Custard on Cake Crumble.

Hello everybody.

Woke up to a rainy cold day, I really don’t like this weather specially if I have to go out, anyway a breakfast gathering was already fixed from last week at a coffee shop ” Commodo “, to be honest food was good but service was awful, hate it when food comes before tea and hot plates before cold, anyway I don’t think I’ll be going again 🙂
Lunch today was cauliflower with rice and salad suitable dish in this weather.Dessert was recycled chocolate cake leftovers crumbled with its sauce then I made simple custard and topped crumbles with it, nice dessert with coffee after the afternoon nap.

Pizza Bites.

Hello everybody.

Sometimes when you do something in hurry it turns out really good but that’s not the case today.

Since I do have some okra from yesterday I needed to do something to go with it,so I decided to make carrot soup and another batch of separable garlic bread cause they were gone in minutes the other time and tried to do the rest of dough as pizza bites, same idea as garlic ones but instead you add pizza sauce ( tomato, pesto,oregano,garlic powder)  in between balls and cover with cheese but cause it was a last minute decision and I didn’t have much time in baked them while still not risen well and results weren’t as good as the first time.
That’s a lesson well learned 🙂

Seperable Garlic Bread and Steak Sandwiches.

Hello everybody.

Recycling yesterday’s steaks today, I shredded the leftovers and sauteed them with onions and green peppers  added some spices and a bit of water.

I baked the sandwiches bread at home, bakery style braided with sesame seeds on top.

kept some of the dough and formed them to balls then coated each one with a mixture of butter, oil,parmesan, oregano then put them all in a loaf pan and left them to rise well before baking, they’ll be like a salty monkey bread, really yummy.

Ingredients and method for bread ( as seen on Roya TV done by Domain Hijjawi for burgers)

* 3 cups flour.
* 50 gr butter or two big spoons.
* 1 tsp salt.
* 1 egg

* Mix all these well then add :
* 1 cup warm milk.
* 1 big spoon instant yeast.
* 1 tablespoon sugar
* all mixed till frothy then added to flour.

* knead all together very well then leave in a warm place till it rises.
* form to any shape you like, buns,braids or big loaf.

Stuffed Vine Leaves and Nutella Cinnamon Rolls.

Hello everybody.

Well all locked up waiting foe the storm, though it was sunny this morning but as expected snow started this afternoon, I’m sure many will turn to the kitchen to make sweets and hot drinks to warm up.

Lunch today was stuffed vine leaves and courgettes,a favorite to most people here in Jordan specially when leaves are fresh green, though not the season but I did find some really good silky ones that’s why I was encouraged.Thank you dear cousin for coming by to help me,this dish needs a helping hand cause it’s a bit tiring and boring to make it on your own.

Dessert was Nutella cinnamon rolls,recipe from www.littlesunnykitchen.com. the blogger posted this recipe on my page last week, they’re really soft and taste is divine. I made half with Nutella and the other with pecan cinnamon mixture, all yummy. Thank you dear Diana for the awesome recipe.

Kebab with Tomatoes ( كباب هندي)

Hello everybody.

Had to go  to Irbid this morning so I needed to cook something quick, after giving the boys two options kofta or spinach they agreed on the first, I even cooked the onions and tomatoes last night to save time.

Early this morning I added ketchup, mustard and  to kofta, made them finger shaped,sautéed them in some oil then added them the the sauce, I even cooked the rice in case I was caught up in time which is exactly what happened.

Ingredients and method:

* kofta meat ( ready from butcher)
* onions.
* garlic.
* tomatoes.
* green peppers.
* 1 can chopped tomatoes
* 1 spoon ketchup and mustard.

* mix kofta with ketchup and mustard.
* form it to small kebabs finger shaped.
* coat them with flour then keep in fridge for a while.
* heat some olive add the kebabs till brownish from all sides.
* add chopped onions, garlic, peppers sautee with meat till tender.
* add 2 peeled chopped  tomatoes and the can.
* leave to simmer for 30-40 minutes. Or you can put it the oven if you like.
* serve with rice.

Reef Pizza.

Hello everybody.

No intention to time to cook today so best solution was Pizza,to tell you the truth before this blog thing we used to bring pizza every other weekend sometimes. Just realized today that it’s been really a long time since we ordered food.

We usually order from this same pizza place,same taste and quality since it opened many years ago. Al-Reef pizzeria, thin crust on wood with many kinds and toppings to your liking.

How to Make Hummus?

Hello everybody.

Being locked in this snow storm made many people creative or let me say willing to try  stuff that are usually bought ready like hummus and falafel.

