Old and New Vegetarian Dishes.

Hello everybody.

Today is no meat or chicken day, a break is in need sometimes.

One dish was a new recipe, steamed broccoli flowers with garlic tahini sauce on top and a sprinkle of summaq,though all said sauteed is much nicer but it’s not bad, healthy and light.

The other was my favorite “Chili Potatoes” my kind of dish,hot with some lemon juice, great with the stuffed pickled peppers .

Ingredients and method of chili potatoes.

  • 3-4 large potatoes peeled and cut to medium sized cubes.
  • 2 cloves garlic minced.
  • 1 bunch of fresh coriander.
  • salt,pepper,paprika,chili powder.

* deep fry the potatoes till golden.

* when still hot season with salt,pepper,paprika and chili.

  • saute garlic in some olive oil till golden then add potatoes and mix all well.
  • leave on to cook together over very low heat for 10 minutes.
  • add fresh chopped coriander just before serving.

Baked Feta Cheese.

Hello everybody.

Alone for lunch today so I was looking for something light and quick to do,though hate eating alone but well one have to sometimes.

Found a pack of feta cheese in my fridge so I directly decided to this super easy appetizer that we always eat in our favorite restaurant in Limassol /Meze Tavern in old town. Of course it’s served alongside a wide selection of meze but today only with some rocca salad and crisp toasted bread.

Though the one they make stays more firm cause it’s originally this way so it stays the same after baking,mine was a bit crumbly but yummy nevertheless.

You simply coat the feta in foil paper then drizzle with olive oil and add oregano,tomatoes,olives and herbs. bake for 10-15 minutes and that’s it.

Chicken Liver.

Hello everybody.

Leftovers aren’t enough today so I had to do something as a backup. Option was chicken Ceazar salad but it turns out I don’t have any chicken left so a plain one was done.

Found a small plate if chicken liver in my freezer,healthy easy option as well though as my hubby said they turned out a bit dry, always in my case when I make them unlike when he cook them don’t know why.

My sweet stuffed pickled peppers are done, so yummy!

Thank God all leftovers and today’s dishes are gone except a bit of salad that I kept for the boys as a night snack.

 

Chicken Liver:

* 1/2 kg chicken liver.

* 2 sliced onions.

* chili green pepper.

* olive oil,salt,pepper and pomegranate sauce.

* saute onions and peppers in heated oil,then add livers and stir.

* add salt and pepper then leave to simmer on low heat till dine ( 30-40 minutes)

* when done turn off heat and add one big spoon pomegranate sauce and stir all together.

Rocca Mushroom Pomegranate Salad.

Hello everybody.

Pomegranates are in season now, healthy nutritious fruit that most people love.

These days one can find many recipes using it not like old times.

Today I made rocca salad added too many things walnuts,cranberries,mushroom, pomegranate and simple dressing.

Typical Friday Lunch.

Hello everybody.

Big fully loaded burgers are our typical Friday lunch whenever we’re all home.

Today with eggs, cheese and all toppings,tried these tiny breaded fried potato balls also, nice looking for a change.

A must with these burgers Mirinda,cold with lots of ice.

Fettuccine in Rosa Sauce.

You may wandered what did I do with all these cherry tomatoes in the oven, well they were very ripe and tender so this what you do…

I baked the whole tomatoes with one chili pepper, sweet yellow pepper, garlic,rosemary, oregano,salt and olive oil alongside the cake till all tender and a thick sauce is out. I then mixed all together in the blender.

Used this sauce with some fresh mushrooms,pesto and fresh cooking cream as sauce for fettuccine.
Sprinkle with Parmesan and oregano when served.

Easy simple end of the week lunch.

Toffee Cake with Butterscotch Sauce.

Hello everybody

No intention at all to do a cake or dessert cause we’re all trying to cut down sugars , at least try, but my mother in-law gave these dates she didn’t like cause they ‘re too sweet so I thought i’d do this cake with them and send her most of it.

 

Recipe is easy so is the cake specially if you eat it with ice cream and sauce.

Ingredients and method:

  • 3 tablespoons butter.
  • 1/2 cup vegetable oil.
  • 2/4 cup brown sugar.
  • 1 1/2 cups pitted dates.
  • 1 tsp baking soda.
  • 1 tablespoon molasses.
  • 2/3 cup boiling water.
  • 3 eggs.
  • 1 tsp vanilla.
  • 1/2 cup chopped walnuts.
  • 2 tsp baking powder.
  • 1 tsp ginger.
  • 1 tsp cinnamon.
  • 1 2/3 wholewheat flour.

* In a deep bowl soak dates,molasses,baking soda,ginger and cinnamon in the boiling water.

*Beat butter,oil and sugar till creamy.

*Add  eggs one at a time at a time then vanilla.

*Add flour and baking powder.

