Early Mother’s Day Lunch.

Hello everybody.

All family men were invited to lunch Mansaf-ing as we say, on the occasion of my dear cousin’s wedding.

Well it was a good opportunity for family women to gather, I made a small loving meal for my mom,mother in-law, sisters and sister In-law and we celebrated Mother’s day together.

Made beautiful mini cakes with pineapple, strawberries, croquants and red velvet,though they took lots of time but outcome was really cute.

Lunch menu was steaks with mushroom sauce, baked potatoes on salt, fettuccine, eggplant fatteh and a big salad.

Artichoke Spinach Baguette.

Hello everybody.

Since yesterday’s lunch was so old fashioned today’s choice is extra Italian!
Fettuccine Alfredo with mushrooms and chicken was the main dish, on the side I made this yummy sort of garlic bread but with rich stuffing.
Saw this recipe on Facebook yesterday,you mix some chopped artichokes, spinach, cream cheese, mozzarella or kashkaval or cheddar as you like, season with garlic powder  salt and pepper and any other herbs like basil or oregano.

Cut the baguette to three pieces, remove the inside and  stuff it with the mixture . Cut to small slices  then brush all with butter, garlic powder and parsley ( I used thyme instead).

Wrap the loaf with foil paper, bake for 20 minutes then uncover and bake for another 10 minutes.

Serve hot with any pasta or pizza, so easy and delicious.

Fettuccine in Rosa Sauce.

You may wandered what did I do with all these cherry tomatoes in the oven, well they were very ripe and tender so this what you do…

I baked the whole tomatoes with one chili pepper, sweet yellow pepper, garlic,rosemary, oregano,salt and olive oil alongside the cake till all tender and a thick sauce is out. I then mixed all together in the blender.

Used this sauce with some fresh mushrooms,pesto and fresh cooking cream as sauce for fettuccine.
Sprinkle with Parmesan and oregano when served.

Easy simple end of the week lunch.

Hello everybody.

Invited our cousin and his family for dinner tonight.

Menu was steaks with mushroom,mashed potatoes,fettuccine,Iranian rice,mloukhieh,Russian salad and lettuce noodles salad.

Fettuccine Alfredo with Sun-dried Tomatoes.

Hello everybody.

Had to cook something in a hurry this morning, something that can be heated quickly when we arrive home from school ,so fettuccine with cream was a great choice.

I did this dish before,a small addition to chicken,mushrooms,pesto,cheese and cream was sun dried tomatoes,really gave a twist to it , good news many left for tomorrow 🙂

Fettuccine with Shrimps.

Hello everybody.
A quick advice, don’t go to the mall these days! Had to go grab something only found in the mall, too crowded, no parkings and streets are crazy, why do people leave shopping for Eid till last days ?
Anyway though I arrived home a bit late I still had time to cook ,so rapidly I made chicken Ceazer salad and fettuccine with shrimps, dried tomatoes and pesto sauce, quick easy light dinner, 4 or 5 more days to go.
May God accept 🙂

Baked Broad Beans.

Hello everybody.

Today I took a break after two days of running around,had dessert with coffee at noon,tasted even better today .

As for lunch I made Fettuccine and a small dish of baked beans,easy and cool in this hot weather.

Ingredients and method:

* 1 cup dry broad beans soaked in water overnight.

* one small finely chopped onion.

* 2 cloves chopped garlic.

* 2-3 coarsely chopped tomatoes.

* some olive oil.

* boil beans in water till tender then wash and dry.

* saute onions and garlic in hot oil till golden.

* add tomatoes and simmer for 15 minutes,you may add some water if sauce is dry.

* add salt,pepper and chili if you like.

* in a deep oven pan,put the beans and pour sauce over them,cover then bake all for 30-40 minutes.

Very nice dish needs zero effort 🙂

Fettuccine ♡♥

Hello everybody.

I was invited to breakfast this morning, this means I had to cook something quick. So fettuccine with chicken and cream was the best solution. Told you from the beginning pasta is a must everyweek!!!
Ingredients:
* 1 pack fettuccine pasta.
* 1 small carton fresh cream.
* 1 chicken breast.
* mushrooms.
* 1-2 cups milk.
* butter.
* pesto sauce if you have.
* parmesan or mozzarella cheese.
* salt.pepper.
Method:
* cut chicken breast to small chunks.
* heat a spoon of butter with a spoon of pesto.
* add chicken, stir till done then add mushrooms.
* add the cream, milk , salt and pepper.
* leave to simmer till sauce reduced or thick.
* cook the pasta in boiled salted water till done.
* mix it with cream and chicken.
* add cheese and more milk if the mixture is too thick.
* sprinkle parmesan and oregano on top if desired.
