Lemon Velvet Cake.

Hello everybody.

ً Went out to celebrate my friend’s birthday this morning to the Boulevard-Abdali ,first time for me to go and I was really impressed, beautiful place and scenery, didn’t expect it to be like this.

Birthday cake was a new recipe “Lemon Velvet Cake ” very similar to the red velvet but with lemons, really delicious and fresh,will definitely be on my favorite list.

Ingredients and method :

# 3 eggs.
# 11/2 cups suger.
# 1/3 cup margarine or butter.
# 2/3 cup vegetable oil.
# zest and juice of one big lemon.
# 1 tsp lemon essence (optional)
# 1/2 cup yogurt.
# 1/2 cup milk.
# 1 tsp vanilla.
#3 tsp baking powder.
# 3 cups flour.

Frosting :
# 3/4 cup butter.
# 2 cups icing sugar.
# some lemon zest.
# juice of half a lemon.
# some milk.
Note: I think next time I’ll make cream cheese frosting with lemons it’ll be better, this one is good but too rich in butter.

#Beat oil, butter and sugar till creamy then add eggs, yogurt, milk, vanilla.
#add lemon zest and juice.
# add baking powder and flour.

# pour batter in two small round oven pans.
# bake in a moderate heated oven for 35-40 minutes or till dry from inside.
# leave to cool then assemble two cakes with frosting in between and all over.
# decorate with lemon zest or roasted coconut.

Happened that I have two chocolate decorations one for a girl graduate and the other a boy which were so convenient cause my friend has both occasions for her children aside from her birthday.

Grilled Chicken with Broccoli Mushrooms and Pesto Pasta.

Hello everybody.

Had to cook something quick today cause I had to meet my friends to go watch Mammia Musical and it was really worth every minute and penny, absolutely amazing,music still in my ears till now.

Saturday lunch is always fresh cause it’s grocery day, marinated chicken breasts in this yummy rich dressing marinate sauce my husband bought yesterday, then grilled them with garlic, sage and rosemary, added fresh broccoli and mushrooms then left them to simmer a while. Made some pesto pasta on the side and that’s it, quick and easy.

Humming Bird Cake.

Hello everybody.

Did this beautiful cake for my best friend’s son birthday, a traditional American recipe full of flavors and looked elegant as well.

Ingredients and method :
# 3 eggs.
# 1 1/2 cups suger.
# 3-4 ripe bananas.
# 1 can pineapple with syrup.
# 3/4 cup vegetable oil.
# 3/4 cup crushed walnuts, almonds or pecans.
# 1 tsp vanilla.
# 2 tsp baking powder.
# dash of salt.
# 1 tsp cinnamon.
# 3 cups flour.

Cream cheese frosting:
# 1 pack cream cheese.
# 1/4 cup icing sugar.
# 1/4 cup butter.
# some roasted crushed nuts.

# Beat eggs with vanilla, sugar and oil till creamy.
# mash and mix in blender bananas and pineapple can all together.
# add puree to cake mix.
# add rest of ingredients alternatively.
# bake in two small pans or one if you don’t want it layered.
# bake in a medium heated oven for 30-40 minutes or till dry from inside.
# beat frosting ingredients well and cool in fridge till stiff.

Decorate cake with filling inside out.

Galaxy Ganache Chocolate Cake.

Hello everybody.

Summer is here at last,isn’t it enjoyable?  I just love it.

Went out with my lovely friends to celebrate two birthdays at Dahab restaurant and cafe in Abdoun, very nice place,delicious food and atmosphere.

Cake was plain chocolate with Galaxy Ganache, you simply melt galaxy bars on a water bath then add cream and mix well, all was yummy we had great time as always.

Beautiful Gathering

Hello everybody.
Such a lovely day, great for sitting outdoors and enjoying the breeze and warm weather with my lovely group of friends.
A visit postponed many times to eat Caraway since my nephew was born, got the caraway powder straight from Nablus this time from my friend,fresh and tasty though unfortunately she couldn’t come today, thank you dear Nadia.
I also made some fresh ka3ek with sesame seeds, cheese platters and spinach tabouleh, all yummy with great company of course.

Another Shakshouka.

Hello everybody.

Beautiful weather a real Spring day,going to a gathering this afternoon so my share is Za’tar Puffs amazing how dough rises quickly in warm weather, all process of kneading, cutting and baking took less than an hour.

Lunch was kids’ favorite Shakshuka, great option, easy and everyone love it.

