Very hot and busy morning , don’t know why streets and shops are full, finished grocery shopping as fast as I can to go back home 🙁
Lunch today was noodles with vegetables and chicken,with soy sauce,ketchup and ginger. It’s a favorite of ours all the time .
I also made a quick side dish, light vegetarian quesadillas,found this recipe on Pinterest. You can add chicken to it if you like, your choice. Tasted really really good,will certainly do them again !
Ingredients and method:
* large tortilla bread.
* feta cheese.
* mozzarella cheese.
* fresh parsley and mint , chopped.
* black olives.
* chopped sweet peppers.
* pesto sauce or fresh basil leaves.
* cherry tomatoes.
* oregano,salt and pepper.
* optional additives : onions or shredded chicken.
* add feta and mozzarella on half of the bread then add toppings as you like.
* grill or toast in the oven after brushing pan with a bit of oil.

How are you all? hope you’re not tired from fasting long hours!!
Today’s ftoor is kofta with sliced tomatoes and green peppers,chicken quesadillas,broad beans salad and Greek salad the way we ate it in a cozy restaurant in Limassol Marina called Derliciuos ,it’s basic Greek salad but with cute presentation.
As for dessert I made this also Greek dish called anarokrema, which is roasted phyllo or puff pastry and cream with honey and nuts on top.
Ingredients and method:
* puff or baclava pastry roasted till golden.
* Anari cheese or any sweet white cheese with some sugar and rose water added to it ( like the one you use for qatayef)
* cream.
* walnuts and cinnamon.
* sugar syrup pr honey.
* After toasting the pastry layer it in a deep dish.
* mix cheese with cream,sugar and rose water and add on top.
* add walnuts and cinnamon.
* crush remaining pastry and add on top.
* keep in fridge to cool then add honey or syrup upon serving.

Today’s lunch is Greek ♡♥.
Mom gave me some fresh eggplants looks really good, moussaka was the choice, first thing I wanted to do them as we normally cook it..I mean arabic version of it (منزله باذنجان ) but then changed my mind, white sauce in moussaka gives it a delicious twist, plus Greek moussaka reminds me of beautiful picturesque small village in Cyprus mountains where I ate it the first time..It was really really good.
Ingredients and method:
* 1 cup cooked minced veal.
* 2-3 large eggplants.
* 2-3 potatoes. (Optional).
* thinly sliced green peppers (optional).
* 1 small onion finely chopped.
* 1 clove garlic.
* 1 big ripe tomato. Peeled and chopped.
*1 spoon tomato paste.
* 2-3 cups white sauce (bechamel).
* mozzarella cheese for topping.
* saute onion, garlic with meat till tender then add chopped tomato and paste, season with salt and pepper and leave to simmer for 15-20 minutes.
* cut eggplants and potatoes to circles, sprinkle with salt and leave for 15 minutes to drain.
* deep fry them in oil till golden.
* set on kitchen towel till extra oil is out.
* layer potatoes , half of eggplants and green peppers in a deep oven pan.
* add meat tomato sauce.
* layer the other half of eggplants.
* pour all white sauce in top.
* cook in the oven in low heat for 30-40 minutes then sprinkle grated cheeese on top and roast.
* serve hot with Greek salad .

I usually like to have something sweet on the kitchen table to serve with coffee or tea in case any sudden visitors came by, which is frequent..not that I mind, all family and friends know that they’re welcome anytime, coffee and sweets always available ( حمدلله).
As expected brownies were gone in no time.so today it’s my husband’s turn for his favorite dessert Harisseh or as some people call it Basbousa. I do have some excellent quality semolina (.سميد ). Must thank my hubby’s best friend Basil for that for he’s always a generous provider of excellent flour and semolina .
This recipe is a bit diffrent than normally done Harisseh. I have it in my Greek cook book (a must have cause all its recepies are great).
Ingredients:
*4 eggs.
* 1 tsp vanilla.
* 1 cup sugar.
* 1/2 cup coconut (optional).
* 1/2 yoghurt.
* 3/4 cup butter.
* 2 1/2 cups coarse or fine semolina.
* 2 tsp baking powder.
* 1/4 tsp sodium bicarbonate.
For the sugar syrup :
* 3 cups sugar.
* 1 1/2 cups water.
* 1 small spoon lemon juice.
*Mix all ingredients alternatively. Grease a
medium size pan with butter or tahini (طحينه ).add the batter
*Sprinkle with almonds then bake in a medium heated oven till golden.
* As for the syrup mix sugar and water, heat till it boils, add lemon juice and leave to simmer till it thickens .approximately 20-30 min.leave to cool.
* Add cold syrup on cake when still hot so as to be absorbed well.
Well lunch today is light, still have some noodles from yesterday so i made some spinach pastries..these will do I guess.:)
The dough is the same as pizza I made last week, but I added some sesame seeds and black seeds (قزحه ) , I also used 4 cups whole wheat flour with 2 cups plain white flour.
* Filling was spinach rubbed in salt, finely chopped onion, summaq ( سماق ) ،lemon juice,olive oil,some pomegranate molasses ( دبس رمان )، salt, pepper, paprika and chilli powder as desired.
* Devide dough to small balls, spread, fill with spinach then close as triangles.
I even had some extra dough today, filled it with cheese and fresh thyme leaves from the garden.:)
*Bake in a well heated oven till bottoms are brown then drizzle tops with olive oil and roast.
