Banoffee!!

Hello everybody.
Hope you’re enjoying the sunny warm weather.
Today lunch is at mom’s..stuffed vine leaves (ورق دوالي ). This week is all stuffing 🙂
  I volunteered to make Caesar salad, I also made Panoffee in case my dear uncles pass by as every Friday.
Panoffee is a delicious easy kind of sweet, I usually make it when I have ripe bananas.
Ingredients :
*3-4 bananas.
* 1 cup brown sugar.
* 1 cup milk.
* 1 big spoon cornflour.
* 2 cups butterd crushed biscuits.
* 1 pack cream.
* fresh cream or chocolate for decorating.

Method:
* Spread the biscuits in a Pyrex.
* Cut bananas to circles and layer them over biscuits.
* Make caramel sauce by heating brown sugar with butter or you can use white sugar but you have to melt it and wait till it becomes brown.
* add cream and milk and stir very well.add 1 spoon cornflour to the milk before adding it so as to thicken the sauce.
* simmer caramel till thick.
* spread over bananas.
* decorate with any kind of chocolate or whipped cream or vanilla ice cream if you like.

No Bake Chocolate Cookies♡♥

Hello again.
My younger son Zaid wrote this recipe down from Fatafeat tv channel 3 or 4 weeks ago..and stuck it on the fridge for me to make as quick as possible of course. But I kept on delaying cause it’s so sweet and full of calories.

But today his friends Zaid, Omar and Abdullah are coming over to work on a project so I figured it’ll be a nice treat for them. Though I told him he must help me cause I had no time.
Ingredients:
* 2-3 cups of rice crispy.
* 1 small chocolate cake ready from store or homemade.
* 1 big spoon butter.
* 2 spoons honey.
* mix of assorted chocolates. .Kitkat,Mars, Snickers…etc.
* plain cooking chocolate.

* Crumble cake over rice crispies.
* melt butter with honey.
*cut chocolate to shunks.
* melt chocolate with some milk till creamy.
* add all over rice crispy and cake.Mix very well.
* with 2 spoons form small balls. Set on waxws paper and refrigerate for 2-3 hours.

Try not to feel guilty when you eat them:)))).

Bounty Squares

Hello again.
 
My mother in law has visitors coming tomorrow afternoon, and I’m going out with my friends in the morning to celebrate our dear friend Reem’s birthday.  So I will make two kinds of sweets today, better to save time.♡

     I have this recipe from my beloved friend Abeer. It’s usually done in a pyrex but today i’ll make it in a spring pan and cut it to squares to be served with coffee instead of normal chocolate.

Ingredients:
* 1 cup plain biscuits crushed and mixed with butter.
* 2 cups coconut.
* 2 spoons flour.
* 1 spoon corn flour.
* 1/2 cup sugar.
* 1 spoon butter.
* 2 cups milk.
* cooking chocolate.
* 1 spoon butter.
* 2 spoons peanut butter (optional).

Method:
* spread the biscuits as base un pan or pyrex.
* in a sauce pan, mix milk, coconut, sugar, flour, corn flour, butter and heat till mixture thickens.
* cool in fridge for 2-3 hours.
* in a water bath heat chocolate , add a bit of butter and milk and mix till creamy and totally melted.
* spread over coconut in a thin layer.
* leave to cool then cut to small squares or serve as it is in a pyrex.

Tastes a lot like Bounty for those who love it, I know I do♥

Ginger and Chocolate Cookies.

  A crime in our kitchen,  cookie jar has been empty for more than a week. So it’s time to bake some to fill it.
  Made ginger for me and chocolate for the kids. Same ingredients but diffrent flavors.

Ingredients:
* 1 egg.
* 1 cup white sugar or 3/4 brown sugar.
* 3/4 cup butter.
* 1 cup oatmeal.
* 1 small spoon baking powder.
* 1 spoon vanilla.
* 1 spoon ginger powder.
* 1/4 spoon fresh grated ginger.
* pinch of salt
* 1 1/2 cups flour.
For the chocolate flavor:
* substitute ginger with cocoa powder and chocolate chips.

Method:
* mix all ingredients alternatively. Add a bit extra flour if dough is too soft.
* form the dough to a cylinder or log shape with the help of wax paper.
* keep in the fridge for 15-20 minutes.
* with a sharp knife cut to slices then place circles on a non greased oven or cookie tray.
* bake for 10-15 minutes or till sides are golden.
* I sprinkled ginger cookies with sugar and caramelized it with a torch. ( optional).
* cool then store in well closed jar or tin.

