Chicken with Lemon Olives Sauce

Hello everybody.

Hot and dusty Saturday,many errands and shopping today,I even started cooking very late!

last night I took out my cookbook to search for something new and easy to do,sometimes you feel you’re bored from all the things you cook and need a change or twist,I found this old recipe that I’ve never tried but as usual I always write down anything ย I feel will taste good,you can tell from the ingredients sometimes whether they fit together or not.

Honestly it was a success,I have my dear friend Reham as a witness,you can ask her ๐Ÿ™‚

It’s a very simple chicken with lemon sauce and olives and I made some sauteed veggies on the side,really delicious.

 

Ingredients and method:

* boneless pounded chicken breasts.

* bread crumbs and flour seasoned with salt,pepper and oregano.

* lemon slices and lemon juice.

* half cup pitted green olives.

* some butter and olive oil.

* coat chicken with mixed flour and crumbs.

*saute them in olive oil and butter on both sides till almost done.

* remove from pan,then add some more flour and butter ( about 2 tablespoons) in the same pan you sauteed the chicken,add lemon slices and juice (about half of a lemon) and the pitted olives.

*add one cup of hot water and stir well till sauce is creamy and homogeneous.

* before serving add sauce to chicken breasts and simmer for 10-15 minutes

* as for veggies I sliced them,added some olive oil,salt,pepper and left them to simmer till done.

Broad Green Beans Salad.

Hello everybody.

Grocery day again,ended up buying lots of fruits and vegetables,so fresh and tempting,couldn’t resist the red cherries and seedless grapes, don’t you just love Summer with all its colors and varieties?

I ย got some broad green beans and cherry tomatoes to make this salad that my cousin who lives in Rome posted in my Facebook group, turned out absolutely delicious,even kids loved it ๐Ÿ™‚

As for lunch it was fresh mloukhieh with chicken,really good as always,dessert was a big bowl of fruits !!

Ingredients and method:

* broad green beans cut and boiled in salted water till a tender but not overcooked.

* cherry tomato.

* lemon zest.

* sauteed garlic cloves.

* salt,pepper,lemon juice,pomegranate sauce or balsamic vinegar and olive oil.

* just mix all ingredients and toss with dressing .

very easy healthy dish.

What to cook tomorrow!!!!!

Sorry for the delay today…guess it’ll be what to cook tomorrow.
Well Saturday is usually grocery shopping day..so I usually cook fastest thing I can think of.
Today I made Mloukhieh. ( ู…ู„ูˆุฎูŠู‡ ู†ุงุนู…ู‡ ูˆูˆุฑู‚ ).
I usually make the two kinds..cause each one of my boys prefers a kind.
So I make whole mloukhieh,meaning leaves not chopped and loose or finely chopped kind.
I was in such a hurry so as to save time,I used :

Two large boneless chicken breasts,cut them into squares .

  • In a heated skillet,ย  put the chicken cubes, add a bit olive oil.salt, pepper, all spice, dry coriander.
  • Stir well till chicken is brownish.
  • ย add a small finely copped onion 4 or 5 chopped garlic cloves and stir all till tender.
  • I split the chicken into two portions,first one added coarse leaves (ย ย ย ย  ู…ู„ูˆุฎูŠู‡ ุฎุดู†ู‡ )and the other chopped fine leaves (ู…ู„ูˆุฎูŠู‡ ู†ุงุนู…ู‡ ).
  • add 2 cups chicken stock to the fine leaves plus lemon juice and 1 spoon white vinegar and 1 cup also to the coarse leaves plus lemon juice.
  • Leave on low heat to simmer for half an hour.
  • Serve with rice,fried bread cubes in the case of fine leaves and eat it with bread in the case coarse leaves.
  • Definitely a side dish of pickles,olives,green onions and bell peppers will be delicious with this dish.
