Aqaba Trip Goodies :)

Hello everybody

My son and his friends are going to Aqaba tomorrow morning, thought i’ll make them some goodies to eat during their stay cause they’re staying in an apartment not a hotel.

Best thing to do for easy handling is some some hot dogs,cheese and za’tar pastries,perfect for breakfast or snacks. i also made some cinnamon rolls,a new recipe I got from www.foodlve.com.

 *Pastries

ingredients and method:

* 4 cups flour.

* 1/2 cup vegetable oil.

* 1 cup warm milk.

* 1 tsp salt.

* 1 big spoon instant yeast.

* 1 tablespoon sugar.

* some water if needed for kneading.

 

* Mix all dry ingredients then add milk and oil,knead well for 5 minutes then leave to rest and rise in a warm place.

* prepare stuffing: hot dogs with ketchup and mustard,cheese,and za’tar with oil.

* I made hot dogs like rolls,cheese as balls and za’tar as parcels,of course you can chose any shape you like.

* bake in a well heated oven till golden.

Freekeh with Chicken. ( فريكه )

Hello everybody.
As I mentioned earlier today we’re having a big lunch, friends and relatives coming.

  My mother in law made freekeh with chicken among other things.
Freekeh is a roasted green wheat, meaning  wheat is harvested when still green and roasted outdoors on a big fire. Very healthy and nutritious. I even saw an old episode of Dr. Phill today by coincidence advising people to eat it cause of its many benefits.
  Freekeh is mainly done with roasted chicken on top and cooked with the chicken broth.served with salad or yoghurt.
Quantities depends upon how many people you’re serving.

Ingredients and method:
* chicken cut to big pieces ( with bones)
* 3 cups freekeh.
* seasoning for making chicken broth : salt, pepper, all spice, bay leaves, cinnamon sticks, cardamom and onions.
* ghee or margarine.
* roasted almonds and pine nuts for decorating.

* Make chicken broth by cleaning chicken very well, sautee them till excess water is dry ,add all seasoning and water then leave to boil till done.

You can do this only with the wings, back and neck of chicken  then discard them and use broth.
* As for breasts and thighs, rub them well with salt , pepper and olive oil and put them over a bed of coarsely chopped onions in a big oven tray. Cover with foil paper and cook them in the oven for 1 1/2-2 hours.then roast till golden.
* wash freekeh very well,make sure you look through it before cause usually you might find some small stones or dirt specially if bought directly from farms.
* saute them with ghee then add to each cup of freekeh 1 1/2 cup of broth.
* you may add some salt according to your liking.
* leave to cook on high heat till it absorbs most of broth.
* lower heat to minimum and leave covered to cook slowly for 1 hour or a bit more till it’s done.
* serve in big wide plate with roasted chicken, almonds and pine nuts on top.

The One and Only: Chocolate Cake.

Hello again everybody.
Last night my dear friend living in USA asked us if we can go visit her mom here in Amman on the occasion of her birthday,,, a request I can’t but to do willingly and with big big love…cause Auntie Georgette is the sweetest most lovable person in the world..and all of us would do anything to make her happy.

Chocolate cake recipies are various..I think one of the most searched and favored all over the world. This is my first and most successful ever ,  I even remember took it from my English teacher in 9’th grade,, though I tried many other recipies but I always go back to this one.
Ingredients and method;
* 3 eggs.
* 1 1/2 cups sugar or 1/2 brown and 1 regular white.
* 1/2 cup vegetable oil.
* 3/4 cup yoghurt.
* 1/2 cup cocoa powder
* 1 tsp vanilla.
* 3 tsp baking powder.
* 1 1/2-2 cups flour.

* Beat eggs with vanilla till frothy.
* add all other ingredients gradually.
* add 1 1/2 cups flour then if the batter is too thin add the other half.
* bake in a medium heated oven for 30-35 minutes or till dry when checked with toothpick or knife.

Topping:
* 3 big spoons sugar.
* 3 big spoons powder milk.
* 4 big spoons cocoa.
* 1 big spoon cornflour or starch.
* 1 big spoon butter.
* 1/2 cup water.
* you can add some chocolate of any kind you like (optional).
* stir very well over a water bath then cover cake with it.

Tabouleh♡♥

Hello everybody.
As I said yesterday no cooking today!!!!!
Yesterday my hubby went to Ghor and brought a big bunch of fresh parsley. So lovely and green calling for a tabouleh.♡♥
Remember I once made it but with spinach,  same ingredients except you use parsley instead of spinach. Chopped onions, tomatoes, salt, pepper, lemon juice, olive oil and of course soaked burghul.

Tabouleh is a famous traditional dish in many Middle Eastern countries,homemade or in restaurants it’s always a favorite dish as appetizer or alone.
    I sent a message to my lovely friends on Whatsapp, whoever is free come for tabouleh and coffee..unfortunately only three of them could come on such short notice. It was such a lovely sudden gathering ♡♥♡♥.

California Coffee Cake.

Hello everybody.
It’s been a while since I backed a cake..2-3 weeks, I searched in my cook book for something light and a bit different than I usually make.
Found this recipe, think I copied it from a magazine long time ago. Goes along great with a cup of tea or coffee.

Ingredients:
* 2 eggs.
* 1 tsp vanilla.
* 1 cup sugar.
* 1/2 cup butter.
* 1/2 cup milk.
* 2 tsp baking powder.
* a bit of lemon zest.
* 1 1/2 cup flour.
Filling:
* 1/2 cup brown sugar.
*1 tablespoon butter.
* 1 tablespoon flour.
* 1 tsp cinnamon.
* 1/2 cup crushed walnuts ( optional).

Method:
* mix filling ingredients together very well.
* mix cake ingredients alternatively in order.
* grease or place wax paper in a cake pan, round or rectangular as you like.
* pour half of cake batter then sprinkle filling to cover then add remaining batter.
* bake in a medium heated oven for 30-35 minutes or till toothpick inserted is dry.
* cool completely then remove from pan.
* serve with tea or coffee.

Bounty Squares

Hello again.
 
My mother in law has visitors coming tomorrow afternoon, and I’m going out with my friends in the morning to celebrate our dear friend Reem’s birthday.  So I will make two kinds of sweets today, better to save time.♡

     I have this recipe from my beloved friend Abeer. It’s usually done in a pyrex but today i’ll make it in a spring pan and cut it to squares to be served with coffee instead of normal chocolate.

Ingredients:
* 1 cup plain biscuits crushed and mixed with butter.
* 2 cups coconut.
* 2 spoons flour.
* 1 spoon corn flour.
* 1/2 cup sugar.
* 1 spoon butter.
* 2 cups milk.
* cooking chocolate.
* 1 spoon butter.
* 2 spoons peanut butter (optional).

Method:
* spread the biscuits as base un pan or pyrex.
* in a sauce pan, mix milk, coconut, sugar, flour, corn flour, butter and heat till mixture thickens.
* cool in fridge for 2-3 hours.
* in a water bath heat chocolate , add a bit of butter and milk and mix till creamy and totally melted.
* spread over coconut in a thin layer.
* leave to cool then cut to small squares or serve as it is in a pyrex.

Tastes a lot like Bounty for those who love it, I know I do♥
