Shushbarak in Tomato Sauce.

Hello everybody.

How are you all doing in this heat?  Guess hot fatty dishes aren’t desirable in this weather though many made mansaf or maqloubeh nevertheless.

Well a last minute decision cause all woke up late was this long time no cook dish. Shushbarak with tomatoes, I added mushrooms black olives, pesto, oregano and a bit of feta cheese over ready made shushbarak pieces then all topped with mozzarella.

Yummy cool and fulfilling, fake ravioli my kids call it.

Gazpacho (cold soup)

Hello everybody.

Seems today’s the hottest this season though we can finally feel it’s Summer at last, thank God it cools at night.

A great lunch time option in this weather is gazpacho, a traditional Spanish cold vegetable soup, first time I do it, really nice and cooling plus very easy to make I even added spring onions and it did add a nice flavor.

I also did some eggplant dip or mtabbal and some fresh guava grapes bananas lemon smoothie,all very refreshing.

Ingredients and method of gazpacho :
# 3-4 big peeled coarsely chopped tomatoes.
# 1 cucumber.
# 1 clove garlic.
# one small onion (I added a small spring onion also)
# 1 small red sweet pepper.
# 1 tablespoon lemon juice.
# 2 cups tomato juice.
# salt, pepper, chili powder.

# chopped parsley, tomatoes and cucumbers to garnish.

# mix all ingredients in a blender very well.
# chill in fridge for 3-4 hours then garnish with parsley, tomatoes, cucumbers and crushed black pepper upon serving.

I personally loved this dish, hope you try it and give me your opinion.

Happy Birthday Lovely Whard

Hello everybody.

Yesterday was the birthday of the loveliest young girl ever, my best friend’s youngest daughter. Can’t believe how years flew this fast, the small cute baby is turning into a beautiful elegant artistic young lady. Love you dear  wish you all the happiness in the world.

Since we’re all going to my friend’s farm I made her a colorful chocolate cake, hope she’ll like it.

Summery Watermelon Salad.

Hello everybody.

Back to normal life routine today, went grocery shopping and kitchen started buzzing after a three day vacation.

Since it’s extremely hot and nobody wants to eat something hot or heavy after eating in restaurants past couple of days one feels so full right?
Well end result for lunch was this amazingly cool salad which consists of watermelon cubes, cherry tomatoes, feta cheese and sprinkled with green onions, mints and lemon slices, I then added a drizzle of pomegranate sauce and olive oil. Really yummy.

I also made some pasta with white cheese and parsley and tacos. All very delicious.

Cheese Za’tar Cookies. كعك بالجبنه والزعتر

Hello everybody.

An idea just crossed my mind and I did it at once,salty cheesy cookies to serve at Eid cause lots of people will come fed up from eating too much sweets and they turned out really yummy.

# 2 eggs.
# 3/4 cup butter.
# 1/4 cup olive oil.
# 3/4 cup chopped green thyme زعتر اخضر طازج
# 1 cup mixed cheeses any kind you prefer.
# 1 tsp salt.
#1 tsp baking powder.
# 2 1/2 -3 cups flour.

# beat eggs then add all other ingredients.
# add flour last thing 2 1/2 cups first then keep adding till you get a stiff dough ( not soft nor hard) .
# with the help of two spoons make smalls portions of the dough and on an oven pan directly, no greasing or flour needed.
# bake in a medium heated oven for 15 minutes or till bottom is golden.
# roast surface then store in a well closed container when cooled.

As usual I also did rock cookies, a must of course.

Fried Veggies Salad.

Hello everybody.

My husband cooked today for a change, his favorites sheep pluck and fried tomatoes.

For those who doesn’t eat it ( only me)  I did a salad rich and fulfilling. Normal salad with cubed fried veggies like eggplants, courgettes, potatoes and cauliflowers with tahini sauce on top.

Baclava Cheesecake.بقلاوة تشيزكيك

Hello again.

A member in banancooking posted this dessert last night and directly I thought why not do it today since I have a family gathering.

 

Very easy specially if you have all ingredients.

 

Ingredients and method:

* crushed biscuits with butter for the crust.

* filling:

* 3 packs cream cheese.

* 4 eggs.

* 3/4 cup sugar.

* 1/2 cup milk.

* 1/2 cup flour.

* 1/3 cup labaneh.

* 1 tsp vanilla.

Topping:

* 1 cup crushed walnuts and almonds.

* syrup: 1 1/2 cups sugar,1 cup honey,1 cup water,1 tsp cinnamon all boiled together till thick.

* 4 sheets phyllo pastry and butter.

* Make crust as usual then put in in cheesecake pan.

* Mix filling ingredients all together for 7 minutes.

* add over crust then mix nuts with half the syrup and add it as gallops on the filling.

* cover with phyllo pastry coated with butter and some of the nuts mixture if you like.

* bake in a medium heated oven for &0 minutes in a water bath pan.

* cool in fridge and serve with rest of the syrup.

 

طبقة البسكوت المعتادة ( زبدة و بسكوت)
ال syrup كاسة و نص سكر، كاسة عسل، كاسة مي، معلقة قرفة صغيرة مليانة ( بتنعمل عالنار لتعقد شوي)
الحشوة: كوب جوز و لوز مطحون مع نص كاسة من السيرب

التشيز كيك: ٣ علب فيلادلفيا، ٤ بيض، تلت ارباع كاسة سكر، نص كاسة حليب، نص كاسة طحين، تلت كاسة لبنة، معلقة صغيرة فانيلا. كل خاي المكونات مع بعض عالخلاط يدون ترتيب معين لسبع دقايق يتندار فوق طبقة البسكوت و بعدين بنحط من حشوة الجوز معالق صغيرة مفرقة عخليط الجبنة.
بعدين طبقة عجينة بقلاوة و تدهن زبدة و تكرر ٤ طبقات، بعدين طبقة جوز اختياري بعدين طبقة عجينة و تدهن زبدة.
تحبز بحمام مي عحرارة ١٥٠-١٧٠ طبقة وسط يالفرن ٧٠ دقيقة

Last Ramadan Gathering.

Hello everybody.

Today was the last big event in Ramadan,I invited my family to dinner.

I made Fish with rice ( sayyadieh) ,shrimps with garlic tomato coriander sauce, akoob with meat, chicken with veggies and noodles,caprice salad,baba ghanouj and a salad.

Roast Beef with Mushroom Sauce.

Hello everybody.

Got a nice neat roast beef from Centro Supermarket yesterday and did it for dinner with mushroom sauce to go with it.

Alongside was mashed potatoes,couscous salad and fava beans fatteh.

Did Italian couscous salad and hummus.

Crispy Caramel Bites.

Hello everybody.
Another dessert done yesterday was this super easy recipe I’ve learned from a friend couple of years ago.

You know the typical ready samboosek dough?  Well you only have to cut it lengthwise fold it like a butterfly then stick it with some water. Deep fry then sprinkle with cinnamon and icing sugar.

Served with caramel sauce which is caramelized sugar with some water and heavy cream all whisked well together.

Very easy and delicious dish.