*Add walnuts and date mixture and mix with wooden spoon.

  • bake in a medium heated oven for 40-50 minutes or till done from inside.
  • Cool then serve with ice cream and sauce on top.

 

Butterscotch sauce:

1/2 cup brown sugar.

1 tablespoon butter.

1 pack cream

2 tablespoons maple syrup.

Mix all ingredients together and heat till heat till sugar dissolves then simmer for 2 minutes.

keep warm .

Lemon Velvet Cake.

Morning everybody.

Did this moist fresh cake this morning for my mother in-law’s friend .

here’s the recipe:

# 3 eggs.
# 11/2 cups suger.
# 1/3 cup margarine or butter.
# 2/3 cup vegetable oil.
# zest and juice of one big lemon.
# 1 tsp lemon essence (optional)
# 1/2 cup yogurt.
# 1/2 cup milk.
# 1 tsp vanilla.
#3 tsp baking powder.
# 3 cups flour.

Frosting :
# 3/4 cup butter.
# 2 cups icing sugar.
# some lemon zest.
# juice of half a lemon.
# some milk.

Frosting this time was different

  • 1 pack cream cheese.
  • 2 packs dream whip.
  • zest and juice of one lemon.

Fried Courgette Flowers.

Hello everybody.

Lunch today was mloukhieh from yesterday, fresh from the farm and so yummy with garlic and lemons.

Alongside with it I made these cute fresh courgette flowers that u couldn’t resist not bring cause they were so intact, a waste to throw them away.

Stuffed with cheddar and Parmesan cheese, garlic and oregano then dipped in an egg,milk, flour batter with a pinch of salt and baking powder.

So crunchy and tasty, I even took some for the guy working at grocery store cause he can’t believe or imagine that these can be cooked.

طريقه وردات الكوسا:

تحشى الوردات بمزيج من الاجبان الصفراء مع ثوم واعشاب.

يحمى زيت القلي جيدا ثم تغمس كل قطعه بمزيج متجانس عباره عن كوب طحين, 2 بيض, , نصف ملعقه ملح ونصف باكينغ باودر ويضاف حليب بالتدريج حتى يصبح القوام سلس .

ثقلى بالزيت الغزير لمده 5 دقائق.

Old Fashioned Date Cookies (نواعم)

Hello everybody.

Usual beginning of the week, cleaning,cooking and organizing.

Lunch today was mloukhieh with chicken though my family are not fans but it’s a good quick solution sometimes.

After all household work was done I thought I’d try a small quantity of these cookies so as to try the new mould my hubby bought from downtown and mainly cause I have this extra pack of dates from last Eid,don’t like to keep old stuff for long periods.

Found this recipe in various pages but I elaborated a bit on it, to be honest I used a bit of pure homemade ghee (سمنه بلدية)  in order to have this old times smell and flavour.

Ingredients and method :
# 2 cups fine semolina.
# 4 cups flour.
# 2 cups butter or ghee ( I used 1/2 ghee, 1 butter and 1/2 vegetable oil)
# 1 tablespoon anise powder.
# 1 teaspoon fennel powder.
# 1 tsp special cookie spice (كلفه كعك)
#1/2 cup sugar.
# 1 tsp instant yeast dissolved in 1 tablespoon sugar and a cup of warm water.
# 2 tablespoons rose water.

# pitted dates mixed with cinnamon, cardamom, cloves and anise powders.

# Heat butter then mix with semolina, flour and all spices very well till crumbly.
# leave for 2-3 hours till all butter is well absorbed.
# add frothy yeast and water and mix all well.
# add rose water and knead all together.

# start working right away by stuffing small portions of dough with dates and shape them in the moulds.
# bake in a well heated oven at first then reduce heat to medium till golden.

Serve with tea or coffee.

وصفه النواعم :
2 كوب سميد ناعم
4 كوب طحين
2 كوب زبده او سمنه( اليوم استعملت كوب زبده، نصف كوب سمنة بلدية ونصف كوب زيت نباتي)
ملعقة كبيرة يانسون
ملعقة صغيرة شومر
ملعقة صغيرة كلفه كعك
نصف كوب سكر
ملعقة صغيرة خميره مذوبه مع كوب ماء فاتر ومعلقه سكر
ملعقة كبيرة ماء زهر.
تمر مطحون ومعجون مع قرفه، هيل،كبش قرنفل ويانسون

اضيفي الزبدة الذائبه وهي ساخنه الى السميد والطحين والبهارات واخلطي جيدا.
يترك المزيج ليتشرب الزبد لمده 2-3 ساعات.
تضاف الخميره والماء وماء الزهر ويعجن المزيج جيدا
تحشى كرات من العجين بالتمر وتوضع في القالب وتصف بالصواني
تشوى النواعم في فرن حامي جدا من قبل ومن ثم متوسط عند الشوي
