Citrus Almond Syrup Cake.

Hello everybody.

Morning gathering at my friend’s house with the loveliest ladies ever ,my  old school classmates, great memories and lots of catching up cause it’s been a while since we saw each other.

My friend did many delicious dishes,pastries, tabouleh,cheesecake and chocolate balls , as for me I baked this super easy juicy cake this morning and took it with me.

By the way this cake is flour-less , very convenient for people who has flour sensitivity  ( Celiac desease)

Ingredients and method:

* 2 small oranges.

* 1 1/2 cups almonds.

* 1 cup sugar.

* 5 large eggs or 6 small.

* vanilla.

* 1 tsp baking powder.

Syrup:

* 1/2 cup sugar.

* 1/4 cup lemon juice.

* juice and shredded peel of one orange.

* 1/4 cup water.

 

* cover whole oranges with water and boil for 40-50 minutes or till very soft.

* in a food processor blend sugar and almonds till very fine.

* cut oranges to quarters and remove seeds then process till smooth ( whole orange peel and pulp).

* gradually add eggs while mixer running , add vanilla .

* add almonds sugar mixture and baking powder.

* pour batter in a round or any baking tin then bake in a moderately slow heated oven for 1 hour or till cake is firm.

* combine syrup ingredients and leave to simmer on low heat till syrupy.

* when cake is cooled add syrup and orange peel on top.

Black Forest Cake.

Hello everybody.

I know I said I’m on diet,still holding on honestly, lunch was one cup Mujadara with yogurt and that’s it.

As for the cake,I actually did two today,one plain with chocolate frosting for my cousin who’s resting after a minor operation and the the other chocolate black forest for the afternoon visit at my mother in-law’s cousin who moved to a new house. So I’m not guilty till now right?

Ingredients and method:

* 2 eggs.

* 1 1/2 cups both brown and regular sugar.

* 3/4 cup cocoa.

* 3/4 cup vegetable oil.

* 1 1/4 cup yogurt.

* vanilla and 2 tsp baking powder.

* 1 1/2 cups flour.

* whipping cream and blueberry topping for decoration.

 

* beat eggs,vanilla and sugar till creamy.

* add cocoa ,oil and yogurt and beat well.

* add baking powder and flour.

* split batter in two round baking pans and bake in a medium heated oven for 30-40 minutes or till done.

* beat the cream and put in fridge till stiff.

* remove cakes from pans and then assemble by adding cream and blueberry in middle and top.

*Note: you can add grated chocolate pieces on top also.

Stuffed Courgettes and Nescafe Croquant Cake.

Hello everybody.

Tonight we’re invited to a BBQ ,but I have to cook for the boys anyway,thought stuffed courgettes and pulp will be a good choice,they both love it !

I think this dish is a favorite in most Jordanian homes,you seldom find anyone who doesn’t like it, I usually stuff eggplants also but not today,I usually cook the pulp with it,everybody loves it, my youngest sometimes hides the remaining amount in the fridge for dinner or the next day.

I also made my traditional Nescafe croquant cake to take with me for our hostess at night.

Lovely Cousin’s Visit <3

Hello everybody.

Today I was really thrilled to meet my cousin coming for Summer vacation from Qatar, It’s been a long time since we saw each other and had lots and lots of catching up.

Though I was willing she’d come for lunch but due to her full schedule visit ended up in the morning and we had breakfast together.

I also made her favorite chocolate cake,we used to make it when we were in college every week,such great memories <3

Well truth is nothing beats cousins and good old friends,everlasting memories !

Lazy Cake <3

Hello again.

Last Wednesday we were invited at my uncle’s house on the occasion of his son’s graduation from university. As usual my auntie made lots of yummy food,table was various and full of many kinds of both finger food and desserts.

I made for her the old fashioned lazy cake,this might be the oldest and first dessert a girl might start doing in her teens,cause it’s easy and quick to do,that’s why I think it’s called lazy cause any lazy person can do it without much effort 🙂

This old recipe of mine contains eggs,but cooked not raw, you can find many modified or other ones without it,but this one is a sure success every time and unbelievably tasty.

Ingredients and method:

* 3-4 packs plain biscuits.

* 3/4 cup butter.

* 3/4 cup cocoa powder.

* 1 cup sugar.

* 3 eggs.

* vanilla.

* crush biscuits to medium size pieces.

* mix butter,sugar,cocoa,vanilla and eggs very well and heat till all combined to a smooth thick mixture.

* add over biscuits then pour into a mold of your choice.

* decorate with melted chocolate or cocoa powder.

Poppy Seed Orange Cake.

Hello everybody.

Today I feel I’m really back to my routine,cause baking a cake is a real satisfying pleasure to me I guess <3

I brought these poppy seeds from Limassol,really fresh, made this awesome cake with them,always a success. They do give the cake or even bread a nice nutty taste specially when combined with oranges.

Ingredients and method:

* 3 eggs.

* 1 cup sugar.

* 1/2 cup poppy seeds.

* 1/2 cup milk.

* 3/4 cup orange juice.

* 1/2 cup vegetable oil.

* 2 cups flour.

* lemon or orange rind.

* vanilla and 3 tsp baking powder.

* Orange syrup:

* 1 cup sugar.

* 2/3 cup orange juice.

* 1/3 cup water.

Method:

* beat eggs,vanilla,sugar till creamy.

* heat milk and add poppy seeds and leave 20 minutes.

* add oil,juice and milk mixture to eggs then add flour and baking powder.

* bake in a medium heated oven for 40-50 minutes or till done.