Fruit Cheesecake Cookie Cups and Apple Cinnamon Rolls.

Hello everybody.

I’m so excited today cause me and my friends are invited to a special early dinner at our lovely neighbor’s house and she’s making a traditional Carcissian dish called chips and basta, I’ll write you details about it later tonight.

As usual I told her dessert is on me, I wanted to do something new, colorful and lively so after a bit of searching did these cute kind of tarts and since I have some apples in the fruit basket is did some apple wheels or rolls.

Ingredients and method of fruit tarts :

* 3/4 cup butter.
* 1 cup sugar.
* 1 egg.
* 1 tsp vanilla.
*  2 cups flour.
* 1/2 tsp baking soda.
* 1/2 tsp baking powder.
* 2 tsp cornstarch.

For the filling :
* 1 pack cream cheese.
* 1/2 cup icing sugar.
* 2 tablespoons cream.( قشطه)

* mixed fruits for topping.

* beat butter and sugar till creamy then add all other ingredients till you have a thick dough.
* in a cupcake pan add a spoonful in each paper then press well with higher edges ( this quantity made 24 cups)
* bake in a medium heated oven for 10-15 minutes.
* remove and leave to cool.
* meanwhile beat cream cheese with sugar and cream then top over each cupcake.
* decorate with fruits as you look like.

As for the apple wheels, I did same dough for cinnamon rolls or Nutella tree, the added brown sugar and cinnamon to a rectangular spread-ed dough, lined up sliced apples the rolled and baked them.

Hope our host will like them,I’m sure we’ll have fun and eat delicious food.

Cream Cheese and Strawberry Jam Cake.

Hello everybody.

I also did this beautiful cake today but didn’t want to mix both chicken and cake in the same post, better to keep sweet lovely things together.

Got the recipe from a new cookbook my cousin gave to me the other day,it’s really informative and today is my start up in discovering its contents.
A really easy simple cake, great with coffee or tea.
Ingredients and method :
* 1 package cream cheese.
* 1/2 cup butter.
* 1 cup sugar.
* 2 eggs.
* 1/4 cup milk.
* 1 tsp baking powder.
* 1/2 tsp baking soda.
* 1/2 tsp vanilla.

* 1 3/4 cups flour.
* 1/2 cup strawberry or raspberry jam.

* beat cream cheese and butter till soft then add up all other ingredients consequently except jam.

* batter  should be a bit thick.
* grease and medium sized oven pan.leave then add batter.
* add jam in small spoonfuls on top then swirl gently with a knife to create a marble effect.
* bake in a medium heated oven for 30-40 minutes.

Very tasty try it.

Asparagus Pie.

Hello everybody.

End of a very busy week at last, hope weekend will be relatively relaxing, though till now too much is scheduled already.
Well lunch today was an open buffet as I call it,all leftovers in the fridge but I did a small side dish cause I have these freshly picked asparagus so it’s a shame not to do something with them, so I picked this recipe from Pinterest ,easy and quick and luckily I have all ingredients.

Ingredients and method :
* 1 pack puff pastry.
* 2 tablespoons labaneh or sour cream.
* 1 tsp mustard.
* 1 egg.
* 1 cup grated cheese ( any kind that melts).
* asparagus.
* Salt, pepper and a bit of nutmeg.

* when pastry is tender roll it to a rectangle shape then put it in a rectangular oven pan.leave sides up a little.
* bake in a medium heated oven for 20 minutes or till it’s golden from bottom.
* mix half of the cheese, egg, labaneh and mustard well then add salt, pepper and nutmeg.
* spread mixture over half baked pastry then line up the asparagus after cutting the hard stems.
* sprinkle rest of cheese on top then bake again for 15 minutes then roast top till golden.
Serve hot as a side dish with any roasted beef or chicken.

Pesto Pasta and Ceazar Salad.

Hello everybody.

Upon my son’s request today’s lunch was on his favorite dishes, pesto pasta with chicken, mushroom and cream. Easiest thing to do specially if you have an outing.

On the side and made a big bowl of Ceazar salad, yummy and fresh goes along with the warm sunny day.

Best thing that happened to me today is receiving a big beautiful greeting card on the occasion of Mother’s day from my best friend’s lovely beautiful daughter Ward, though I don’t have a daughter of my own but I really love all my friends’ beautiful young ladies as mine, thank you loving Whardo,you’re the sunshine of my life.