BROWNIES♡

A dessert is a must on a Friday also.
My son always complain that my brownies are always not moist enough or are more chocolate cake than a sticky browny.

Today I told him.I’ll make the very old recipe I have  on my cook book,used to make it with my sister since we were in school and thank God it was just perfect.

Ingredients:
*4 eggs.
*2 and 1/2 cups sugar.
*1 cup vegetable oil.
*1 cup cocoa powder.
* 1/2 cup crushed walnuts.(optional).
*1 spoon vanilla.
*1 spoon baking powder.
*1 and 3/4 plain flour.
*pinch if salt.

*mix all ingredients alternatively.mixture is usually thick.
*spread in a medium sized greased pan.
*bake in a medium heated oven for 30-40 min or till surface is crispy but careful not to let it dry.

Serve alone
or with ice cream.

Carrot Cake.

Today my mother in law is invited to lunch at her friend’s house. I told her will bake you a cake to take with you for the lovely aunties as a dessert.
Carrot cake is always a favorite.carrots are juicy and sweet this time of the year.
I have this recipe from a tv show long time ago.always a success.
You will need:
*3 eggs.
*1 spoon vanilla.
*1 cup sugar or 2/4 brown sugar.
*3/4 cup vegetable oil.
*juice of one orange.
*1 spoon orange zest.
*3 spoons baking powder.
*1and 1/2 cups grated carrots.
*1/2 cup raisins.
*1/2 cup crushed walnuts. *1 small spoon cinnamon. *1/4 small spoon cloves.
*pinch of nutmeg and salt.
*1 cup whole wheat flour.
* 4 big spoons white flour.

Mix eggs, sugar, vanilla, oil, orange zest and juice very well then add to carrots, spices, walnuts, raisins, baking powder and flour.fold mixture in dry ingredients .
Bake in a medium heated oven using any kind of baking tin for approximately 30 minutes or till center is dry.

Usually I make frosting of cream cheese and double cream, but aunties today prefer it with only icing sugar on top. Lighter they say.

Well I usually make another cake for the kids since im baking anyway.
They usually prefer basic simple cake.
You will need:
*4 eggs.
*2 cups sugar.
*1/2 cup oil.
*1 cup milk.
*21/2 to 3 cups flour.
*vanilla.
*3 tsp baking powder.

Mix all ingredients alternatively in with cake mixer.add the 21/2 cups flour then check if mixture is too thin add more till it’s thick enough.
Trick in simple cake is that mixture should be neither thin nor very thick so that it’ll be soft and juicy.
Today u split mixture to two parts.one with raisins in top for hubby. The other in cupcake tray with chocolate pieces on top for the kids.

tip: sprinkle the raisins with flour and shake well  so as not to sink in the bottom.
This also needs 30-40 minutes in the oven.

Chocolate Balls!!!!!!

Hello everybody…grocery day again,,, can’t believe how fast the week goes by…well, they say time flies when you’re having fun….frankly it’s been a fun week … (. حمدلله ).

Found fresh green beans today…though as usual one family member always objects when I cook it…ends up eating rice with tomato sauce, but it’s really a delicious healthy meal.plus very easy to make specially when using a pressure cooker….he or she who invented it is really a great man or woman….very useful and time saving.
You will need:
1/2 kg of lamb meat cut to cubes or big pieces with bones as you prefer.
1kg cut, washed green beans.
2 or 3 large ripe tomatoes.
2 cloves of garlic.
1 small onion.
2 big spoons tomato paste.
5 cups of water.
Salt.pepper. mixed spice.paprika.
1 big spoon olive oil.

In a pressure cooker or regular pan..heat the oil then add meat pieces, salt.pepper.spices. paprika, stirr well till meat is brownish and crispy.
Add the beans and keep stirring till it softens.
In a blender mix the onion, garlic, peeled tomatoes, tomato paste and water then pour it over the beans and meat..
You can add one more cup of water if the juice is too thick.then leave to boil for 30-40 minutes on low heat if in pressure cooker or for hour and half if in regular pan.. or till meat is well done.
Of course this dish is served with rice..today I made rice with small noodles (شعيريه ) I toasted it with vegetable oil and salt till golden.added the rice, mix them well together then added water till above rice by one inch.
When all water is absorbed lower the heat ,, I usually place a tin under the pan to keep heat very low and rice won’t burn, then leave till rice us done.
