Kinder Bueno All Chocolate Cake.

Hello everybody.

My baby turned 18 today, though to me he’s still that blond skinny baby who never sat still for a moment,can’t imagine he’s a fine young man now.

Had a bunch of his friends for breakfast today, big variety of goodies : eggs in buns, manousheh, cheese, labaneh, hummus, falafel… etc.

Highlight of the event was a big fully packed with chocolate cake done upon his request, main filling was cream with crushed Kinder Bueno bars and topping was a mix of Oreo,Maltesers, Flakes and Wafers.

I also made mini pancakes with Nutella,bananas and strawberries in skewers.

Lunch is in process now, only some fries to go with left.

Self-Saucing Chocolate Pudding.

Hello everybody.

As you may also noticed we’re Mansaf-ing today,and farewell treat to dear Haidar before heading back to Subway and frozen meals.As usual it was superb and we’ll done,my mother in-law’s specialty hope God give her good health and energy to keep on doing it :mrgreen:.
My part was the dessert, I arranged a small tray of sweets including fresh cream, honey, molasses and homemade halaweh with toasted bread sticks and made this new dish that was posted in my page from yummy yummy website which is self-saucing chocolate pudding.

Very easy to make plus it saves you time and effort to make a sauce or ganache for the cake .

Ingredients and method :
* 3 eggs .
* 1/2 cup butter .
* 1/4 cup coccoa .
* 3/4 cup sugar .
* 3/4 cup warm milk .
* 1 tablespoon Nescafe .
* 1 tsp baking powder .
*1 tsp vanilla.
* 1 cup chocolate chips or any kind of milk chocolate .
* 2 cups flour .

For the syrup :
* 2 1/2 boiling water .
* 1/2 cup sugar .
* 2 big spoonful of coccoa .

* whisk eggs,vanilla ,sugar,butter with milk and nescafe till frothy .
* add dry ingredients ( flour,coccoa and baking powder )
* fold in chocolate chips .

* mix syrup ingredients well.
* pour chocolate batter into a greased deep pan.
* pour hot syrup on top .
* bake in a medium heated oven for 40 minutes .
* you’ll have two separated layers of cake and pudding or thick syrup under it.
* serve alone or with vanilla ice cream .

Cookie Gifts :)

Hello everybody.

I have this childish habit I guess ! love to use,eat.wear any gift right away .I never hide away or keep anything for later like today, I got this beautiful food display tray from my cousin yesterday,really elegant, so I called my friends this morning for coffee then thought why not make a quick breakfast to use the new item ? loveliest meal ever specially when shared with my best friends.

Afternoon I baked some Rock cookies and Chocolate Chip Marsh mellow ones for my cousin loving in U.A.E ,will send them with my friend going to visit her tomorrow, even improvised a greeting and packaging quickly, hope she likes them .

No cooking today of course,lots of leftovers from yesterday.

Walnut Caramel Truffles.

Hello everybody.

It was a pleasure to welcome my old university colleagues this morning for breakfast,though we don’t meet much but it’s always a pleasure to see them, good  memories and lots of laughter 🙂

Food was simple and delicious or is it the company that makes it enjoyable? cheeses,labaneh,cream cheese and jam from yesterday and a selection of croissants filled with salmon and turkey.

Dessert was these chewy walnut caramel truffles I made last night and a dish of fruits , found the recipe on Pinterest but made few changes, taste is just perfect.

Ingredients and method:

* 1 cup crushed walnuts.

* 2 cups crushed plain biscuits.

* 1/4 cup brown sugar.

* 1/4 cup maple syrup.

* 2 tablespoons cream.

* melted chocolate.

* Mix all ingredients together except chocolate then form it into small balls.

* line in wax paper and cool in fridge for 30 minutes.

* dip in melted chocolate and cool again,you can decorate top with walnuts while still hot.

These will be excellent for Christmas by the way,can be done and stored a week ahead.

Nutella Christmas Tree.

Hello everybody.

As  promised I’m trying to make a Christmas related recipe each day to give you new ideas of main dishes and sweets to add up to your lunches or dinners.

Today I made this beautiful Nutella Christmas Tree, my son send me the photo the other night and I searched for the easiest recipe, really yummy and not complicated as it looks.

Ingredients and method:

* 3 cups flour.

* 1/3 cup sugar.

* 1 cup warm milk.

* 2 teaspoons instant yeast.

* 1 tablespoon butter.

* 2 eggs.

