What a Weekend !!

Hello everybody.

What a crazy busy full of events weekend, actually events started since Thursday where we had a Mansaf on the honor of our lovely cousin coming back home from Germany and on the occasion of my son’s 20’th birthday the next day, was followed by brownies and ice cream for dessert. Then dinner invitation at my auntie’s house .

Friday morning we all gathered for breakfast, usual Friday menu. Afternoon we went to Irbid for Caraway at my husband’s cousin to congratulate her for the new baby boy, then went to my cousin’s house for a big family gathering as a farewell for those leaving back after the vacation, we had Knafeh and a big cake on the occasions of both my dear twin cousin’s birthday and wife of one of them. It was a very nice party full of love <3

Today I helped my dear friend baking cookies for a party she’s holding,I made her chocolate chip  and oatmeal raisin cookies and cupcakes .

Lunch was my son’s favorite burgers with onions and mushrooms, above all this I made fig jam and as usual went grocery shopping !!

Am I right or not that this weekend was crazy??

Chicken Escalope and Poutine.

Hello everybody.

Second day of Eid preparations but not cooking this time,a more tiring boring thing to do ,cleaning the house 🙁

Though we clean our houses everyday but don’t know why we make a complete clean up at the end of Ramadan, Eid rituals I guess !

As for dinner I  did a new soup “Menstrone vegetable soup”,really tasty,I’ll post the recipe later for sure. Plus chicken escalopes and poutine  upon my son’s request,but he ended up going out to dinner,well bad luck cause not a bit left !

I’m drinking coffee now then up to do some cookies,will post photos tomorrow.

Eid Preparations.

Hello everybody.

Getting ready for Eid for sure, as I can see from banancooking group many of the members started baking goodies !! كل عام وانتم جميعا بالف خير.

I started today,made Date Rolls,planning to do Rock cookies and something with walnuts if I have time Insh’Allah.

As for dinner today I made green beans and rice,though everybody didn’t like my choice but I had no other option, anyway they all ate it at the end,guess from hunger 🙂

Teramisu and Labaneh Mold.

Hello everybody.

Two events today,a small gathering for my lovely Auntie and her daughter coming from Irbid and a bigger gathering for my cousins this afternoon. Don’t ask me how I managed but I did don’t know how! time management is the key word,that’s for sure.

I made a Teramisu but a bit different from the real Italian one,no mascarpone cheese cause it’s not always easy to find it , but this recipe that I have from my dear friend Rula is very good, I even found out I don’t have sweetened condensed milk for it but I added cream and some sugar so taste was almost the same.

I also made labaneh with mint and oregano layered in toast bread and decorated with tomatoes,cucumbers and olives,you can decorate it anyway you like.

Ah I forgot to mention,I made spinach tabouleh and cheese rolls as well 🙂

Ingredients and method for teramisu:

* 2 packs whipping cream.

*2 packs kiri or cream cheese.

* 1 can condensed milk (or cream and 1/4 cup sugar)

* lady fingers biscuits.

* Nescafe ( 1 big spoon dissolved in 3/4 cup warm water)

* mix cream,condensed milk and cheese together very well.

* arrange biscuits in a deep serving dish then soak them in coffee mixture. * add half of cream mixture then repeat process. * refrigerate for 3-4 hours.

* sprinkle cocoa powder on top. All set and ready now,waiting!!

Rock Cookies ( كعك صخري)

Hello again.

As I mentioned earlier I also made some cookies and packed a bit as a gift, I think this is a very loving giveaway or gift, I mean when you cook or bake something for someone you love or care about, you can feel that in the taste or look, is this true or do I imagine this??

Rock cookies are very popular,In Irbid you can find them in every house you visit in Eid time, I have this recipe from my auntie who’s very famous in doing them, but I modified a bit by using brown sugar instead of white and added dried cranberries.

Ingredients and method:

* 2 eggs.

* 1 cup sugar or 3/4 brown sugar.

* 3 big spoons butter.

* 1 cup mixed nuts ( walnuts,almonds,pistachios,hazelnuts)

* 1/2 cup raisins.

* 1 tsp cinnamon,pinch of cloves,cardamom and nutmeg.

* vanilla,1 tsp baking powder and a pinch of salt.

* 2 cups flour.

 

* mix eggs,sugar and butter till creamy.

* toast nuts in the oven for 10 minutes then crush them.

* add nuts and raisins to flour,baking powder and salt then add egg mixture.

* mix very well with wooden spoon till you have a not too soft nor tough dough.

* make spoonfuls of the dough on a baking pan,size of a small ball.

* bake in a medium heated oven for 10-13 minutes or till edges are golden.

* store in a well sealed jar or tin.

Date Rolls (مقروطه )

Hello everybody.
My sweet cousin requested this recipe since I started my blog, I didn’t have time or chance though. I usually make these cookies or rolls after Ramadan , serve them in Eid . Actually became my speciality. I took this recipe from my mother in-law’s cousin, though i’ve been doing them for years now but nothing beats hers..♡♥.
Tomorrow we’re going to visit a friend from old school days so I thought i’ll take some with me. A homemade present is always heart warming. Hope she’ll like them.

Ingredients and method:
* 5 cups flour
* 4 cups whole wheat flour (طحين اسمر ).
* 1 cup vegetable oil.
* 1 cup olive oil.
* 1 cup margarine or ghee.
* seeded and ground dates (2-3 packs).
* 1/2 cup sugar.
* 1 tsp sodium bicarbonate.
* 2 big spoons ground anise (يانسون ).
* 1 big spoon ground fennel (شومر ).
* 1 big spoon cinnamon.
* 2-3 spoons sesame seeds and black seeds ( سسمسم وقزحه ).
* 1 small spoon mahaleb (محلب )
* mix all oils and spices with flour well till it forms crumbles and leave overnight so as flour absorbs all oils and essences.

* to the dates add olive oil, cinnamon, anise powder, nutmeg, cardamom . A little sprinkle just to add some flavor.

* add warm water to flour enough to make a dough 1-2 cups..it must be easy to handle not hard nor soft.
* cut dough and dates to four portions.
* roll one part of dough to a big  thin rectangle between nylons.
* roll dates all to same size rectangle between wax paper or nylon.
* place date over dough and cut unorganized edges.
* roll dough and dates together 3 or 4 rolls.
* cut to 1 inch slices then pat with your hand to flatten them a bit.
* with a sharp knife cut surface to small lines.
* bake in a medium heated oven till bottoms are golden and then toast surface a bit.
* store in a cookie jar or well sealed box.
