Hello everybody.
My cousin ordered some cookies today, thought I’d try something new or different from the usual ones I make.
After a thorough search last night I found this recipe, I guessed it’ll be a success cause all ingredients are homogeneous and goes along together, oats spices and dates are always harmonious.
Ingredients and method :
# 1 cup butter.
# 1/2 cup sugar and 1/2 brown sugar.
# 2 eggs.
# 1 tsp vanilla.
# 1 tsp cinnamon, half tsp cloves, 1/4 nutmeg and a pinch of salt.
# 2 cups flour.
# 2 1/2 cups oatmeal.
# 1 tsp baking powder.
Filling :
2 cups pitted dates.
1 cup water.
1 tablespoon butter.
# beat butter and sugar well till creamy then add eggs and vanilla.
# add spices and salt.
# add flour and baking powder then oatmeal.
# cool in fridge for 30-40 minutes.
# form into small walnut size balls then flatten them a bit.
# bake in a medium heated oven for 10-13 minutes.
# leave to cool.
# meanwhile prepare the filling by heating dates water and butter till smooth.
# assemble each two cookies with date filling and serve.
