Cooked Brown Lentils (حراق اصبعه )

Hello everybody.

We’re ordering food today but thought I’ll do a side dish  this is a Syrian appetizer, I always thought it’s hard to make or needs too much ingredients and steps..but then I found this basic recipe in an old book called ABC of cooking ( الف باء الطبخ),, been doing it since then by the book, very easy and nutritious.
Lentils are rich in iron and protein, can be a very good substitute for meat to vegetarians.

Ingredients and method:
* 1 cup brown lentils.
*  2-3 cloves garlic
*  3-4 onions.
* bunch of coriander.
* 1/2 cup lemon juice.
* 2 spoons pomegranate sauce ( دبس رمان ).
* 1 cup small size pasta.
* cubed fried pitta bread.
* salt, pepper, cumin powder.

* wash lentils then boil in 4 cups of water , add salt and 1 spoon cumin.
* add the pasta and leave to simmer till done.
* add lemon juice, pomegranate sauce.
* fry the onions in oil till golden.
* crush garlic and chop coriander then saute them in some oil.
* add half the amount of onions and garlic to lentil pasta mixture. Leave to simmer till it thickens and homogeneous. You might need to add some water.
* upon serving,, in a deep dish put some of the bread in the bottom.
*add the lentil mixture.
* decorate with the rest if garlic, onions and bread cubes.
* serve hot.

Roasted Red Peppers.

Hello everybody.
I’m surprised sometimes how silly cheap easy to do stuff are sold in stores in such high prices.
I went to a fancy supermarket last week, saw a small jar of mixed colored preserved peppers..too much overpriced. Today I was organizing vegetable’s drawer in the fridge, found 2  red and yellow peppers from last week so I thought of roasting them and reserve them for later to use with salads, pizza or anything as appetizers.

I searched into the internet for the correct way and did the easiest.
You simply roast them on the stove as eggplants or in the oven, then peel and remove stem and seeds. Slice them and arrange in a clean sanitized jar. Add 2 cloves of garlic then olive oil to cover them completely.
Store in a cool dry place or in the fridge….that’s it.

Easy, cheap and yummy:)

قلايه بندوره . Cooked Tomatoes

Hello everybody.

I came back from breakfast yesterday with no intention to cook anything. But then felt guilty if I’m full doesn’t mean everybody in the house is.
So as a quick solution I made cooked tomatoes (قﻻيه بندوره ) . It’s a very famous meal always done by all families.
You need chopped onion, garlic , green hot pepper and 4 large peeled tomatoes. Plus salt, pepper, chilli powder and olive oil.
Heat some oil, sautee onions, garlic and pepper till tender. Add tomatoes and leave to simmer till tomatoes are done.
That’s it.♡