Syrup:

* mix all ingredients and leave to simmer till it’s sticky or a bit thick.

* pour over cake when cool.

Lentils ( mujadara)

Hello everybody.

Lots of events going on today,I went out to breakfast with my lovely friends to celebrate dear Wafa’s birthday, early this morning I baked another Nescafe Cake, I think this one will be my trademark from now on,with the same ornament and flowers. Everybody enjoyed it and was a delightful surprise.

Back home I got the nicest present from my lovely niece Layan,a box of mixed herbs from Istanbul, thank you dear 🙂

At lunch time plans changed a bit,I’ve  already cooked some lentils before I left ,thought I’ll make one of Mary’s recipes from her lovely book “On Healthy Cooking” but then discovered I don’t have all ingredients available,so ended up making mjadara with fried onions and some salad.

Nescafe Croquant Cake.

Hello everybody.

No cooking today, still have cauliflower,plus nobody is coming at lunch time, so it’s sweets day 🙂

My neighbor’s ( which is my husband’s auntie at the same time) birthday is today,we’re going for coffee to celebrate with her so thought I’ll bake a cake.I also made some cookies and Tabouleh, might make the gathering at my house better than taking all this food with me,plus it’s a chance to pamper our sweet Auntie Um Rasheed <3

A friend of my niece asked me a while ago for this cake’s recipe and I promised her to make it soon, so today is a good chance,cause I want to make a kind of birthday cake, this will do just great.

This recipe is very old,I remember when I first learned it I used to make it every weekend, it was such a trend that time , a sweet auntie of mine used to call it the glass cake 🙂

Ingredients and method:

* 5 eggs.

* 1 big spoon Nescafe dissolved in 1/2 cup of water.

* 1 tsp vanilla.

* 1  1/2 cups sugar.

* 1 cup vegetable oil.

* 4 tsp baking powder.

* 2 cups flour.

* 1 1/2 cups sugar and 3/4 cup almonds for the croquant.

* whipping cream.

* extra Nescafe in water for the cake when done.

* beat eggs with sugar till creamy then add vanilla,oil,Nescafe,baking powder and flour alternatively.

* bake in a medium heated oven in two small baking tins for 30-35 minutes or till dry from inside.

* when cooled, place one layer in serving plate then add some Nescafe on it.

* cover with cream and croquant then add other layer and repeat.

* decorate cake with anything you have .

*Croquant :

* heat sugar and almonds till it caramelize.

* pour in a well greased pan till cold and stiff.

* crush or use food processor to make fine crumbles. ( it actually resembles glass 🙂 )

* leave in fridge to settle before serving.

Strawberry Shortcakes :)

Hello everybody. This morning my youngest son amazed me with a question ” Are we allowed to repeat one of the recipes you posted or you have to cook something new? ”

I was really impressed,my hubby and boys are becoming like me,always thinking what to cook the next day and how to keep ideas and recipes flowing !! Thank God I think one can always innovate and search,each day comes with its new post without even planning 🙂

So upon my son’s request I cooked chicken with broccoli and mushrooms but made rice instead of pasta on the side.As for today’s title,I made these cute strawberry shortcakes for my son’s friends who came over this afternoon,better than eating candy and sweets !

Ingredients and method:

* fresh strawberries.

* cream ( 2 packs dream whip)

* for the shortcakes:

* 1 3/4 or 2 cups flour.

* 3/4 cup butter.

* 1/2 cup sugar.

* 1 tsp baking powder.

* 1/4 cup cream or milk.

* pinch of salt.

* crushed almonds (optional)

* stem and cut strawberries,add a bit of sugar on them and leave aside till cakes are done.

* beat cream powder as directed till stiff and keep in fridge to cool.

* beat butter with sugar then add salt,baking powder and flour.

* mix with your hands till dough is crumbly.

* add milk or cream gradually and knead till you form a firm but not hard ball then leave to rest 15 minutes.

* roll dough to a rectangle then using a cookie cutter or cup form circles then move to a floured baking pan. keep flouring surface of table or use wax paper to avoid sticking.

* add crushed almonds on top then bake for 10-13 minutes or till biscuits are golden.

* assemble layers of biscuits,cream then strawberries in cups or glasses or plates as you wish,garnish with strawberry syrup and fresh mints.

* keep in fridge to cool before serving.

Toffee Cake with Butterscotch Sauce.

Hello everybody.

No cooking today,still have enough food from yesterday,however this doesn’t mean no kitchen-ing at all. To tell you the truth I feel weird if I did nothing 🙂

I had visitors coming afternoon,one of them loves anything to do with dates,so this cake will be perfect,though it says toffee but main ingredient is date,and the sauce goes along great with it.

Ingredients and method:

* 3/4 cup brown sugar.

* 3/4 cup vegetable oil.

* 3 eggs.

* 1 1/2 cups chopped pitted dates.

* 1 cup boiling water.

* 1 tsp sodium bicarbonate.

* 1 tsp ginger.

* 1 tsp vanilla.

* 3 tsp baking powder.

* 1 tablespoon molasses.

*  1 3/4 whole wheat flour.

 

* Add water, molasses and bicarbonate on dates,cover and leave to cool.

* Beat sugar and oil till creamy.

* Add eggs and vanilla,then ginger

* Add baking powder and flour .

* Add the date mixture and beat for 2 minutes.

* Bake in a medium heated oven for 30-35 minutes.

 

Sauce: heat 2 tablespoons butter with 1/2 cup brown sugar till it melts then add 1 pack cream, whisk very well till thick.

Serve cake with Vanilla Ice cream with sauce on top ,really yummy yummy.