* 1 cup Nutella.

* some crunch or sesame seeds for decoration.

 

*  Mix dry ingredients well then add egg yolks,milk and butter and knead well for 10 minutes.

* leave covered for one hour in a warm place to rise.

* cut dough to 4 pieces.

* roll each piece into a thin triangle .

* top first layer with a very thin layer of warmed Nutella in a tree shape.

* add second layer on top of it and repeat process.

* add fourth layer on top but without Nutella then cut dough to a tree shape as shown in photos.

* make linear cuts to make branches then twist each one .

* add some milk to egg whites and whisk well together then brush on top of tree.

* bake in a medium heated oven for 30-40 minutes till all golden.

* mix a bit of icing sugar with milk and brush sides so as decorations stick well.

* decorate sides with anything you like, sesame,coconut,almonds, crunch …etc.

 

Oh forgot to mention that lunch is light today, chicken breasts with soy sauce,garlic,coriander and onions with any vegetable you like, I added broccoli today.

Tree looks and tastes AWESOME, a must try this season !

Double Chocolate Cupcakes.

Hello everybody.
Gloomy dark day,just hate when the sun is not out.

Lunch was courgettes in cooked yogurt (ablama كوسا مخشي) , suitable in this cold weather.

I also did these amazing amazing cupcakes maybe they’ll cheer up the mood. I have this box of chocolates,a gift from a dear friend and a pack of ready mix chocolate cake. I saw this done on the net once thought I’d try it before I end up eating the whole box of chocolate alone.
You simply mix cake as directed then fill half a cupcake with battery add the round chocolate then add another quantity and bake.
They were supposed to be more like molten chocolate but maybe kind I used is too smooth that it sank down but nevertheless it made a crunchy crust,shooo yummy with some ice cream.

Crunchy Baked Wedges.

Hello everybody.
How’s your weekend so far? Weather turned crispy cold and dusty not enjoyable for an outing right?
Lunch was cheese burgers and crunchy spiced wedges,you cut potatoes with skin into wedges and mix well with pesto sauce,chili,rosemary, oregano,breadcrumbs,sun dried tomatoes,salt ,pepper and olive oil then bake uncovered till done and crispy. Salad was beetroot and lettuce topped with feta cheese and vinaigrette.

Upon kids request I baked more peanut butter chocolate cookies cause I only left some for them yesterday. Love this recipe very easy and quick.

Peanut Butter Chocolate Chip Cookies.

Hello everybody.

Lovely sunny day,hope all weekend stays like this,started with a lovely breakfast outside in the sun, new olives are done they’re absolutely delicious.

I was invited to a gathering noon time and just before I left I decided to bake some cookies to take with me,after searching  in my books for something quick I didn’t do before I found this super easy one,  I used Quality Street chocolates, simply crushed a bunch in the food processor instead of normal chocolate chips,this box has been on the coffee table since Adha Eid so I’d better use it rather than eat it alone,don’t you all love these chocolates? never bored of them!

Ingredients and method:

* 1/2 cup butter ( reduce it a bit if using heavy chocolates)

* 1/2 cup peanut butter.

* 3/4 cup brown sugar.

* 1 egg.

* 2 tablespoons milk.

* 1 tsp vanilla.

* 1/2 small spoon baking soda.

* 1/2 tsp baking powder.

* 1 3/4 cups flour.

* 3/4 cup chocolate chips or crushed ones of any kind.

 

* Mix butters and sugar well till creamy then add egg,vanilla,milk.

* add flour,baking soda and powder then last thing add the chocolates.

*Shape into balls then flatten them a bit,usually I use a coffee cup bottom.

* bake in a medium heated oven for 10-13 minutes or till bottoms are golden.

* cool then keep in cookie jar or tightly closed tin.

These will sure put a big smile on a child’s face specially with a hot chocolate in a cold day 🙂

Mini Banoffee Tarts.

Hello everybody.

Told you yesterday this week is crazy,nonstop events. Hope I can have a calm weekend after all , till now no plans hope it’ll stay like this !

Today my beloved childhood cousins came to visit me,that’s why I’m late writing my daily post, we had such great time as always. I did these mini banoffee tarts,same recipe but I used a small mold for the crust and added caramel and bananas on top and chocolate syrup to decorate.I also made spinach tabouleh and za’tar buns filled with cheese and one big topped with labaneh,plus some Maltesers coconut balls from yesterday.

Lunch today was rice with veggies and meat,really yummy!!
