Eggs in a Bun.

Hello everybody.

In no mood to cook today,my son suggested to do this eggs in the bun thing he saw once on Instagram so we did, tasted good but more a breakfast than a lunch option but a good choice with the remaining chicken pie from yesterday.You simply remove the inside of the bun,stuff it with cheese,turkey or salami and add the eggs then cover with foil paper and put it in the oven till eggs are done.

I also made some orange marmalade cause I have lots of citrus fruits from Ghor sent to us from our dear aunt, love this kind of jam, my favorite actually.

I also made some jam biscuits,needed the jar to be honest,they’ll be a good treat for tomorrow’s hunting trip.

Well full long day , hoping for a relaxing weekend !!

Black Olives Pate(معجون الزيتون الاسود).

Hello everybody.

Went out shopping today,changed the hectic tiresome week for sure, it’s true that shopping is the best therapy, I’m positive husbands don’t agree with me 🙂

At lunch time kids were out and we weren’t in the mood to eat something heavy,so I took out some Irbid loaf (قراص عيد) given to me by my beloved aunt,heated it to eat with fresh labaneh,new makdous though it needs more time to ripen, some olive pate and tabouleh from yesterday, best lunch EVER,this is my favorite kind of meal anytime of the day !

Black olives pate is very delicious and easy to make,I removed seeds of old olives from last year,added some chili,basil and garlic powder then processed them all together. keep it in a glass jar covered with olive oil, very nice spread for sandwiches or as  dip with chips,better than buying it ready made right?

 

Note: you can keep it in freezer to be more fresh whenever you want it.

Hash Browns Eggs Brunch.

Hello everybody hope you’re enjoying your weekend.

Different Friday routine today, went to Ikea as a change to usual coffee at Rula’s , lovely  shopping time ended with delicious aromatic coffee .

Got back home not knowing what to cook,boys wanted something quick not lunch or breakfast type,then I remembered this recipe I saw the other day on Fatafeat done by the famous chef Gordon Ramsay , turned out a perfect brunch , kids loved it.

Ingredients and method:

* 3-4 large potatoes peeled and finely grated.

* 1 small grated onion mixed with potatoes.

* 3-4 large eggs.

* some salami or beef bacon (optional)

* salt and pepper.

* vegetable oil and some butter.

* mix grated potatoes,onion,salt and pepper very well then squeeze to remove all water.

* heat some oil in a skillet (one you can use in the oven later)

* add potato mix and press evenly.

* add some butter cubes on edges.

* cook till bottom is crispy and golden then flip all on the other side using another plate or pan.

* cook till golden then add eggs,salami,salt and pepper on top.

* put in the oven to roast or eggs are well done.(upper flame on )

* serve with salad, today I made lettuce,corn,sun dried tomatoes and dressing on top.

Really easy quick fulfilling meal,great as brunch,lunch or even dinner.

Spaghetti <3

Hello everybody.

Went to breakfast with my sweet Aunties and Mom to Hamada Restaurant-Fuheis branch,nice cozy,clean tasty and cheap place,a rare thing these days to find all these qualifications and most important excellent quick service 🙂

Before I went out I cooked simple spaghetti with minced meat,mushroom tomato sauce. Nobody says no to that,though I couldn’t eat a bite after the hummus falafel foul breakfast 🙂

What a Weekend !!

Hello everybody.

What a crazy busy full of events weekend, actually events started since Thursday where we had a Mansaf on the honor of our lovely cousin coming back home from Germany and on the occasion of my son’s 20’th birthday the next day, was followed by brownies and ice cream for dessert. Then dinner invitation at my auntie’s house .

Friday morning we all gathered for breakfast, usual Friday menu. Afternoon we went to Irbid for Caraway at my husband’s cousin to congratulate her for the new baby boy, then went to my cousin’s house for a big family gathering as a farewell for those leaving back after the vacation, we had Knafeh and a big cake on the occasions of both my dear twin cousin’s birthday and wife of one of them. It was a very nice party full of love <3

Today I helped my dear friend baking cookies for a party she’s holding,I made her chocolate chip  and oatmeal raisin cookies and cupcakes .

Lunch was my son’s favorite burgers with onions and mushrooms, above all this I made fig jam and as usual went grocery shopping !!

Am I right or not that this weekend was crazy??

Traditional Apple Pie.

Hello everybody.

No cooking today,I still have lots from yesterday,plus I went out with my friends for breakfast to a kind of new place in town Shakespeare & co. really pleasant place,beautiful decor, tasty food and excellent service I might say 🙂

This doesn’t mean no work,my mother in law’s school friends are coming tomorrow morning so I made apple pie and za’tar sticks but as round pastries this time, will be great with a cheese platter and Tabouleh.

