Samoa Bundt Cake ( caramel Coconut)

Hello everybody.

Visited a dear friend this morning who had a big gathering and I did promise her to bring her something sweet so my search came across this elegant sort of easy cake that I decided to make right away.I love coconuts and caramel so guess combined will be awesome.

 

Don’t know from where this cake got its name,tried to look for the origin but didn’t find a clue.This cake is like a marble cake but with caramel and chocolate instead of vanilla.

Ingredients and method:

  • For the caramel batter:
  • 3/4 cup butter.
  • 1 cup dark brown sugar.
  • 2 eggs.
  • 1 cup flour.
  • 1 tsp baking powder.
  • 1/8 tsp baking soda.
  • 1/4 tsp salt.
  • 1/2 cup milk.
  • Beat all ingredients consequently and keep aside,

 

  • For the chocolate batter:
  • 1 cup sugar.
  • 1/4 cup oil.
  • 1 egg.
  • 1 tsp vanilla.
  • 1/2 cup milk.
  • 3/4 cup cocoa.
  • 1 tsp baking powder.
  • 1 cup flour.
  • 1/2 cup boiling water.

Beat all ingredients consequently till smooth.

In a bundt greased cake pan pour a small amount of chocolate batter then a small amount of the caramel and continue till all done.

Bake in a moderate heated oven for 40-45 minutes or till done.

cool then decorate with the following:

  • 1 can sweetened condensed milk.
  • 1 tablespoon butter.
  • 1 tsp vanilla.
  • 1 pack cream.
  • 1/2 cup toasted coconuts.

In a pressure cooker cook the closed can of milk for 30 minutes ,cool and open carefully then mix with other ingredients.

decorate cake with this frosting then sprinkle roasted coconuts and chocolate on top.

Note: you can cook the milk in a regular pan but it’ll take more time of course.

Veal Escalope And Veggies.

Hello everybody.

Have you noticed that restaurants these days are becoming increasingly expensive?

Well after a simple overrated lunch last Friday in Jerash I decided to compensate this week, since it’s only me and hubby are home for lunch I did these two lovely restaurant style dishes.Delicious,clean, elegant and with minimum cost.

Veal escalopes,baked potatoes with sour cream, grilled peppers and broccoli with lemon garlic sauce and a dish of baba ghanouj for each.

Pickled Stuffed Peppers.

Hello everybody.

Though I felt like I’m an old lady doing these cause they’re related to my late grandmas in some kind of way, these pickles were a must in every household long time ago, done usually this time of year when tomatoes and peppers are abundant to be preserved for winter time.

It’s a very easy procedure specially if you’re not making massive amounts like old times, I clearly remember large glass preserving pots all set up to be kept inside cupboards along with makdous and olives.

You simply cut pepper stems and remove seeds as much as you can then stuff them with hard chopped tomatoes, minced garlic and dry mint. Close and arrange in a pot then add brine which is a big tablespoon of salt to each cup of water. Then add one tablespoon of vinegar and one chili pepper if you like.

I added some olive oil on top to prevent fermentation .

Close and leave for 3-4  weeks till it’s done,you can serve it with labaneh or cheese as you wish.

Bread in a Pan.

Hello everybody.

Have some dear friends coming over this evening and upon their request I did some light dishes cause they’re on diet and frankly so do I at least trying to cut down meals and sweets,a decision I try to comply to every September.

So I did a cheese platter, Caprese salad with some watermelon,labaneh with walnuts and some veggies.

A healthy bread loaf to go to with all this was in my mind since morning so after some research I found this healthy easy one that you bake in a deep pan.

Ingredients and method :
# 5 cups whole-wheat flour or a mix of two kinds.
# 1 tablespoon yeast.
# 1 tablespoon sugar.
# 2-3 cups warm water.

* Mix 2 cups of the flour with all the ingredients and cover till it’s bubbly.

Then add the remaining flour with
# sun-dried tomatoes.
# fresh oregano.
# pitted olives.
# any kinds of seeds you like.

Mix all very well with a wooden spoon and cover till it doubles in size.

# heat the oven with a deep metal pan in it till both are very hot.
# sprinkle some flour or semolina in the pan and add dough quickly.
# bake covered for 40 minutes then uncovered for 15 to get a crunchy crust.

Leave to cool then cut to slices.

Spinach Meatloaf and Roasted Potatoes.

Hello everybody.

Only me and my son are home for lunch today so it’ll be a favorite of his choice  ‘Meatloaf’

 

Easiest quickest thing to do, added some spinach,breadcrumbs,one egg,mustard,ketchup,salt,pepper and a pinch of nutmeg all to 1/2 a kilo of minced veal.Mixed all well then shaped them into a loaf and in the oven for 30 minutes that’s it.

