Rice in Puff Pastry . اوزي صرر

Hello again.

Well soup alone isn’t enough specially cause kids don’t favor this kind a lot. I’m usually busy Saturdays so needed something easy and quick. I already have some cooked minced meat and frozen peas and carrots, so I decided to bring puff pastry and make them with rice in bundles,, what we call “ouzi sorrar” اوزي صرر.
Well many people usually make a dough at home or use thin ready made pastries but since a while I started using puff pastry for many reasons. First easily handled, second you can cancel butter or ghee from the recipe cause they’re buttered already..plus they’re very crunchy and delicious.

Ingredients and method:
* 1 pack puff pastry.
* 1 cup cooked minced, or cubed meat or cooked boneless chicken. As you desire.
* some toasted almonds or pine nuts.
* 1 cup peas and carrots, some people use only peas. So go with whatever your family like.
* salt, pepper, all spice, cinnamon, cardamom, nutmeg,, all according to taste.
* 1 cup rice.

* saute peas and carrots with a bit of oil or butter.
* wash rice and add all spices to it.
* add rice to vegetables and mix.
* add water to cover over rice by an inch and leave on high heat till water absorbed then lower heat to minimum till rice is done.
* add the meat and mix.
* leave to cool cause if stuffed while very hot pastries will have holes.
* spread puff pastry over floured tray.
* spread each pastry to bigger squares with a roller.
* put the pastry in a deep dish.
* add some almonds and 2 big spoonfuls of rice mixture then close it to form a ball.
* bake in a medium heated oven for 30-40 minutes.
* roast the surface till golden.
* serve with salad and yoghurt.

Fava Beans with Rice (رز بالفول او ربيعيه )

Hello again.
 
Kids approved that I cook the fava beans today. Traditional spring dish cause now it’s fava beans season that’s why some people call it (ربيعيه )
. You can find them fresh and green everywhere specially on roadsides on your way to Irbid. I usually buy good amounts and freeze them to use all year long.
I made them today with rice and meat cubes,  you can do this dish with chicken or big pieces of meat as you desire.
Ingredients:
*meat cubes or chicken.
* fresh fava beans.
* salt, pepper, all spice, bay leaf, cinnamon stick, cardamom, rosemary and small inion.
* rice.
* ghee or vegetable oil.

* sautee meat cubes till brownish with some oil.
* add spices and onion.
* add enough water (4-5 cups) to cook meat till tender.
* in other pan sautee beans in oil or ghee, I added a small amount of chopped onions,  adds a nice flavor.
* when meat is done remove from water then sieve it to use later.
* add meat to beans then wash rice and add on top.
* I usually sprinkle some all spice, black peppers, cloves, cardamom and cinnamon on the washed rice. Only tiny amounts,, makes rice spicy and well flavored.
* add sieved broth on rice till it covers it by 1 inch.
* cook on high heat then when water is almost dry lower the heat till minimum.
* leave till done for 30-40 minutes.
* serve with salad or yoghurt.

Stuffed Cabbage

Hello everybody
  Today I made stuffed cabbage. .though I posted this recipe before but it was a side dish from mom, today I have clearer pictures.
This dish is very popular in all middle eastern countries plus Turkey, Greece  and many more I’m sure.
Ingredients:
* minced meat.
* rice.
* ghee and vegetable oil.
* salt, pepper, all spices, dried mint.
* cabbage,  boiled and stems removed.
* garlic as much as you like.
* lemon juice.
Method:
*  Wash the rice then add the meat. I usually cook it before a bit.
* add spices, salt, mint.
* stuff the cabbages and line them with garlic in between.
* add lemon juice, a bit of oil and enough water to cover all cabbage.  I have this heavy pottery lid I use as weight or you can put a heavy plate.
* cook for 10 minutes over high heat then lower it and cook it for another hour or till rice inside is done.

Chocolate Balls!!!!!!

Hello everybody…grocery day again,,, can’t believe how fast the week goes by…well, they say time flies when you’re having fun….frankly it’s been a fun week … (. حمدلله ).

Found fresh green beans today…though as usual one family member always objects when I cook it…ends up eating rice with tomato sauce, but it’s really a delicious healthy meal.plus very easy to make specially when using a pressure cooker….he or she who invented it is really a great man or woman….very useful and time saving.
You will need:
1/2 kg of lamb meat cut to cubes or big pieces with bones as you prefer.
1kg cut, washed green beans.
2 or 3 large ripe tomatoes.
2 cloves of garlic.
1 small onion.
2 big spoons tomato paste.
5 cups of water.
Salt.pepper. mixed spice.paprika.
1 big spoon olive oil.

In a pressure cooker or regular pan..heat the oil then add meat pieces, salt.pepper.spices. paprika, stirr well till meat is brownish and crispy.
Add the beans and keep stirring till it softens.
In a blender mix the onion, garlic, peeled tomatoes, tomato paste and water then pour it over the beans and meat..
You can add one more cup of water if the juice is too thick.then leave to boil for 30-40 minutes on low heat if in pressure cooker or for hour and half if in regular pan.. or till meat is well done.
Of course this dish is served with rice..today I made rice with small noodles (شعيريه ) I toasted it with vegetable oil and salt till golden.added the rice, mix them well together then added water till above rice by one inch.
When all water is absorbed lower the heat ,, I usually place a tin under the pan to keep heat very low and rice won’t burn, then leave till rice us done.

Vegetarian today, Mujadara :)

Today is no meat or chicken day….I made mujaddara..
..It’s a traditional middle eastern dish…made from lentils and rice or burghul.
it’s served with basic old fashion salad…which means it contains onions, tomatoes, dried mint.lemon juice.salt and a drizzle of olive oil.

Recipe for Mujaddara:
1 cup brown lentil.
1 cup rice or coarse burghul.
1 cube chicken stock.

1 or 2 large onions

Boil the lentils in water with 1 small spoon cumin powder till tender.
Wash the rice or burghul add them to the lentils, with the maggi cube, 1tsp of each,, salt, black pepper, mixed spices…and 2 large spoons olive oil.
Add water to the mixture ( almost 2 and 1/4 cup)…let it boil then lower the heat till rice is cooked.
Chopp the onions to thin slices and fry in olive oil till crispy…and serve them with the mujaddara…
This is a very nutritious dish,, a good source of protein and iron.
Some people love to eat it with yoghurt as well.
