Full Day.

Hello everybody.

Full eventful day, orders and lunch. Mom and my nephews came by as well, we all had a nice cup of tea with some hot from the oven suborek, filled with cheese. So yummy,we even felt we’re in a Turkish series.

Family Flavours January Issue.

Broockies.

Hello everybody.
Tried a new recipe today, loved its name “Broockies ” meaning it’s a mix of both brownies and chocolate chip cookies.

Recipe needed some adjustments specially the chocolates chip dough, it was so soft and flattened when baked, good thing I did one as test first.

End result was really good after adding more flour, I may decrease butter amount next time.

Ingredients and method :
Brownies dough :

  • 10 tablespoons butter.
  • 1/2 cup brown sugar.
  • 2/3 cup sugar.
  • 1 egg and one egg yolk.
  • 1 tsp vanilla.
  • 1 1/4 cups flour.
  • 1/2 cup cocoa.
  • 1 tsp baking powder.
  • beat butter  and sugar till creamy then add other ingredients till you get a stiff dough.

Chocolate chip cookie dough.

  • 10 tablespoons butter.
  • 1 cup sugar.
  • 1 large egg plus one yolk.
  • 1 tsp vanilla.
  • 2 1/2 cups flour.
  • 1 tsp baking powder.
  • 1 cup chocolate chips.
  • Beat sugar and butter till creamy then add whisked eggs and other dry ingredients.

Make a small ball of each dough then press them gently together to form a cookie shape then line on baking sheet or parchment paper.

Bake in  a medium heated oven for 8-10 minutes.

leave to cool then store in a well closed jar.

Swedish Meatballs And Jam Pie.

Hello everybody.

Cold rainy snowy day, started it  cooking Swedish meatballs “Ikea style ” both for an order and home for lunch, did some mashed potatoes on the side.

I also did jam pie, used marmalade this time, smell is devine.

Now that snow is accumulated and we’re stuck, time to make a hot drink right?

Good evening everybody.

Happy new year to all people around the world celebrating, a whole awesome eventful year ended today with all it’s joy and sorrow, happiness and pain.Hoping next year will be of full good times, hard work and creative food.

Dinner today was steaks with veggies, quick easy meal specially that meat is fresh and tender, just bought it from my favorite store Centro.

Baking Cooking Day.

Hello everybody.

A full busy day, started by the first order for a special young man “ chicken tikka masala ” with Indian rice. This was done and delivered by noon.

Then I baked two lovely Daisies chocolate cakes for a very dear friend, amazing and elegant as always.

When done I made lunch,ready prepared breaded chicken wings and chili potatoes.

Long busy day but all worth it for sure.

 

 

 

 

Cold Weather Food.

Hello everybody.

Gloomy cold rainy day, lentil soup is the best thing to do in these conditions.

Za’tar puffs are the order today along with another Daisies chocolate cake, though puffs contained cheese but I doubled it by stuffing rest of the dough with another kind for the boys.

Lunch today was our favorite, homemade pizza, never bored from it.

Cream Chicken Corn Soup.

Hello everybody.

Had two orders  today, citrus almonds syrup cake and crinkles both ginger and chocolate.
As for lunch I have some green beans from yesterday and I made some chicken corn cream soup, great in this cold weather.

ِAlready  have some cooked chicken nobody touched from the one cooked in milk so I used them in the soup.

Ingredients and method :
# one spring onion.
# 1 cup sweet corn.
# 1 big cooked chicken breast.
# 2 tablespoons butter.
# 2 tablespoons flour.
#3 cups chicken stock.
# 1 cup cream or full fat milk.
# salt, pepper, all spice and a pinch of nutmeg.

# saute chopped spring onions in heated butter.
# add half of the corn.
# chop chicken breast to small cubes and add half of them as well.
# add flour and chicken stock,stir well and leave to simmer till corn is done and tender.
# whisk all with hand mixer till creamy.
# add cream or milk and rest of corn and chicken.
# leave all to simmer till thick and done.

Chicken in Milk ( Jamie Oliver recipe)

Hello everybody.

This recipe always pops in front of me either on TV or online and I’ve been eager to make it cause of many reasons, first of all is that Jamie Oliver is one of my favorite chefs, love his way of cooking,you can feel how much he loves his work,very energetic and creative, second reason is I always felt this recipe is different and must be delicious cause of rich aromatic ingredients.

Ingredients and method :

* one whole chicken.
* 1 stick cinnamon.
* handful of fresh sage ( I used rosemary and oregano instead)
* zest of two lemons.
* 10 cloves garlic, skin on.
* sea salt, fresh ground pepper.
* one liter milk.

* Preheat oven to medium.
* in a deep pan that’ll fit the whole chicken heat some olive oil then season it well and fry it from all sides till golden.
* remove chicken and throw away oil left in pan.

* put it back and add all ingredients.
* cover and cook in the oven for 1 1/2 hours, uncover in last half hour.

Lemon zest will split the milk making a delicious sauce with curd.

Serve with potatoes or rice,today I made Iranian rice.

 

 

 

 

 

 

Beautiful Chocolate Cake.

Hello everybody.

Today’s order was various, date cookies, ginger crinkles, sable and a chocolate cake.

Well the cake was the usual one I always do but I kind of decorated it differently, inside and cover were ganache with some crunch and hazelnuts.As for the top I used button white and dark chocolate with other shapes to make flowers. Not exactly same as original one I saw but close enough.

I also made a chicken pie, really good I even made another one for lunch.

Tomorrow I’ll start working on Christmas orders.