Alongside I baked some wedged potatoes with skin, added salt,pepper,chili and some breadcrumbs also.All done and eaten with an hour!

Chicken Curry.

Hello everybody.

What a relief when your kids ask for a specific dish, wow big burden is off your shoulders.

My son requested chicken curry for his friends last night so I made a big pan to take over for them, I just feel so happy to feed a bunch of boys whose parents are away.
Well mission done and all packed to go with some chocolate pudding from yesterday as well.

ingredients and method:
* 1 cubed boneless chicken.
* cubed carrots, potatoes, chopped peppers and sliced mushrooms.
* 1 chopped onion and 2 cloves garlic.
* 1 tablespoon cornflour dissolved in 1 cup of milk OR coconut milk.

* chicken broth or water with 1 cube maggi ( 5-6 cups).
* salt, pepper, all spice and 2 big spoons curry powder.

* marinate chicken in some of spices and curry for 1/2 hour.
* heat some oil and saute chicken till tender.
* add onions and garlic.
* add potatoes, carrots and peas, mix all till a bit done.
* add rest of spices.
* add peppers and mushrooms.
* add milk and cornflour.
* add broth or water, boil and simmer for 40-50 minutes.
* serve with plain white rice.

Chocolate Coffee Pudding.

Hello everybody.

Saw this interesting recipe from Deema Hajjawi’s Instagram account thought I’d try it since I have fresh milk.

Taste is good like a chocolate mousse in a way,recipe is easy but I used fresh milk instead of powder.

Ingredients and method :
* 4 cups milk.
* 3-4 tablespoons starch.
* 1 cup chocolate chips.
* 2 packs creme caramel powder.
* 1 pack cream.
* 1 tablespoon Nescafe.
* Digestive biscuits.

# heat milk ( only 3 cups) till warm then add chocolate till it melts.
# dissolve the remaining cup of milk with the starch.
# add the cream caramel, cream and milk with starch to the milk chocolate mixture.
# add Nescafe.
# mix all well together over low heat till it’s thick.
# pour in small silicone cups or glass cups.
# cool in fridge for several hours.
# upon serving turn it on a digestive biscuit and serve decorated with chocolate syrup or nuts.

Preserved Grape Dessert (خبيصه عنب)

Hello everybody.

Did you ever thought of what to do with all the grapes that ripene all at once on your vine tree?  Well of course you can make juice, raisins, vinegar or simply give aways to family and friends.

A very very old way that our late grandmas used to preserve excessive amounts of grapes is making this kind of dessert that can be kept without any damage throughout Winter season, nice energetic dessert.

In Arabic it’s called “Khabissa “خبيصه. It’s done a lot till now in Jordan specially in Northern Villages were they grow very good grapes all over.

In Greece and Cyprus they do something similar called Soujouka, usually done with nuts wrapped in grape juice or pomegranate or kharoub.Thought to try doing some today but found it a bit difficult so I’ll stick to old Jordanian way this time.

Ingredients and method :
# 10 cups of sieved fresh grape juice.
# 1 cup fine semolina.
# 1 cup sugar.
# 2 1/2 tablespoons anise powder.
# 2 tablespoons Areesh seeds ( don’t know what’s the English name for it, it’s a kind of seed)
# 1 tablespoon sesame seeds.
# 1 tablespoon black seeds.
# 2 tablespoons crushed almonds.

# mix all ingredients well together and bring to a boil till it thickens.
# pour and spread mixture in a wide pan over a clean thin cloth.
# leave in the sun for 3-5 days till it’s really dry.
# cover with any kind of cloth or tool to keep away bugs and dust.
# cut to squares and keep in a well closed jar.

Note: you can make this like very thin sheets and roll them when dried or as cubes depending on your liking.

Steak Sandwiches, Potato Chips and Crunchy Eggplants.

 

Hello everybody.

Today is meat turn,I always try to make variations during the week between poultry, meat, veggies and no protein day. Unfortunately we’re not a  fish loving family so I rarely cook it if you noticed.

Lunch today was steak sandwiches, homemade chips crunchy baked eggplants and sun-dried tomatoes, grilled halloum salad with roasted pine nuts.

Trick in homemade chips to be a lot like ready ones is soaking potato in iced cold water for 30 minutes then drying it completely before frying in very hot oil.

Crunchy baked eggplants are simply sliced, soaked in egg and milk wash then dipped in breadcrumbs and baked in some olive oil, that’s it.

Lovely big salad with sun-dried tomatoes,grilled halloum and pine nuts over a bed of greens and avocados with simple vinaigrette.