You may find various apple pie recipes all over,I usually make this one which is easy and always work.

Ingredients and method of apple pie:

*Crust:

* 1 egg.

* 1 tsp vanilla or lemon zest.

* 1/2 cup sugar.

* 3/4 cup butter.

* 1 3/4 cups flour ( you may need 1/4 more to make a firm dough)

* pinch of salt.

* 2 tablespoons cold water.

 

Filling:

* 5-6 large apples peeled and cut to slices.

* 1/2 cup walnuts (optional).

* 1/4 cup raisins (optional).

* 1/4 cup brown sugar.

* 1 tsp lemon juice .

* 1 tablespoon cinnamon ( sorry forgot to add it in the photo)

 

* beat the egg.vanilla,sugar and butter till creamy.
* add flour and salt and knead well till you have a firm round dough ( add more flour if it’s sticky and you can’t handle it)
* leave to cool in the fridge for 30 minutes.
* spread 3/4 dough in pie pan evenly in bottom and sides.
* pinch it with a fork so as it won’t form a bubble.
* mix filling ingredients well and pour them into the pie pan.
* make shapes to decorate top of pie from remaining dough ,sprinkle surface with flour or use plastic bag for easier handling.
* bake in a medium heated oven for 30-40 minutes or till sides and bottom are golden then toast the surface.
    You can reheat it and serve it with vanilla ice cream or as is with a sprinkle of icing sugar,depends on how the lovely ladies prefer tomorrow .

Lovely Cousin’s Visit <3

Hello everybody.

Today I was really thrilled to meet my cousin coming for Summer vacation from Qatar, It’s been a long time since we saw each other and had lots and lots of catching up.

Though I was willing she’d come for lunch but due to her full schedule visit ended up in the morning and we had breakfast together.

I also made her favorite chocolate cake,we used to make it when we were in college every week,such great memories <3

Well truth is nothing beats cousins and good old friends,everlasting memories !

Hello everybody.

Hot Summer day since morning,seems all weekend will be like this.

My sister in-law called to invite us to breakfast ,we actually go to visit each Friday noon for coffee,a ritual I guess by now,but today we went earlier and had a cozy delicious breakfast followed by coffee on the balcony which was cool and breezy.

Up to Hometown Huwwara :)

Hello everybody.

Had a marvelous day, me and mom headed up North this morning and visited many relatives and as usual ate lots of food 😉

First stop was at my new fb friend and cousin for breakfast and a cup of coffee,all delicious and we had such a great time catching up and knowing each other face to face,a real pleasure. Visit ended with a superb piece of Teramisu since my cousin lives in Rome so she’s an expert,really yummy.

Then next visit was to my lovely colleagues and best cousins for lunch,we had rice with fava beans with salad and Irbid yogurt of course. Ha great time as usual 🙂

Trip ended by paying condolences for a relative then a must buying labaneh and yogurt on our way back from Husson.

Cinnabon Pancakes

Morning everybody.

Long weekend this week,public holiday this Sunday,Jordan celebrating Independence Day .I’m sure many working moms  are happy now,wish you all a relaxing enjoyable time.

As a change this morning cause all of us have plans at lunch time,I made a rich fulfilling breakfast. saw this recipe on Pinterest ,it’s a combination of pancakes and cinnabons,really tasty but a bit too sweet,first two pieces were really sweet so next batch I lessened amount of cinnabon mix on pancake so  itwas better.

I ended my breakfast with a piece of white cheese to reduce sweetness in my mouth !! other than that it’s really good.

Ingredients and method:

* For pancakes ( you can use ready mix and add on it the cinnabon mix also)

* 1 egg.

* 1 cup flour.

* 1 cup milk.

* 1 tablespoon vegetable oil.

* 1/2 tsp baking powder.

* pinch of salt.

* Cinnabon mixture:

* 2 tablespoons butter.

* 3 tablespoons brown sugar.

* 1 tsp cinnamon.

* For the glaze:

* cream cheese ( I didn’t have it today so you can do without it)

* 1/4 cup icing sugar.

* 2-3 tablespoons milk .

 

* Mix pancake ingredients very well.

*Mix cinnabon ingredients after melting the butter.

* mix glaze ingredients well also.

* pour pancake mix in a  heated non stick pan or skillet ( enough to cover it)

*add a small spoonful of cinnabon mix on top as a swirl.

* lower heat till pancake is dry.

* top with glaze and walnuts.
