Eggplant Maqloubeh with Sun-dried Tomatoes.

Hello everybody.

Another batch of veggies were brought from the farm yesterday, so had to do something with these eggplants before they rot.

A traditional Arabic dish Maqloubeh is always a good choice but today I added two things that I don’t use usually, onions and sun-dried tomatoes.

Well thought I’d combine a recipe I saw on Fatafeat cooking channel in Chef Daad Abu Jaber show and an advice from my lovely aunt .Result was extremely delicious ,they really did add to the taste .

Fried Courgette Flowers.

Hello everybody.

Lunch today was mloukhieh from yesterday, fresh from the farm and so yummy with garlic and lemons.

Alongside with it I made these cute fresh courgette flowers that u couldn’t resist not bring cause they were so intact, a waste to throw them away.

Stuffed with cheddar and Parmesan cheese, garlic and oregano then dipped in an egg,milk, flour batter with a pinch of salt and baking powder.

So crunchy and tasty, I even took some for the guy working at grocery store cause he can’t believe or imagine that these can be cooked.

طريقه وردات الكوسا:

تحشى الوردات بمزيج من الاجبان الصفراء مع ثوم واعشاب.

يحمى زيت القلي جيدا ثم تغمس كل قطعه بمزيج متجانس عباره عن كوب طحين, 2 بيض, , نصف ملعقه ملح ونصف باكينغ باودر ويضاف حليب بالتدريج حتى يصبح القوام سلس .

ثقلى بالزيت الغزير لمده 5 دقائق.

Chicken Curry.

Hello everybody.

What a relief when your kids ask for a specific dish, wow big burden is off your shoulders.

My son requested chicken curry for his friends last night so I made a big pan to take over for them, I just feel so happy to feed a bunch of boys whose parents are away.
Well mission done and all packed to go with some chocolate pudding from yesterday as well.

ingredients and method:
* 1 cubed boneless chicken.
* cubed carrots, potatoes, chopped peppers and sliced mushrooms.
* 1 chopped onion and 2 cloves garlic.
* 1 tablespoon cornflour dissolved in 1 cup of milk OR coconut milk.

* chicken broth or water with 1 cube maggi ( 5-6 cups).
* salt, pepper, all spice and 2 big spoons curry powder.

* marinate chicken in some of spices and curry for 1/2 hour.
* heat some oil and saute chicken till tender.
* add onions and garlic.
* add potatoes, carrots and peas, mix all till a bit done.
* add rest of spices.
* add peppers and mushrooms.
* add milk and cornflour.
* add broth or water, boil and simmer for 40-50 minutes.
* serve with plain white rice.

One Pot Veggies Pasta.

Hello again.

Lunch for the rest of us was one Pot Pasta with lots of veggies.

I used carrots, broccoli,onions garlic, tomatoes, mushrooms and avocados added when done instead of cream.

All in one Pot with salt, pepper, oregano and basil, topped with water and olive oil then cooked for one hour.

Really yummy specially with parmesan cheese on top.

Green Beans with Tomato Sauce.

Hello  everybody.

Lunch today was an old fashion heart warming meal,green beans with meat and tomato sauce with rice on the side, good choice specially that it’s been a while since I cooked it.

You will need:
1/2 kg of lamb meat cut to cubes or big pieces with bones as you prefer.
1kg cut, washed green beans.
2 or 3 large ripe tomatoes.
2 cloves of garlic.
1 small onion.
2 big spoons tomato paste.
5 cups of water.
Salt.pepper. mixed spice.paprika.
1 big spoon olive oil.

In a pressure cooker or regular pan..heat the oil then add meat pieces, salt.pepper.spices. paprika, stirr well till meat is brownish and crispy.
Add the beans and keep stirring till it softens.
In a blender mix the onion, garlic, peeled tomatoes, tomato paste and water then pour it over the beans and meat..
You can add one more cup of water if the juice is too thick.then leave to boil for 30-40 minutes on low heat if in pressure cooker or for hour and half if in regular pan.. or till meat is well done.
Of course this dish is served with rice..today I made rice with small noodles (شعيريه ) I toasted it with vegetable oil and salt till golden.added the rice, mix them well together then added water till above rice by one inch.
When all water is absorbed lower the heat ,, I usually place a tin under the pan to keep heat very low and rice won’t burn, then leave till rice is done.

Nicoise Salad.

Hello everybody.

Another hot and dusty day with expected thunder rain,again no mood for hot cooked food.

Choice was niscoise salad, veggies, boiled eggs and potatoes, olives with lemon onion olive oil dressing.

Satisfying in these conditions.

Vegetables Stew (طباخ روحو)

Hello everybody.

This dish is a very very old traditional one, I remember till now that my grandma used to cook it a lot and we all hated it and run away lunch time to buy a falafel sandwich instead. I isn’t kid’s friendly I guess.

But since a have lots of pumpkin, courgettes, eggplants and tomatoes I thought I’d do some though I did it with small cubed meat pieces not big boned ones which is how it’s originally done.

Ingredients and method :
# 4-5 pieces of lamb with bones cooked till done with it’s stock (2-3 cups)
# 3-4 big courgettes cut to chunks
#1 bug eggplant cut to chunks.
# 1 slice of pumpkin or 3 big green pumpkins also cut to chunks.
#1 big onion sliced.
# 4 ripe tomatoes peeled and cut to small pieces.
# 4 cloves of minced garlic.
# 1 tsp dry mints.
# olive oil.
# salt, pepper, all spice.

# in a deep nonstick pan saute courgettes, eggplants and pumpkins till golden.
# add onions and leave to simmer till all veggies are a bit tender.
# add meat pieces and stock.
# season with salt, pepper and all spice to your taste.
# add the tomatoes and cover to cook over low heat till all stewed well together.
# add minced garlic and dry mint and leave for another 15-20 minutes.
# Serve with plain rice.

I also made a bowl of Ceazar salad in case keep kids didn’t like it.

Oh I forgot to mention that the exact translation of this dish Arabic name  is  ” cooked by itself ” cause it does actually!

Cousin’s Lunch Gathering.

Hello everybody.
Had a warm loving lunch for my cousin and her cute daughters visiting Jordan from Rome, it was really a pleasure.
Menu was Banan’s rice, Fava beans with cooked yogurt and steaks, a pesto pasta and salad.Dessert was plain cake with chocolate Ganache on top and fruits.

Cheese Stuffed Steaks.

Hello everybody.

My husband bought some meat yesterday preparing for Ramadan coming in couple of weeks so as to avoid crowded roads and shops as usual,anyway I kept some fresh steaks to do today.

Well as I always say my number one application to look for new recipes or ideas is Pinterest, just love this it !

Found this super easy recipe, you simply stuff then roll steaks and grill them in some oil and butter. Stuffing was minced garlic, chopped onions and parsley, some pesto sauce and a hard sharp cheese with spices and salt of course.

Happens to be that my friend did the same but stuffing was shredded veggies, looks yummy as well.

Made mashed potatoes and a salad on the side plus a sauce made of balsamic vinegar,steak sauce,a bit of Worcestershire sauce and one teaspoon butter all boiled till it thickens
