Summery Watermelon Salad.

Hello everybody.

Back to normal life routine today, went grocery shopping and kitchen started buzzing after a three day vacation.

Since it’s extremely hot and nobody wants to eat something hot or heavy after eating in restaurants past couple of days one feels so full right?
Well end result for lunch was this amazingly cool salad which consists of watermelon cubes, cherry tomatoes, feta cheese and sprinkled with green onions, mints and lemon slices, I then added a drizzle of pomegranate sauce and olive oil. Really yummy.

I also made some pasta with white cheese and parsley and tacos. All very delicious.

Eggplant Salad with Ricotta Cheese.

Hello everybody.

Had a big dinner yesterday so I have too much food left.

A small side dish was the same eggplant salad I did once before but I added some Ricotta Cheese from the ones my cousin brought me from Rome on top, yummy yummy.

I also did fresh mushroom soup from the pack of dried ones, again yummy.

Ablama and Radish Salad.

Hello everybody.

At last weather is warm again,dinner is outdoors.

Made some courgettes in cooked yogurt today and a pizza pan cause my son doesn’t eat courgettes.

Salads were green salad and Radish Salad which is a famous northern dish done with grated radishes, parsley, lemon, salt and olive oil.

Cheese Stuffed Steaks.

Hello everybody.

My husband bought some meat yesterday preparing for Ramadan coming in couple of weeks so as to avoid crowded roads and shops as usual,anyway I kept some fresh steaks to do today.

Well as I always say my number one application to look for new recipes or ideas is Pinterest, just love this it !

Found this super easy recipe, you simply stuff then roll steaks and grill them in some oil and butter. Stuffing was minced garlic, chopped onions and parsley, some pesto sauce and a hard sharp cheese with spices and salt of course.

Happens to be that my friend did the same but stuffing was shredded veggies, looks yummy as well.

Made mashed potatoes and a salad on the side plus a sauce made of balsamic vinegar,steak sauce,a bit of Worcestershire sauce and one teaspoon butter all boiled till it thickens

Grandma’s Pasta and Tuna Salad.

Hello everybody.

Mid week light meal, we usually have one either Tuesdays or Thursdays, no meat, chicken or heavy cooked stuff.

Each one of the boys wanted something and since they’re both easy and needs minimum effort I did the two.

Old fashioned local pasta with local white cheese and parsley or as we used to call it Teita’s pasta,simple delicious one I even bought the old kind (Ghazal number 1) a must for this dish.

Other one was tuna salad, made a rich dressing containing mustard, mayonnaise, relish, chili jam, lemon juice,oil and salt then added all salad ingredients and tossed everything together, fresh and nutritious.

Eggplant Appetizer.

Hello everybody.

Got some fresh vine leaves yesterday so better to cook them immediately, hate freezing fresh stuff feels like a waste of something valuable.

So I stuffed some courgettes with them, best dish ever. Plus I made this appetizer that my Italian cousin posted yesterday.

You simply grill your sliced eggplants after salting them then add sliced tomatoes, minced garlic, chopped parsley, lemon, salt and oil on top before serving, I even added some olives turned out absolutely delicious.

Happy day with good food and best friend coming for a short visit.

Lentil Soup Fatteh.

Hello everybody.

Seems like winter is back again, weird weather this morning, rainy with heavy fog.

Well I’m sure a big percentage of Jordanians cooked lentil soup today, it’s a rain tradition i guess.

Today I’ll do it with a twist, and member in banancooking.com made this dish and while ago and it looked interesting.

You cook soup as usual but I made it a bit thicker, then you assemble it with all fatteh ingredients. Roasted bread, soup then tahini yogurt sauce and garnish it with cooked minced meat, almonds and parsley.

A big big success, very fulfilling but not heavy, mother in-law and kids loved it,waiting for hubby’s approval now.

Suborek (Turkish Borek).

Hello everybody.

Just got back from a gathering at Mom’s in  the honor of my cousin coming for vacation.

Mom made super delicious stuffed vine leaves and I made this Turkish style borek, very easy to do and extremely yummy,secret is lots of butter used for sure,everything tastes good with butter.
Ingredients and method :
* 2 packs thin phyllo pastry (رقائق الهنا)
*melted butter.
* white and yellow cheese ( I used white cheese, kashcaval and kraft).
* bunch of parsley finely chopped.
* some dry mint.

I also made spinach and feta cheese mix with black pepper and a bit of chili powder.

* grease and deep dish or pan with butter then start adding the pastry layers adding butter between all layers.
* after layering one pack add the stuffing then continue with the other pack.

Note: today I used four packs and made a big pan,half with cheese and half with spinach.

* cut into squares and tuck sides well.
* before putting in the oven beat one egg in 1- 1 1/2 cups milk and add all over.
* bake in a well heated oven for 20 minutes.
* toast surface till golden.

A super yummy dish, felt myself part of a Turkish series while doing it.

Potato Cups (بطاطا كاسات).

Hello everybody.

Still have some cabbages from yesterday but a small side dish is needed for sure cause it won’t be enough for all and because I’m going out for coffee with my friends to the Cake Shop I did this simple dish.

My mom used to make these cups too much when we were kids specially end of the week,really yummy, today they tasted exactly the same as old days, a pinch of nutmeg is the secret I guess.

Ingredients and method:

* 3-4 boiled till done potatoes.

* 2 eggs.

* small bunch chopped parsley.

* grated cheese ( white and cheddar usually)

* salt,pepper and pinch of nutmeg.

* mash potatoes with some salt,pepper then form it into cups and put them in fridge a while.

* mix eggs,cheese,parsley,salt,pepper and nutmeg.

* grease an oven pan then place potato cups and fill with mixture.

* bake in a well heated oven for 25-30 minutes.

Easy quick delicious yummy what else to say??

Eggplants with Kibbeh (Iraqi dish)

Hello everybody.

Since I have a loads of eggplants,tomatoes and peppers my husband got from the farm,had to make something with them right?

I learned this dish from my sister in-law,it’s an Iraqi recipe resembles a lot moussaka but using special kind of flat kibbeh with eggplants and tomatoes instead of usual minced meat,really good and tasty.(كبه تبسي ) the name of the dish is تبسي باذنجان.

Ingredients and method:

* flat meat stuffed kibbeh ( the ones I found today were small usually they use bigger wider ones) you can find it in most store called ( كبه تبسي)

* fried or roasted eggplant slices.

* peeled sliced tomatoes.

* sliced sweet peppers.

* sliced onions.

* chopped parsley for decoration.

* tomato and pomegranate sauce (دبس رمان)

* salt,pepper and all spices.

 

* boil kibbeh if not cooked before freezing in a some water till it softens a bit.

* add eggplants on top .

* add tomatoes,peppers and onions.

* dissolve 2 tablespoons of tomato sauce and a tsp of pomegranate sauce in 2 cups water then pour them over layers.

* season with salt and pepper.

* leave to simmer or in the oven till all done ( approximately 1 hour).

* serve alone

with rice or pitta bread.