Hummus is high in iron and Vitamin C plus folate and  Vit B6 and a good source of dietry fibers,it’s very useful in vegetarian diets to compensate protein.

It’s not that difficult to make them from sctratch,I know many folks specially living abroad who always do, but in countries like us,the easiest cheapest meal is always a hummus plate with falafel or hummus fatteh, no need for all the fuss in the kitchen.

My cousin living in Greece made a a delicious hummus last week so I thought to share the recipe with you.

Ingredients and method:

* 2 cups of soaked ( a night before) boiled till done chickpeas.

* 1 big spoonful tahini saice.

* 2 big spoons full cream yogurt.

* 1-2 cloves garlic.

* lemon juice,salt .

* some olive oil.

* Mix all ingredients together in food processor till smooth and creamy.

*add a bit of chickpeas boiling water to make thickness as you desire.

* decorate with chickpeas,chili powder or parsley.

To make Humus Fatteh which is a Levant dish done mainly in Syria,Lebanon,Palestine and Jordan.you’ll need:

*  pitta  bread cubes or if you like use french bread (خبز حمام)

* make the same hummus mix but add more water and yogurt to make a loose sauce.

* before serving soak bread with chickpeas and water.

* add the hummus sauce.

* decorate with toasted almonds,pine nuts,chili powder and parsley ( didn’t have parsley today )

* serve hot for breakfast or appetizer .

Homemade Msakhan Bread! (مسخن)

Hello everybody.

Due to weather conditions it’ll be risky to go out and stuck in snow and since the plan was to make msakhan today

so I decided to bake the bread at home,after searching many websites to find a way of baking it in a regular oven I found this good one,very easy and outcome was superb !!

 

Msakhan is an old traditional dish made from chicken,onions,plenty of summaq and olive oil all placed on special kind of bread with nuts on top.

ingredients and method of bread:

Note : this quantity makes 4-5 bread pieces.

* 2 cups flour.

* 1 tsp salt.

* 1/2 cup warm milk.

* 1 1/2 spoons instant yeast.

* 1 tsp sugar.

* 1 cup warm water.

 

* Mix water,yeast and sugar and cover till bubbles are formed.

* add to flour milk and salt.

* knead well by hands for 10 minutes.

* cover and leave to rest and rise in a warm place for 1 hour.

* divide to 4-5 balls.

* roll or spread them into bread shape.

* heat the oven very well with a big oven tray in it.

* when well heated turn on the upper flame .

* place the breads on the tray and bake till surface is golden,bottoms will be done cause tray is already very hot.

* do all breads the same way,make sure the pan is always very hot before each batch.

 

You can do these not only for msakhan,actually boys ate some as is before lunch. Fresh bread is the best food ever 🙂

Thyme Tomatoes and Green Onions Pastries.

Hello everybody.

Mom and my lovely niece visited me this morning, great timing cause I was about to begin making some pastries so a helping hand was a blessing.

I made three kinds of fillings, cheese,green fresh thyme with onions,tomatoes,sun dried tomatoes and olive oil plus some stripped green onions that I always make like swirls . really yummy and great with labaneh dip .

While we were working my niece made a small strawberry cake and decorated it, it came out a beautiful all over pinkish lively cake,her favorite color of course.

 

Well, hope all is ready for the snow coming tomorrow,I went grocery shopping today and people were crazy buying piles of stuff, hope we won’t be stuck for a long time like last year, fingers crossed !!!!!

Mshabbak (مشبك بمناسبه عيد المولد النبوي الشريف).

Hello everybody.

Today marks the Birth  of Prophet Mohammad ( صلى الله عليه وسلم) on this occasion almost all sweet shops sell this kind of dessert called “Mshabbak” ,I looked through different recipes last night and decided to do it at home ,cause the ones you buy though maybe crunchy and better looking but they’re too sweet , heartburn often starts after the first bite.

Recipe is simple but process is a bit difficult, first one is usually a mess .

Mshabbak recipe:

* 1  1/2 cups flour.

* 1 cup starch.

* 1 big tablespoon instant yeast.

* 1 tablespoon sugar.

* pinch of salt.

* 2 cups warm water.

* some red food coloring.

* sugar syrup.

* oil for frying.

 

* Mix flour,starch,yeast,sugar,salt and warm water very well till no clogs are formed.

* leave covered in a warm place to rise for 45-50 minutes.

* heat the oil then drop the dough in circle or strips form using the cream decorating device.

*Remove when golden from both sides then dip half of it in red food coloring dissolved in some water.

* dip them right away in sugar syrup.

 

It might be a difficult messy process but outcome is super delicious,of course I sent dishes to neighbors,mom and mother in-law  to lesson the crime as usual.
