Chicken on a Can.

Hello everybody.

Found this can stand that I bought long time ago and thought I’d try it.

This recipe is originally done with a beer can,well I won’t use beer for sure so I used non-alcoholic one.

Just rub the chicken with all spices,garlic,chili , butter and lemon slices then pour 1/4 of the can in the pan and place the chicken over the can and bake in the oven for hour and a half.

Crispy and yummy.

Armenian Freekeh and Pineapple Salad.

Hello everybody.

Interesting and joyful atmosphere at Botma market this morning, been intending to go every Saturday but hadn’t got the time till now.

You can find a wide selection of seasonal veggies and herbs plus many jars of delicacies like jams and spreads,all looks fresh and healthy. Market is open each Saturday from 9-2 don’t miss it.

Well I certainly shopped some things including lettuce and baby spinach immediately made a big bowl of salad with fresh pineapples and walnuts.

Lunch was Armenian Freekeh with onions, mushrooms, cream and cheese with chicken breasts on top.

Roasted Lemony Chicken and Potatoes.

Hello everybody.

As I mentioned yesterday we had a dinner gathering and I made a chicken and potato dish, which was incredibly juicy and well flavored cause of the awesome marinade I used.

 

Ingredients and method ( for 8  small pieces of chicken)

* zest and juice of one lemon and one orange.

* 1 tablespoon fresh or dry rosemary.

* 1 tablespoon oregano.

* 1 leaf fresh or dry sage (ميرميه)

* salt,pepper and olive oil.

*Marinate chicken in all these for a whole night or 3-4 hours minimum.

* in a deep oven pan,add some onion slices,bay leaves,cinnamon stick and few cardamons then add chicken with marinade close tightly with foil and leave in a medium heated oven for 1 1/2 -2 hours.

* when done roast chicken till golden then remove each piece to a deep serving dish.

* sieve remaining juices to get a clear fluid then add 1 tablespoon flour or starch diluted in cold water.

* leave to simmer till it thickens.

* You can bake some veggies or only potato cubes in another pan alongside also seasoned with rosemary,oregano,salt,pepper and a drizzle of olive oil.

* arrange potatoes around chicken pieces and drizzle sauce all over them before serving.

 

Really easy tasty dish,went well with the eggplant maqloubeh last night.

Homemade Fried Chicken.

Hello everybody.

Plan was to make burgers today but after a chat with my cousin last night who said she’ll make fried chicken today I decided to do the same specially after finding fresh small drumsticks in Miles this morning.

I marinated chicken in  a mix of yogurt,milk,garlic,salt,pepper,chili powder, oregano and mixed spices, left them for 2 hours then remove and coat with breadcrumbs and flour. Freeze them for half and hour then deep fry in hot oil.

To complete the crime I fried some curly potatoes and made three dipping sauces,honey mustard,mayo-ketchup and BBQ .

Though this is a high calorie a bit greasy meal but it won’t hurt to make it once in a while plus it was really better than any ready one bought from fast food restaurants and much more cleaner and well spiced for sure.

Honey Glazed Lamb Chops.

Hello everybody.

In addition to routine shopping I went to the butcher this morning, though I’m not a meat expert but I managed to get what I want with the help of the friendly butcher in Miles store.

My youngest son who’s a big meat lover asked for lamb chops,even searched for a new kind of marinate or seasoning and came out with this one to try, really delicious mind that meat is very tender and fresh also.

I made some potatoes mixed with herbs and spices, some Greek quesadilas cause I have some tortillas from last week that must be used before they ruin and a big bowl of salad.

Excellent meal to end the weekend 🙂

Marinate for lamb chops :

* 1/4 cup honey.

* 1/4 cup soy sauce.

* 1/4 cup Worcestershire  sauce.

* 1/4 cup mustard.

* salt,pepper.

* some Italian seasoning,chili,oregano.

* some bay leaves.

* olive oil.

* lemon juice for serving.

* mix all and marinate chops in a bag for 1-2 hours then roast uncovered in a medium heated oven till done.

Diet Starts Today !

Hello everybody.

New month resolution DIET and back to daily WALKING habit, too much events and invitations since end of Ramadan,so now after school opened and sadly said goodbyes to most of Summer visitors it’s time to stop our mouths a bit don’t you think? hope this decision holds on cause only today I got two invitations for the next upcoming weeks , well I’ll do my best to compromise 🙁

I won’t start a fixed written diet,will try to cut down bread,carbs in general and portions cause I do have a family to feed and I won’t cook special meals for myself .

Today’s dish is very simple and easy,chicken breasts stuffed with spinach and garlic with herbs, lemon juice and soy sauce for seasoning,no salt and a bit of olive oil.

* Ingredients and method:

* chicken breasts cut in the middle.

* garlic and spinach.

* lemon juice and soy sauce.

* broccoli and mushrooms or any vegetables you prefer.

* oregano,basil or any herbs for seasoning.

* crush garlic and mix with spinach then stuff inside breasts.

* season with lemon juice and herbs.

* heat some olive oil in skillet then add breasts,keep turning till golden on both sides.

* add veggies and sprinkle all with some soy sauce then leave to simmer on low heat till all done.

* serve with simple salad .

Chicken with Herbs.

Hello everybody.

Today is chicken day ,I brought with me different kinds of mixed herbs from Cyprus so I did the recipe Chicken with sesame seeds and oregano and added some of new ones to it.

I also did sauteed vegetables,Armenian freekeh with cheese and I have some potatoes from yesterday. Made more lentil soup and fatoush.

Dessert today is qatayef again, nobody says no to it 🙂
