.

Last night I had guests at dinner, tried to make it a restaurant style one , served salad which was Greek with capers and feta cheese then pasta, penne and ravioli, then main course, grilled veal with mushroom sauce, baked potatoes and veggies and one portion of grilled salmon with garlic dill and olive oil.Desert was teramisu.

here’s the ingredients and method of ravioli:

* 2 cups flour.

* 1/2 tsp salt.

* 3 eggs.

* on a clean surface or in a bowl mix flour and salt then make a well in the middle and crack eggs in it.

* start whisking eggs into flour with a fork gradually.

* continue working with your hands or in a food processor till you get a firm dough.

* cover with cling film and leave to rest for 30-50 minutes.

* divide to 4 pieces then roll to a rectangular thin layer.

* make stuffing of your choice, cheese,spinach with cheese,meat .

*add one teaspoonful of stuffing in a line , cover with another rolled dough, add egg wash on sides  then cut into squares using a cutter or roller knife.

* keep dusting with flour so as pieces won’t stick to pan.

* cook in salted boiling water for 4-5 minutes only.

* cook in cream with basil and garlic or tomato pasta sauce as you wish.

I can humbly say it was an excellent meal and everybody had a great time.

Today’s morning orders were za’tar puffs, falafel rolls and two Daisies chocolate cakes.

Lunch Order For Jeeran Amman Company.

Hello everybody.

Sorry for the delay but it was a long eventful day with an early start cause I had a lunch order for a group of employees at Jeeran company.

They ordered steaks with mushrooms and gravy, mashed potatoes, chicken with broccoli and cream along with pesto pasta, quesadillas and French Pizza.

Dessert was a treat from me,muhalabieh with caramel.

Fresh Pesto with Shrimps.

Hello everybody.

Found an amazingly fresh bunch of basil at grocery store today, couldn’t resist taking most of it and instantly made pesto and cooked in it. So aromatic and nutty, I even added some walnuts with the pine nuts, delicious 😋

After cleaning and arranging my fridge, found an eggplant and a bunch of radishes that must be cooked or eaten before they’re ruined, so eggplant turned to dip and radish a salad with lemon juice and parsley.

Pesto was quickly done with shrimps garlic and pasta with Parmesan cheese on top.

Artichoke Spinach Baguette.

Hello everybody.

Since yesterday’s lunch was so old fashioned today’s choice is extra Italian!
Fettuccine Alfredo with mushrooms and chicken was the main dish, on the side I made this yummy sort of garlic bread but with rich stuffing.
Saw this recipe on Facebook yesterday,you mix some chopped artichokes, spinach, cream cheese, mozzarella or kashkaval or cheddar as you like, season with garlic powder  salt and pepper and any other herbs like basil or oregano.

Cut the baguette to three pieces, remove the inside and  stuff it with the mixture . Cut to small slices  then brush all with butter, garlic powder and parsley ( I used thyme instead).

Wrap the loaf with foil paper, bake for 20 minutes then uncover and bake for another 10 minutes.

Serve hot with any pasta or pizza, so easy and delicious.

Shrimps With Tomatoes and Spaghetti.

Hello everybody.

Too much work today,stuffed pickled eggplants,pickled olives and even did some with carrots,walnuts,chili and coriander.

Nevertheless this didn’t mean I didn’t cook so I made something quick and easy , I posted the recipe before but it was with risotto ,today I did it with plain spaghetti.

* Shrimps:

* 1 kg medium or jumbo shrimps.

* 2-3 garlic cloves.

* chopped sweet peppers.

* 1 can chopped Italian tomatoes or fresh ones.

* bunch of coriander.

* salt,pepper,and some chili powder.

* saute garlic and peppers in some olive oil.

* add shrimps and stir till color changes then add salt,pepper and chili.

* add tomato can and a bit of water then leave to simmer on low heat till sauce is thick.

* add chopped coriander and cook for another 5 minutes.

 

Absolutely delicious meal 🙂

Lasagna Is Always A Good Choice!

Hello everybody.

It’s been a long long time since I cooked lasagna, I’m really surprised !

As the title say this dish is always a good option,everybody loves it .

Today I made simple basic recipe,with white sauce and minced meat with tomato sauce, I added some vegetables to the meat sauce ,peas, carrots and  sweet corn,this is optional of course plus I used the special moussaka spices I have from Limasol/Cyprus.

A tip my best friend Sireen once told me is to add one tablespoon of flour to the tomato sauce mixture so as to thicken it.
I also added dried oregano and a big spoon pesto sauce,so yummy.

Fettuccine in Rosa Sauce.

You may wandered what did I do with all these cherry tomatoes in the oven, well they were very ripe and tender so this what you do…

I baked the whole tomatoes with one chili pepper, sweet yellow pepper, garlic,rosemary, oregano,salt and olive oil alongside the cake till all tender and a thick sauce is out. I then mixed all together in the blender.

Used this sauce with some fresh mushrooms,pesto and fresh cooking cream as sauce for fettuccine.
Sprinkle with Parmesan and oregano when served.

Easy simple end of the week lunch.

One Pot Veggies Pasta.

Hello again.

Lunch for the rest of us was one Pot Pasta with lots of veggies.

I used carrots, broccoli,onions garlic, tomatoes, mushrooms and avocados added when done instead of cream.

All in one Pot with salt, pepper, oregano and basil, topped with water and olive oil then cooked for one hour.

Really yummy specially with parmesan cheese on top.

Melon Granita.

Hello everybody.

Saw this recipe on Fatafeat cooking channel the other night, when I searched the net I found a big variety of recipes of the basic one but with many flavors either fruits or coffee.

First trial was with melons and it turned out really good,refreshing and light I even liked it more than ice cream, definitely a winner!

Ingredients and method :
# 1/2 cup sugar.
# 1/2 cup water.
# 10 ice cubes.
# 1 melon cut to chunks.
# 3 tablespoons lemon juice.

# dissolve sugar with water and boil for 3 minutes then add ice cubes,leave till they melt.
# in a blender mix syrup, melons, lemon juice all together.
# pour mixture in a big metal pan and put in freezer.
# after one hour begun scrapping edges and mix all together.
# keep doing this every now and then till you get a crystal or slushy mixture.
# Serve with fruits or alone.

Note: you can blend mixture a bit if it gets too hard next day.

Shushbarak in Tomato Sauce.

Hello everybody.

How are you all doing in this heat?  Guess hot fatty dishes aren’t desirable in this weather though many made mansaf or maqloubeh nevertheless.

Well a last minute decision cause all woke up late was this long time no cook dish. Shushbarak with tomatoes, I added mushrooms black olives, pesto, oregano and a bit of feta cheese over ready made shushbarak pieces then all topped with mozzarella.

Yummy cool and fulfilling, fake ravioli my kids call it.
