Kofta with Tomatoes.

Hello everybody.

Waiting for my sister in-law and her son for lunch, upon his request his grandma made freekeh and I made kofta with tomatoes peppers and potatoes.

Ingredients and method:
* 1 kg ready mixed kofta (minced veal with onions and parsley).
* sliced mixed veggies: eggplants, courgettes, pumpkins, potatoes.
* sliced tomatoes and green peppers.
* 1 pack tomato paste.
* 1 cube maggi.
* 1 1/2 cups water.
* salt and pepper.

* form the kofta to fingers shape then cook on low heat till golden and done.
* grill veggies till brownish on both sides, some people fry them but dish will be too oily.
* arrange veggies in rows then add kofta in between. * dissolve tomato paste and maggi in water then add on pan.
* add salt and pepper.
* cook on low heat for 1 hour.
* serve with white rice.

Hello everybody.

Today is no meat or chicken day, a break is in need sometimes.

One dish was a new recipe, steamed broccoli flowers with garlic tahini sauce on top and a sprinkle of summaq,though all said sauteed is much nicer but it’s not bad, healthy and light.

The other was my favorite “Chili Potatoes” my kind of dish,hot with some lemon juice, great with the stuffed pickled peppers .

Ingredients and method of chili potatoes.

  • 3-4 large potatoes peeled and cut to medium sized cubes.
  • 2 cloves garlic minced.
  • 1 bunch of fresh coriander.
  • salt,pepper,paprika,chili powder.

* deep fry the potatoes till golden.

* when still hot season with salt,pepper,paprika and chili.

  • saute garlic in some olive oil till golden then add potatoes and mix all well.
  • leave on to cook together over very low heat for 10 minutes.
  • add fresh chopped coriander just before serving.

Spinach Meatloaf and Roasted Potatoes.

Hello everybody.

Only me and my son are home for lunch today so it’ll be a favorite of his choice  ‘Meatloaf’

 

Easiest quickest thing to do, added some spinach,breadcrumbs,one egg,mustard,ketchup,salt,pepper and a pinch of nutmeg all to 1/2 a kilo of minced veal.Mixed all well then shaped them into a loaf and in the oven for 30 minutes that’s it.

Alongside I baked some wedged potatoes with skin, added salt,pepper,chili and some breadcrumbs also.All done and eaten with an hour!

Nicoise Salad.

Hello everybody.

Another hot and dusty day with expected thunder rain,again no mood for hot cooked food.

Choice was niscoise salad, veggies, boiled eggs and potatoes, olives with lemon onion olive oil dressing.

Satisfying in these conditions.

Chili Cheese Potatoes and Tehran Salad.

Hello everybody.

Feels like late Autumn days today it even rained a bit.

Dinner today was leftover ablama from yesterday, I added up some string beans in olive oil, noodles soup.

I tried a small portion of two new recipes, an appetizer and a salad.

Salad is a Persian recipe, grated cucumbers in yogurt with some chickpeas, raisins, walnuts, cumin powder and mint decorated with crispy bread pieces on top.

As for the other dish it’s a potato stew or bake that I saw last night on instagram.

Ingredients and method :

* 2 large cubed potatoes.
* 1 small chopped onion.
* one minced garlic clove.
* 2 cups pasta sauce ready or homemade.
* some sliced mushrooms.
* some sweet corn.
* chili powder or Tabasco.
* salt, pepper, oregano.
* mazorella cheese.

* fry potatoes till golden.
* saute onions and garlic till tender.
* add pasta sauce,chili salt and pepper and leave to simmer till onions are done.
* in a deep oven pan line half of the potatoes then mushrooms and corn on top then another layer of potatoes.
* pour sauce over all,then sprinkle cheese on top and in the oven for 20-25 minutes.

Great with roasts or steaks.

Mhammara ( محمره)

Hello everybody.

Today I made a selection of appetizers with the leftovers of yesterday in very little amounts.

One dish which is a favorite of mine is mhammara, usually done in Lebanese restaurants.I also made baba ghanouj which is roasted eggplant with tomatoes and parsley.

One the side I made some chicken liver sautéed in olive oil and pomegranate sauce and chili potatoes.

Ingredients and method of mhammara :
# 1 cup walnuts.
# 1 cup breadcrumbs or toast bread.
# 2 tablespoons tomato paste.
# salt,pepper.
# chili powder.

# 1 tsp cumin powder.
# 3/4 cup olive oil.
# water till paste is smooth.

# mix all ingredients together in food processor till all homogeneous add water till you get a good consistency.

#garnish with walnuts and olive oil.

Day 4 is done, now thinking about what to cook tomorrow.

Ramadan Preparations.

Hello everybody.

Busy morning preparing for Ramadan cause I get too tired first day so thought I’ll do some things to be at ease.

Did some samboosek, cheese rolls, roasted bread and a big pot of syrup for the sweets.

Lunch was various fries, potatoes, eggplants and cauliflowers with pickles and tahini sauce.

Salad was Rita’s recipe, wide green beans with garlic and cherry tomatoes.

Cheese Stuffed Steaks.

Hello everybody.

My husband bought some meat yesterday preparing for Ramadan coming in couple of weeks so as to avoid crowded roads and shops as usual,anyway I kept some fresh steaks to do today.

Well as I always say my number one application to look for new recipes or ideas is Pinterest, just love this it !

Found this super easy recipe, you simply stuff then roll steaks and grill them in some oil and butter. Stuffing was minced garlic, chopped onions and parsley, some pesto sauce and a hard sharp cheese with spices and salt of course.

Happens to be that my friend did the same but stuffing was shredded veggies, looks yummy as well.

Made mashed potatoes and a salad on the side plus a sauce made of balsamic vinegar,steak sauce,a bit of Worcestershire sauce and one teaspoon butter all boiled till it thickens

Potatoe Cheese Frittata.

Hello everybody.
After a busy morning preparing the final touches for my son’s graduation party I went home with the intention of not cooking anything.

Well my plan didn’t work cause yesterday’s leftovers were not enough so I made a mix of potatoes,cheese, egg and flour with a bit of parsley and baked a delicious frittata, see cooking isn’t hard when you think a bit :mrgreen:
