Winter is Back!

Hello everybody.

I’m sure you’re all surprised by today’s weather,it’s unusual to have such rain this time of year in Jordan, but I guess weather this year is really weird from the beginning.

Since we’re back to rainy cold weather all over again, so I made potato soup with eggplant fatteh ( فته مقدوس), this dish reminds of Ramadan which is practically coming soon,less than two months 🙂

Ingredients and method:

Potato soup:

* 1-2 big potatoes,cubed.

* 1 spring onion.

* 1 maggi cube.

* 1 pack cream.

* salt ,pepper.

* 4-5 cups water.

* saute chopped onions till tender then add potatoes and stir well.

* add salt,pepper,maggi and water.

* leave to boil then simmer till potatoes are done.

* mix with hand mixer or blender then add cream and simmer for 10 more minutes.

 

Eggplant Fatteh ( فته مقدوس)

3-4 cubed fried eggplants.

* finely chopped onion.

* roasted or fried squared pitta bread.

* tahini sauce ( tahini,lemon,salt,yoghurt,garlic)

* tomato paste.

* chopped parsley.

* cooked spiced minced meat.

* toasted almonds and pine nuts.

* salt,pepper,all spice and cinnamon for seasoning.

 

* saute onions till tender then add fried eggplants.

* add all seasoning,tomato paste and enough water to cover all then leave to simmer till sauce is thick and eggplants tender.

* layer pitta bread in Pyrex or serving dish,add eggplant with sauce on top.

* add tahini sauce then garnish with parsley,meat and nuts.

Note: this dish must be assembled right before you serve so as pittas stay crisp otherwise they’ll be soggy .

I made some salad and kids made egg omelette with the remaining meat,nice hot lunch in this kind of cold day.

Freekeh Soup (شوربه فريكه )

Hello everybody.

   Winter is back again, though it’s warm but raining at last ( حمدلله ). So I decided to make soup only just before lunch time , thank God for pressure cooker again.
This soup is very tasty and nutritious , it is made from fine freekeh not the one used in cooking as rice, can be bought from any store.
Ingredients and method:
*1 cup washed fine freekeh.
* 1 small finely chopped onion.
* 1 cube maggi or chicken stock.
* salt, pepper and 1 tsp powdered cumin.
* juice of half a lemon.
* 6 cups water.

* saute onions in some oil.
* add washed freekeh.
* add maggi cube.
* add salt and spices.
*add lemon juice.
* add  water.
* leave to cook for 20-30 uf in pressure cooker or 1 hour if in regular pan.

Appetizers:Russian Salad,Broccoli Soup and Spinach Pastries.

Hello eveybody.
Today I only made a salad and soup cause I still have some leftovers from yesterday. I also made some spinach pastries. Tomorrow i’ll make a new dish Inshallah.
* Russian Salad:
This salad is very easy but a bit fatty cause It has lots of mayonnaise. But  I always use light one hoping to decrease the damage :).
You simply boil some beans, carrots, sweet corn and potatoes in water till tender then add salt, pepper, bit of vinegar and a good amount of mayonnaise to cover them. Mix gently.
Note: boiled eggs are usually used in this salad also in it or as garnish but I don’t actually use it..it’s fine without it as well.

*Broccoli Soup:
Love this delicious healthy soup.
   Used to make it with fresh cream but one day I ate it at my sweet aunt Nabiha, it was very light but creamy as well. Trick is using one big potato with it so that when mixed together with the broccoli it gives a creamy rich texture.
Ingredients and method:
* 1 big potato peeled and cubed.
* 5-6 broccoli florets.
* 2 green onions.
* 1 cube maggi.
* 2-3 big spoons oatmeal.
* 1/2 cup milk.

* heat a bit of butter, stir chopped onions, potatoes and half of the broccoli.
* add the oatmeal, maggi, salt and pepper. Mix all together.
* add 4 cups water and the milk.
* simmer till vegetables are done.
* mix with hand mixer or in blender.
* add rest of broccoli florets. Leave to simmer for 15-20 minutes.

* Spinach Pastries.
I was looking in my freezer and fridge wandering what else to do, found some puff pastry left from last time’s  chicken pie  and some spinach so thought to do these pastries . Hoped they’ll taste as good as they look.
I simply added black pepper, a piece of white cheese and a small piece of cream cheese, then closed the pastry as a parcel and baked them.

Steak Sandwiches♡

Hello again.

Lunch today is a favorite for all, plus it’s convenient when family members arrives home at different times.

Steak sandwiches can be a goid trick for kids who doesn’t like meat..making it into sandwiches is more convincing.

Ingredients:
* shredded beef steak.
* shredded onion.
*shredded mixed sweet peppers.
* shredded mushrooms.
* gravy powder or steak seasoning.
* buns or steak bread.

Method:
* sautee the onions in butter and oil till tender. ( a trick I learned from cooking tv shows, mixing butter and olive oil keeps them both from burning and adds a delicious flavor).
* add beef, seasoning  and salt. Mix till meat is almost done.
* add the veggies then leave to simmer for 30 minutes.  You can add a bit of water to ensure all ingredients are well done.
* fill the breads, add cheese, lettuce, mustard, ketchup as each one favors.
* heat them in the oven till crispy.
* make french fries or baked potatoes or salad on the side.

I also made noodles soup with peas and carrots.

Ingredients:
* 1 small onion, finely chopped.
* 1 cup frozen peas and carrots.
* 1 cup small noodles (شعيريه ).
* 1 cube chicken broth or fresh chicken broth.
* 4 cups water.
* salt, pepper, all spice as desired.
* small bunch chopped parsely.

Method:
* sautee onions till tender with little oil.
* add noodles stir till golden.
* add peas and carrots.
* add chicken cube, seasoning and water.
* leave to boil then simmer for 20-30 minutes.
* add parsley before serving.

Light lunch with yesterday’s leftovers ( Mushroom Soup and Ceazar Salad)

I know almost every mom faces this problem 2 or 3 times a week leftovers won’t be enough and backup is needed,as my mom always say (سنده ).

Well today I made mushroom soup and Caesars salad.
I usually make mushroom soup from scratch..never used ready packs.it’s very easy and much more tasty for sure.
You will need:
1 small onion.
1 packet fresh mushroom or 1 can.
3 big spoons butter.
3 big spoons flour.
1 cube chicken stock.
1 cup heavy cooking cream or 1/2 cup milk with 1 small pack of cream as u wish.
3 cups of water.

Heat the butter..then add the inions and a small bunch of sliced mushrooms..stirr well till tender then add flour and stirr very well until flour is well absorbed and brownish. .add the water slowly then mix all with food mixer till creamy…
Then add the cream and remaining sliced mushrooms…add salt and pepper. ..leave to boil then simmer for half an hour

As for the salad you’ll need luttuce, mushroom, capers if you like, parmesan cheese, croutons.
For the dressing :
A juice of half a lemon.
1 small teaspoon mustard.
2 big spoons mayonnaise. 2 big spoons yoghurt ( a trick so as not to use too much mayonnaise).
Salt.pepper.dried oregano…and a small cup olive oil.
A useful way to get a thick creamy dressing is to put all ingredients in a tightly closed jar and shake it very well….very easy.

Today I also made orange marmalade. …well I had too much oranges about to be ruined…thought that a jar if marmalade will be a nice gift for family and friends in this cold weather.
This is a very easy recipe I got from tv.
You boil the oranges as is in water…no peeling or cutting…for 10 minutes.
Then you discard the water and add fresh water to cover the oranges and boil for 1 hour.
Discard all water then remove top and bottom of oranges..cut in half to remove seeds then place them with peel in the food processer ..spin but don’t let them be too fine.
Measure oranges in cups..then add 1 cup of sugar to each cup of oranges.
Add a juice of a lemon to the mixture and let it boil on low heat for 1 hour or more…till syrup is thick.
Let it cool then fill it in clean jars.
Note: home made jams and marmalade must be kept in the fridge cause no preservatives are added.
