Grilled Chicken with Broccoli Mushrooms and Pesto Pasta.

Hello everybody.

Had to cook something quick today cause I had to meet my friends to go watch Mammia Musical and it was really worth every minute and penny, absolutely amazing,music still in my ears till now.

Saturday lunch is always fresh cause it’s grocery day, marinated chicken breasts in this yummy rich dressing marinate sauce my husband bought yesterday, then grilled them with garlic, sage and rosemary, added fresh broccoli and mushrooms then left them to simmer a while. Made some pesto pasta on the side and that’s it, quick and easy.

Hello again.

Lunch today was a big fish in the oven stuffed with garlic, onions, tomatoes, parsley, lemon, salt,pepper, chili and cumin with a drizzle of olive oil on top.

Of course with its companions French fries, fried bread and tahini parsley salad.

Eggplant Appetizer.

Hello everybody.

Got some fresh vine leaves yesterday so better to cook them immediately, hate freezing fresh stuff feels like a waste of something valuable.

So I stuffed some courgettes with them, best dish ever. Plus I made this appetizer that my Italian cousin posted yesterday.

You simply grill your sliced eggplants after salting them then add sliced tomatoes, minced garlic, chopped parsley, lemon, salt and oil on top before serving, I even added some olives turned out absolutely delicious.

Happy day with good food and best friend coming for a short visit.

Extremely Spicy Chicken Wings.

Hello everybody.

Had no clue what to cook though we do have some leftovers but not much.

Went out for some shopping for tomorrow’s lunch at Mom’s,idea struck me when I saw the neat clean wings in chicken fridge, Rania’s wings recipe, she posted them few weeks ago so it’s a good day to try them specially that they’re my youngest favorite and I got some sausages and sauteed them with onions, garlic and olive oil.
Ah almost forgot, did some carrot soup on the side, good in this cold day.

Wings recipe is very easy, here’s its steps :

# marinate wings in lemon and spices.
# dust them all over with equal amounts of flour and semolina.
# keep in freezer for 30 minutes.
# deep fry afterwards.
# melt 3/4 cup of butter with one Tabasco bottle and /or BBQ sauce then dip wings when done in the sauce till all covered.

That’s it,fatty and rich as Zaid loves them but definitely delicious.

Simple One-Pot Pasta.

Hello again.

Lunch was a first trial, just saw this recipe on Pinterest last night and couldn’t wait till morning comes out to make it, looked so interesting and exactly that’s what it turned out.

You can find lots of versions of this dish but all have the same principle, you simply add whatever you want of veggies,meat,chicken or sausages to raw pasta ,add herbs,salt pepper,oil and water then leave to cook till done !! that’s it.

Ingredients and method:

* chopped courgettes,mushrooms,onions,garlic, cherry tomatoes,chives,basil and black olives.

* 1 pack pasta.

* salt, pepper, oregano and some olive oil.

* 4 1/2 cups water.

* Note: I added a cube of chicken stock also.

* some cream or milk if you like added when pasta is done.

* Parmesan cheese upon serving.

* Put all ingredients together in one pan then add water.

* boil then leave to simmer on low heat for 45-60 minutes or till all done.

* add cream and cheese then serve.

Chicken in Salt Crust.

Hello everybody.
After a discussion the other day between members of my group about fish in salt crust, I did a quick research and found out that it can be done with chicken as well, so today was my first trial.

I also did a layered veggie pot containing pumpkin, eggplants and potatoes with sweet peppers and tomatoes on top and full of herbs. Only cooked on low heat then drizzled with olive oil and roasted.

Ingredients and method of chicken :
* 1 whole chicken.
* onion,garlic, oregano, cinnamon sticks, cardamom and rosemary for stuffing the chicken.
* butter.
* for the dough you’ll need :
* 1 3/4 cups salt.
* 4  1/2 cups flour.
* tsp of oregano and mixed herbs.
* 1 cup water.
* mix all dough ingredients till easy to handle and stiff, you may need a bit more water.
* clean and dry chicken well then stuff inside with all stuffing mentioned ( you can change or add anything you like)
* rub butter, pepper and all spice all over chicken,or you can put butter in between flesh and skin.

* cover chicken with dough and seal completely very good.
* bake in a medium heated oven for 2 hours.
* crack open the crust and serve.
Note: crust must be discarded not eaten cause it’s too salty.

Pineapple Roca Salad.

Hello everybody.
Long full day, lots of things to do and places to go, end was a sudden visit from my mother in-law’s cousins, and lovely group but a shame I don’t have any dessert or cakes,but we really had a great time.

Lunch today was a variety of many delicious dishes:
* Asparagus soup.
* Pineapple roca salad with dried cranberries, walnuts and a lemon, oil, salt balsamic vinaigrette.
* Cute Caprese salad.
* Green fava beans with garlic and coriander.

All very fresh and yummy.

Pesto Pasta and Ceazar Salad.

Hello everybody.

Upon my son’s request today’s lunch was on his favorite dishes, pesto pasta with chicken, mushroom and cream. Easiest thing to do specially if you have an outing.

On the side and made a big bowl of Ceazar salad, yummy and fresh goes along with the warm sunny day.

Best thing that happened to me today is receiving a big beautiful greeting card on the occasion of Mother’s day from my best friend’s lovely beautiful daughter Ward, though I don’t have a daughter of my own but I really love all my friends’ beautiful young ladies as mine, thank you loving Whardo,you’re the sunshine of my life.
