Hello everybody.
My hubby started planting some veggies in the farm in a small scale for household use.
First crop started yesterday, a big box of fresh courgettes, separated big ones for sautéed use, mediums stuffed today and cooked in tomato sauce and small ones to stuff with meat for ablama, I’ll prepare and freeze them for Ramadan, a rescue in a busy or tiresome day.

It’s Summer time, fruits of various kinds and colors are abundant everywhere, this morning I got some fresh from the farm peaches on my way back from the lovely town Fuheis where we had a nice breakfast.
Back home I decided to try this dessert, kind of my own invention, small cups of no bake cheesecake with fruits on top,so yummy and light great in this hot weather.
Ingredients and method :
# crust :
# 1/2 pack of plain biscuits.
# 2 tablespoons oats.
#2 tablespoons coconut.
# 1 big tablespoon butter.
# 1 tsp jam.
Mix all these together till crumbly.
# cheese layer :
# 1 pack cream cheese.
# 1 pack cream ( قشطه)
# 1/2 cup caster sugar.
# 1 tablespoon butter.
# 2 tablespoons labaneh.
Mix all ingredients together till creamy.
# put some crust in small bowls or cups.
# add cheese filling.
# top with any fruits you like.
# keep in fridge for couple of hours then serve.
Oh and lunch was regular kofta with vegetables and a big salad.

Today we had a lunch gathering at my mother in-law’s friend house,each one cooked something and we took the food to her house cause she’s in mourning.
Well I did my famous rice, veggies and chicken with curry.
My mother in-law did a roasted leg of lamb with potatoes and steamed veggies.
My sister in-law did the Iraqi dish eggplant with kibbeh.

Was planning to cook green beans today but all plans changed cause I went grocery shopping at this new supermarket and bought some fresh ka3ek and baked eggs and some cold cuts and cheeses so I decided to fix a quick brunch,good desicion cause boys slept late anyway so it was kind of a breakfast lunch meal.
Centro is a new centrally located supermarket in the middle of Madina Munawara strt. Very clean and tidy,various kinds of goodies specially some Italian brands of pastas olive oil and delicacies,fresh fruit and vegetables, freshly baked breads, excellent butcher…etc.
Very highly recommended, prices are good also, they do have lots of offers.

As you may have noticed no post was published yesterday, well reason is that it was my son’s graduation ceremony and dinner party.
Ceremony was in school, very elegant and full of emotions then it was followed by a big dinner party at the Intercontinental Hotel Amman, all party details were organized by the most elegant and professional lady owner of Shahin & Shahin event planner and all decorations were from the shop Shahin flowers and balloons, all was perfect to the smallest details.A big salute and thank to all the team members who made our night a memorable one.
We also ordered cupcakes from Mammy’s cake decorated with a graduate hat and diploma, thank you Lina for a job well done.

Hello everybody.
Unfortunately not a bite from yesterday is left so I had to cook something today specially that my son has finals and wanted to eat quickly and go out to study.
So after searching for what to do I grabbed a pack of pasta and quickly made white sauce and some meat tomato sauce then fixed a big pan of bachemel pasta for today and tomorrow as well.
When done I made a lovely cherry cake upon my husband’s request, it’s been a while since I baked something, love this one it’s amazing with tea and coffee.

My husband bought some meat yesterday preparing for Ramadan coming in couple of weeks so as to avoid crowded roads and shops as usual,anyway I kept some fresh steaks to do today.
Well as I always say my number one application to look for new recipes or ideas is Pinterest, just love this it !
Found this super easy recipe, you simply stuff then roll steaks and grill them in some oil and butter. Stuffing was minced garlic, chopped onions and parsley, some pesto sauce and a hard sharp cheese with spices and salt of course.
Happens to be that my friend did the same but stuffing was shredded veggies, looks yummy as well.
Made mashed potatoes and a salad on the side plus a sauce made of balsamic vinegar,steak sauce,a bit of Worcestershire sauce and one teaspoon butter all boiled till it thickens

After a busy morning preparing the final touches for my son’s graduation party I went home with the intention of not cooking anything.
Well my plan didn’t work cause yesterday’s leftovers were not enough so I made a mix of potatoes,cheese, egg and flour with a bit of parsley and baked a delicious frittata, see cooking isn’t hard when you think a bit

Went back home in a hurry, made some burgers, my son in order to give it a twist topped it with a sunny side up egg, full satisfying sandwich.
Found some old berries and strawberries so I did them same way as raseberry lemonade and result was a really fresh tasty Vimto imitation drink, I know many people consider Vimto a must in Ramadan well this juice is much healthier of course.
