Happy Independence Day Jordan

Hello everybody and Happy Independence Day to all.

To live the spirit of today’s celebration we started with a colorful breakfast decorated with Jordanian symbols. Bagels with cream cheese, labaneh and peanut butter jam filling.

Lunch was old fashioned green za’tar tomatoes fatayer or pastries.

Dessert was a beautiful Jordan’s flag colored cake, made four layers of colored batter then assembled all with cream and fruit salad, like a rainbow cake but with different colors.

Bagels.

Hello everybody.

Housework and cleaning up today, too much dust in this country.

When done I was looking for something to do for a quick breakfast cause my son wants something ready to go or easy to fix each morning before going to the university.

Crossed over this bagels’ recipe and thought I’d give it a try,resembles a lot the soft pretzels one, result was not bad I guess waiting for the boys to judge.

Lunch was leftover lasagna with some chili potatoes with garlic and coriander.

I also made dried fruit cake,light and not sweet to have with Nescafe in the morning.

Ingredients and method of bagels :
# 3 1/2 cups flour.
# 1 1/3 cups warm water.
# 1 tsp salt.
# 2 tsp sugar.
#1 1/2 tsp instant yeast.
# boiled water.

# mix dry ingredients together well then add warm water and incorporate well together.
# knead for 5-10 minutes till smooth.
# cover and let rise for 1 hour.
# when doubled in size knead once more then form 6-8 balls.
# with a floured finger make a hole in the middle.
# leave to rise again then broil in boiling water for 1 minute on each side then remove to dry.
# line up on a floured oven pan.
# brush surface with some egg whites then sprinkle with sesame seeds or poppy seeds or salt.
# bake bagels in a medium heated oven for 20-30 minutes.

Guess they’re fine as a first trial.

Lasagna and Pan Garlic Bread.

Hello everybody.

Another busy Saturday, I think I should change my schedule sometimes I really wish to have a real lazy weekend, always failing to do so.

Well lunch today was lasagna with mushrooms and spinach inside,a bowl of Ceazar salad and I did the same pizza procedure as yesterday but with garlic powder, oregano, salt and a drizzle of olive oil on top, really yummy and crispy.

Guess this pan pizza will be on my easy to do stuff list.

Pizza in a Pan.

Hello everybody.

Lazy cold cloudy Friday, why does it become like this on weekends????

Well at lunch time I suddenly decided to try this pizza recipe my cousin posted last week, a spreadable kind of dough in a pan, topped with pizza sauce, toppings and cheese then cooked on the oven. Turned out really good and extremely quick to be done as said in video.

While pizza on stove I made some Rock Cookies for the empty jar and send some to my friend on the occasion of birth of her first grandson, congratulations

Baked some of the cookie dough in a skillet,super yummy.

 

 

Ingredients and method of pan pizza :
# 1 cup flour.
# 2/3 cup warm water.
# 1/2 tsp baking powder.
# 1 tsp instant yeast.
# 1 tsp salt.
# 1 tsp honey.

# mix all these ingredients well together then spread evenly in a nonstick pan.
# add pizza sauce then any toppings you like ( basil,oregano, tomatoes, olives…)
# top with cheese.
# cover tightly and cook on the stove on high temperature for 5 minutes.
# remove pan lid a bit and lower heat to minimum and leave for another 10 minutes.
# toast top till crispy.

Lemon Velvet Cake.

Hello everybody.

ً Went out to celebrate my friend’s birthday this morning to the Boulevard-Abdali ,first time for me to go and I was really impressed, beautiful place and scenery, didn’t expect it to be like this.

Birthday cake was a new recipe “Lemon Velvet Cake ” very similar to the red velvet but with lemons, really delicious and fresh,will definitely be on my favorite list.

Ingredients and method :

# 3 eggs.
# 11/2 cups suger.
# 1/3 cup margarine or butter.
# 2/3 cup vegetable oil.
# zest and juice of one big lemon.
# 1 tsp lemon essence (optional)
# 1/2 cup yogurt.
# 1/2 cup milk.
# 1 tsp vanilla.
#3 tsp baking powder.
# 3 cups flour.

Frosting :
# 3/4 cup butter.
# 2 cups icing sugar.
# some lemon zest.
# juice of half a lemon.
# some milk.
Note: I think next time I’ll make cream cheese frosting with lemons it’ll be better, this one is good but too rich in butter.

#Beat oil, butter and sugar till creamy then add eggs, yogurt, milk, vanilla.
#add lemon zest and juice.
# add baking powder and flour.

# pour batter in two small round oven pans.
# bake in a moderate heated oven for 35-40 minutes or till dry from inside.
# leave to cool then assemble two cakes with frosting in between and all over.
# decorate with lemon zest or roasted coconut.

Happened that I have two chocolate decorations one for a girl graduate and the other a boy which were so convenient cause my friend has both occasions for her children aside from her birthday.

Minced Meat in Pitta Bread (3arayes)

Hello everybody.

Long hot day,had to go to Roya TV again on such very short notice so I hadn’t enough time to cook.

A quick resolution, passed by the butcher on my way home and got fresh ground meat,then to the bakery for fresh pitta bread.Mixed meat with grated onion,tomatoe,chili pepper, garlic, some burgul,salt and spices.
Stuffed it in pittas,brushed with olive oil and into the oven till crispy.Loveliest 3arayes ever.

Excellent choice in this weather specially with some yogurt.

Grilled Cheese Dried Tomatoe Salad.

Hello everybody.

Long hot hectic day, among-st all day work Roya TV called to ask me to go cook tomorrow another time, doubled my chores for today but never-mind I’m so happy and excited, this means yesterday’s episode was a success.

Lunch today was many leftovers with a big green salad with sun-dried tomatoes, grilled white cheese and some pine nuts,dressing was simple vinaigrette with a bit of pomegranate sauce.

I also made another special requested Humming Bird cake for my lovely cousin’s birthday. Many happy returns dear.

Lazy Cake.

Hello everybody.

Big family lunch at my uncle’s house today, all delicious as usual.
Menu was roasted lamb and chicken with freekeh.

Dessert was fruit pizza and I made the laziest recipe ever Chocolate Lazy Cake.

Grilled Chicken with Broccoli Mushrooms and Pesto Pasta.

Hello everybody.

Had to cook something quick today cause I had to meet my friends to go watch Mammia Musical and it was really worth every minute and penny, absolutely amazing,music still in my ears till now.

Saturday lunch is always fresh cause it’s grocery day, marinated chicken breasts in this yummy rich dressing marinate sauce my husband bought yesterday, then grilled them with garlic, sage and rosemary, added fresh broccoli and mushrooms then left them to simmer a while. Made some pesto pasta on the side and that’s it, quick and easy.

FISH!

Hello again.

Lunch today was a big fish in the oven stuffed with garlic, onions, tomatoes, parsley, lemon, salt,pepper, chili and cumin with a drizzle of olive oil on top.

Of course with its companions French fries, fried bread and tahini parsley salad.
