Cranberry Orange Muffins.

Hello everybody.

Babysitting my adorable nephew today, thank God I have leftovers for lunch cause he’s such a polite cute bundle but I got busy with him,well it’s been such a longtime since I took care of a baby. God bless them all.

In my free time while he napped, I made these muffins, new recipe I found so as to use the last box of berries, very easy and tasty.

Ingredients and method :
# 2 eggs.
# 1/2 cup sugar.
# 1/2 cup brown sugar.
# 1/2 cup vegetable oil.
# zest of an orange or as I did today 1 tablespoon marmalade.
# 1/2 cup sour cream or yogurt.
#1 tsp vanilla.
# 1 tsp baking powder.
# 1 tsp cinnamon.
# 2 cups flour.
# 3/4 cup flour dusted cranberries.

For the topping :
# 1/2 cup sugar.
# 1/2 cup flour.
# 1/4 cup butter.
# 1/4 tsp cinnamon.

# beat eggs, sugar, oil and zest till creamy.
# add yogurt, cinnamon, vanilla.
# add flour and baking powder.
# dust cranberries with flour then fold into batter slowly.

# pour till half in muffin paper.
# make topping like crumbles with your hands then sprinkle on top.
# bake in a medium heated oven till golden ( 20-30 minutes) .

Lime Poke Cake.

Hello everybody.

Amazing day out with my mother in-law’s cousins to a farm near Amman,beautiful place and fortunately warm weather.
Lady organizing the trip brought lunch food and each one of us brought dessert or coffee or tea. We had great time indeed.

I made this new cake recipe,easy and refreshing.

Lime or lemon poke cake :
* 1 pack French Vanilla cake mix.
* 2 packs lime jello.
* 1 cup boiled water.
* 1/2 cup cold water.
* 1 pack fresh cream.
* 1 pack heavy cream.

* juice of half a lemon.
* 1/2 cup caster sugar.

* Mix cake and bake as directed then leave to cool.
* mix jello with hot water till dissolved then add cold water.
* poke the cake wit a wooden spoon then pour the jello all over.
* put in fridge overnight or 4-5 hours.
* beat creams and sugar till stiff then add the lemon juice.
* spread cream over cake and decorate with fruits or coconut.

Basil Cherry Tomatoes Mazorella Steaks.

Hello everybody.

Last minute decision of what to cook for lunch came out after lots of ideas and guesses, typical Friday.

Well finally I took out some steaks since I have all ingredients of the dish, Rita’s recipe, simple sautéed thin steaks topped with fresh basil, cherry tomatoes and a slice of mazorella. Extremely delicious, all gone in minutes.
I made mashed potatoes, sweet creamy corn, gravy with mushrooms and a bowl of Ceazar salad.

Steak Branding.

Hello everybody.
Only me and my youngest son are home today, so we decided to pamper ourselves with the last pieces of the high quality steaks that we have,and chance to use the branding rod I bought last week from the American Stores.

Well Zaid tried something smart, we have a bottle of red grapes juice that nobody liked, so we soaked steaks in it, as if in red wine :mrgreen:, then seasoned them with all stuff we have and then on the grill alongside veggies ( potatoes, tomatoes, mushroom and asparagus) .

When done Zaid heated the stamp and branded the hot steaks, though it was upside down but good for a first trial.
I added seasoned butter on top ,really fancy .

Made some sweet tea on the grill later with fresh mint and jam cookies,lovely quality time with my precious Zozo ,definitely his kind of food .

Big Happy Lunch

Hello everybody.
Big family gathering, happy lively and full of love and old memories.

Mom made roasted lamb, I did my famous rice ( chicken, veggies with curry rice), spinach cheese pastries and mini pavlovas which turned out really cute.

Love you all, always a pleasure to meet.

Upside Down Toffee Date Cake.

Hello everybody.
Another cozy warm breakfast at my cousin’s this morning,  simple elegant table full of yummy food.

Dessert was a new cake, upside-down toffee it caramel date cake, easy and yummy. Resembles a lot the upside down pineapple one but with dates instead and my favorite jello with apples and reminder of our lovely childhood.

Ingredients and method:
# 1/2 cup sugar.
# 1 stick butter (100 g)
# pitted dates ( 2 cups)
# cinnamon and cardamom
Cake batter:
# 3 eggs
# 1 cup sugar.
# 1 cup oil.
# 2 tablespoons yogurt or milk
# 1 1/2 cups flour.
# 1 tsp vanilla.
# 2 tsp baking powder.

# heat sugar in baking pan till it caramelizes then add butter and mix.
# arrange dates and sprinkle the cinnamon and cardamom.

# beat cake batter ingredients alternatively then add over dates.
# bake in a medium heated oven for 30-35 minutes or till done in the middle.

# leave to cool down then flip over and serve.

Pineapple Cupcakes with Butter Cream Frosting.

Hello everybody.

Had the pleasure of hosting my lovely niece this morning,a usual ritual every time she visits is baking something sweet,well a tradition we  both actually enjoy cause I guess I love to teach her something and she’s a quick eager learner to everything not just cooking and as she always says we must eat and try something from banancooking.

Today I have some pineapples left and some strawberries and since Noudy wants a pink thing ( a must ) so I we did this easy recipe but altered a bit in ingredients cause it’s too sweet.

 

Ingredients and method:

* 2 eggs.

* 1/2 cup butter.

* 1 1/2 cups sugar.

* 2 cups flour.

* 1/4 cup milk.

* 1/2 cup crushed pineapples.

* !/4 cup pineapple or orange juice.

* 1 tsp vanilla.

* 2 tsp baking powder.

 

* Butter cream icing:

* 1 cup butter.

* 1 cup icing sugar.

* 1/2 tsp vanilla.

* a bit of cream or milk.

 

* Mix all cupcake ingredients alternatively till smooth ,batter will be a bit thick not runny don’t worry.

* bake in cupcakes or one pan in a medium heated oven for 20-30 minutes.

 

* whip all icing ingredients for 6-7 minutes till creamy then cool till you need it.

* decorate cupcakes with any fruit you like or coconuts.

Another Shakshouka.

Hello everybody.

Beautiful weather a real Spring day,going to a gathering this afternoon so my share is Za’tar Puffs amazing how dough rises quickly in warm weather, all process of kneading, cutting and baking took less than an hour.

Lunch was kids’ favorite Shakshuka, great option, easy and everyone love it.

Cream Cheese and Strawberry Jam Cake.

Hello everybody.

I also did this beautiful cake today but didn’t want to mix both chicken and cake in the same post, better to keep sweet lovely things together.

Got the recipe from a new cookbook my cousin gave to me the other day,it’s really informative and today is my start up in discovering its contents.
A really easy simple cake, great with coffee or tea.
Ingredients and method :
* 1 package cream cheese.
* 1/2 cup butter.
* 1 cup sugar.
* 2 eggs.
* 1/4 cup milk.
* 1 tsp baking powder.
* 1/2 tsp baking soda.
* 1/2 tsp vanilla.

* 1 3/4 cups flour.
* 1/2 cup strawberry or raspberry jam.

* beat cream cheese and butter till soft then add up all other ingredients consequently except jam.

* batter  should be a bit thick.
* grease and medium sized oven pan.leave then add batter.
* add jam in small spoonfuls on top then swirl gently with a knife to create a marble effect.
* bake in a medium heated oven for 30-40 minutes.

Very tasty try it.
