Mhammara ( محمره)

Hello everybody.

Today I made a selection of appetizers with the leftovers of yesterday in very little amounts.

One dish which is a favorite of mine is mhammara, usually done in Lebanese restaurants.I also made baba ghanouj which is roasted eggplant with tomatoes and parsley.

One the side I made some chicken liver sautéed in olive oil and pomegranate sauce and chili potatoes.

Ingredients and method of mhammara :
# 1 cup walnuts.
# 1 cup breadcrumbs or toast bread.
# 2 tablespoons tomato paste.
# salt,pepper.
# chili powder.

# 1 tsp cumin powder.
# 3/4 cup olive oil.
# water till paste is smooth.

# mix all ingredients together in food processor till all homogeneous add water till you get a good consistency.

#garnish with walnuts and olive oil.

Day 4 is done, now thinking about what to cook tomorrow.

Sheep Pluck (معلاق خاروف)

Hello everybody.

I know many didn’t understand my title,both English and Arabic.

Well sheep pluck means liver,kidneys,heart and lungs of sheep, personally I never tasted or cooked it ,it’s my hubby”s specialty ,many people consider it a fancy meal,mostly done in Eid Al-Adha where sheep parts are abundant and fresh or you can ask your butcher to keep them for you,we usually bring them cut and ready to cook.

Today I invited my sister in law and her husband,who usually dig in with my husband,it’s a favorite of both. Of course I made extra things to go along with it and for me to eat 🙂

I made french fries,aubergines and fatoush and my mother in -law made mloukhieh with minced meat. It was a lovely Saturday lunch,followed by the sweetest most delicious melon ever.

 

Ingredients and method:

* cut,cleaned pluck.

*2-3 big coarsely chopped onions.

* 1 hot pepper.

* salt,pepper and bay leaves.

* olive oil.

*saute onions and pepper in olive oil till tender then add meat parts.

* keep stirring till color is changes to brown,then lower heat and leave to simmer for 1 hour,keep stirring it every 10-15 min,

 

I know it might be a strange dish but everybody who eat it say it’s very good,a delicacy even 🙂

Chicken Liver.

Hello everybody, hope you’re enjoying your weekend so far.

Today we stayed guessing what to eat for lunch till 2 p.m,then my hubby volunteered  to  make us chicken liver, it’s his specialty, I never did it before.

As for me I made potatoes in a different way, saw this recipe yesterday on Pinterest,they were good but as always not all food photos on the net turn out the same shape, don’t know why this always happens !!

Ingredients and method:

Chicken Liver:

* 1/2 kg chicken liver.

* 2 sliced onions.

* chili green pepper.

* olive oil,salt,pepper and pomegranate sauce.

* saute onions and peppers in heated oil,then add livers and stir.

* add salt and pepper then leave to simmer on low heat till dine ( 30-40 minutes)

* when done turn off heat and add one big spoon pomegranate sauce and stir all together.

 

* Potatoes:

medium sized potatoes.

* 3-4 garlic cloves.

* olive oil and butter.

* salt and pepper.

* mash garlic and saute in some oil then add salt and pepper.

* slice potatoes thinly but not till the end ( keep it all together from the bottom)

* pour garlic and oil on top then add a cube of butter.

* bake for 45-50 minutes till crispy from outside.

 

I also made sauteed flat mushrooms with garlic and lemon and french fries for the boys, nice late meal. Thank you dear hubby for the yummy liver,really good and tasty 🙂
