Walnut Rolls ( برمه او لفائف الجوز)

Hello everybody.

Sorry for the delay but I was tied up and busy.

Since it’s still so cold till now and you feel yourself needing something really sweet to warm up I decided to do this kind of wintry dessert.

Remembered this dish last night ,ate it many years ago at a gathering done by a relative, called her today to recall details and ingredients and she was really sweet to give me the exact small ones.It’s called Burma or simply Walnut Rolls.

 

Lunch was stuffed cabbage,a favorite on our table all times.

Ingredients and method:

* 1 pack phyllo pastry leaves ( رقائق الهنا)

* 2 cups finely crushed walnuts.

* 1 tablespoon cinnamon.

* 1 tsp cardamon.

* 1 tablespoon rose water.(ماء ورد)

* 1 tablespoon blossom water ( ماء زهر)

* 1 tablespoon sugar (optional)

*some vegetable oil in bottom of a Pyrex.

*thin long piece of metal (  I cut a part of metallic clothes hanger)

* 1 1/2 cup sugar syrup ( قطر)

 

* cut the phyllo sheets to in half.

* mix walnuts with cinnamon,cardamon,rose and blossom water.

* spread one sheet then place the wire in half and add one spoonful of walnut mix.

* cover with other side of sheet and roll with wire inside.

* close up the side of roll till it form wrinkles.

* remove wire slowly then place in the oiled Pyrex and so on till all sheets are used.

* bake in a very hot oven till crispy from bottom and surface.

* while still very hot pour cold syrup on top.

 

Wait till it cools and serve, absolutely delicious specially with a cup of Turkish coffee.

Mshabbak (مشبك بمناسبه عيد المولد النبوي الشريف).

Hello everybody.

Today marks the Birth  of Prophet Mohammad ( صلى الله عليه وسلم) on this occasion almost all sweet shops sell this kind of dessert called “Mshabbak” ,I looked through different recipes last night and decided to do it at home ,cause the ones you buy though maybe crunchy and better looking but they’re too sweet , heartburn often starts after the first bite.

Recipe is simple but process is a bit difficult, first one is usually a mess .

Mshabbak recipe:

* 1  1/2 cups flour.

* 1 cup starch.

* 1 big tablespoon instant yeast.

* 1 tablespoon sugar.

* pinch of salt.

* 2 cups warm water.

* some red food coloring.

* sugar syrup.

* oil for frying.

 

* Mix flour,starch,yeast,sugar,salt and warm water very well till no clogs are formed.

* leave covered in a warm place to rise for 45-50 minutes.

* heat the oil then drop the dough in circle or strips form using the cream decorating device.

*Remove when golden from both sides then dip half of it in red food coloring dissolved in some water.

* dip them right away in sugar syrup.

 

It might be a difficult messy process but outcome is super delicious,of course I sent dishes to neighbors,mom and mother in-law  to lesson the crime as usual.

Barbara Sweet ( حلوى البرباره).

Hello everybody.

Today I made this kind of sweet usually done by Christians in the Levant region on the 5th of December celebrating Saint Barbara feast which is a traditional  holy event.

Learned how to do this sweet from our lovely Lebanese neighbor long time ago,she used to make  a big dish to each house in the neighborhood may God rest her loving soul. Mom continued to make it throughout the years and I’ve been doing it also,I guess in the memory of the good old days in Jabal Al-Hussein.

 

Ingredients and method:

* 1 kg of pealed wheat ( قمح مقشور).

* 1 cup sugar.

* 1 tablespoon cinnamon.

* 1 cup raisins.

* 1 tablespoon ground anise.

* 1 tsp ground fennel (optional)

* coconut,sweetened anise seed,candy and nuts (for decorating the top)

* boil the wheat either in a pressure cooker or regular pan till done and water is little and thick.

* add cinnamon,anise,sugar and raisins and leave to boil for another 20-30 minutes on very low heat till all mixture is syrupy and thick.

* pour in small or big dishes as you prefer and garnish with coconuts,candied anise ( قمبز) or any kind of candy or nuts.

Serve hot in this cold weather, yummy yummy.

Apple Pudding Eclairs.

Hello everybody.

Back from a short trip to Taba/Egypt,though tiring long drive but it was worth it.Fun in the sun is the exact description , beautiful Sofitel Hotel with lots of pools and activities all day,the only disadvantage was the quality of food, all inclusive buffets but nothing good to eat.Thank God for bread and butter,but all in all it’s the company of good friends that made this trip memorable,we had a blast and lots of funny stories to tell for sure 🙂

Today as my son said we need something with rice,a good homemade meal is so satisfying after 3 days of eating out,I made Kebabs with tomatoes and rice or as we call it Indian Kebabs.

Tomorrow we’re going to spend the day at my friend’s house by the pool,another fun in the sun day,so I prepared this cool Summery dessert to take with me, very easy to do and a chance to use all the apples my husband brought while I was away !

ingredients and method:

* 5-6 large apples.

* 1 tsp cinnamon.

* 1 tablespoon flour.

* sugar if desired.

* 1 pack whipping cream.

* 1 pack fresh cream.

* 1 pack cream cheese.

* 4 packs vanilla pudding or you can use homemade pudding also.

* plain biscuits and some milk.

 

* peel and chop apples then add flour,cinnamon and sugar and mix well.

* mix together whipping cream,fresh cream,cream cheese and pudding very well .

* line the biscuits in a deep serving dish and sprinkle with some milk.

* add half the amount of cream then half of apples.

* repeat the layers then decorate with crushed biscuits and cinnamon.

* keep in fridge overnight for better results.

Gardening !

Hello everybody,hope you’re enjoying your weekend.

Today is gardening Friday, it’s a ritual each year to go to plant nurseries and remodel our garden,we’re even late this year,so today is the day.Started early in the morning and just finished planting now,not me of course,  I’m only my hubbies helper,to be honest I never planted anything and lived so I gave up long time ago!! all credit goes to Abu Khalil for sure <3.

At lunch time we crashed at my mother-in law,she already made roasted chicken and potatoes and  I quickly made pasta with white cheese,pesto sauce and parsley as a side dish.

As a reward after a long hot day working outside I made a dish of Banana Split but without cream, only ice cream,bananas,biscuits,fruit salad and chocolate syrup.

Lovely day,but work is yet not finished,we’re continuing tomorrow Insha’Allah.
