Hello everybody.

God it’s been while since I posted , what a shame !!!!

Guess it’s lots of work and no time for new recipes . it’s been like this unfortunately since I started catering ,well one can’t have it all right.

So today I made this beautiful cake , full of joy and love just like the box of the famous Quality Street chocolates.

I have this big box of these yummy chocolate so I thought I’d use them instead of eating it alone.

Cake was my basic chocolate cake with raseberry jam and cream filling , topped it with ganache and assorted chocolates.

Banana Chocolate Biscotti.

It’s been a long time, missed writing new recipes a lot cause ever since I started catering I haven’t got enough time to try something new , till today 🙂

Lucky me no cooking this morning so I found it an opportunity to use the lonely ripe 3 bananas in the fruit basket into something instead of becoming too soft and then throw them away.

So after looking through my fridge i found two Lion Bars also, some walnuts and butter. New biscotti trial then it is and the result was super yummy.

Ingredients and method:

  •   2 eggs
  • 3/4 cup sugar.
  • 1 cup butter and vegetable oil
  • 3 ripe mashed bananas
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1/2 cup walnuts
  • 1/2 cup chocolate chunks (any kind you like)
  • 3 tablespoons coccoa
  • 2 1/2 to 3 cups flour
  • 1 tsp baking powder.

Beat eggs with vanilla and sugar.

Add butter and oil then all ingredients and knead well to get a soft manageable dough.

Form it into a wide log then cut lengthwise to thin strips.

Lay them on baking sheets.

Bake in a medium heated oven for 15020 minutes or till a bit dry.

Dip ends with melted chocolate and crushed walnuts if you wish.

Hello everybody.

Did this Easter inspired cake today for a friend and I may say it turned out very nice, though i took the idea from Pinterest but of course colors and final look weren’t exactly the same.

Cake is chocolate with cream cheese filling and Oreo , brown spots on cake are done from a paste of cocoa and water then dripped with a brush and nest effect done with knafeh pastry .

Turkish Coffee cake.

Hello everybody.

Loved the idea of using Turkish coffee in a cake, never occurred to me before until I saw  it on Measuring Cups Optional , loved the idea a lot since I’m a big coffee fan.

The recipe posted was more like a fudge cake so I kept searching for similar recipes, Pinterest of course, found many cakes with coffee but not Turkish  ( espresso or instant) so I combined both recipes together and the result was really awesome.

Took the cake to my cousin’s this morning , big family gathering and everyone just loved it.Coffee chocolate lover will surely fall in love with the rich taste.

Ingredients and method:

  • 3 eggs.
  • 1/2 cup brown sugar.
  • 3/4 cup sugar
  • 1 tsp vanilla.
  • 1/2 cup vegetable oil.
  • 1/2 cup milk.
  • 1 tsp ground cardamon.
  • 2 tablespoons Turkish coffee powder
  • 1/2 cup cocoa.
  • 3 tsp baking powder
  • 1/4 tsp baking soda.
  • 2 1/2 cups flour.
  • Beat eggs and sugar with vanilla  till creamy.
  • Add oil,milk.
  • add coffee and cardamon.
  • Add cocoa ,baking powder,baking soda and flour consequently.
  • Bake in two or three pans  as you wish in a medium heated oven for 30-40 minutes.
  • cool then assemble layers with cream and any kind of dark chocolate.

For the cream:

  • 1/2 cup heavy cream
  • 2 sachets whipping cream
  • 1/2 cup cooled boiled Turkish coffee with 1 tsp instant coffee with it.
  • Whip all ingredients till double in size and fluffy then cool in fridge.

3 بيض
نص كوب سكر بني
3/4 كوب سكر ابيض
نص كوب زيت نباتي
ملعقتين كبار قهوه تركي ( بودره مش مغليه)
ملعقه صغيرة هيل مطحون
نص كوب كاكاو
ملعقه صغيرة فانيلا
3 ملاعق صغيرة باكينغ باودر
ربع ملعقة كربونات الصودص
2 1/4 كوب طحين.
يخفق البيض والسكر جيدا ثم تضاف باقي المقادير بالتتابع.
تخبز بفرن متوسط الحراره لمده 40-45 دقيقه.
انا عملتها بقالبين وحشيت كريما بالنص.
الكريما
علبه قشطه
باكيتين كريما بودره
فنجان صغير قهوه تركي مغليه مع نص معلقه نسكافيه
تخفق جيدا وتبرد.
تحشى الكريما بين الطبقات وحطيت كمان شوكولاته سوداء.
تزيين حسب الرغبه.

Chocolate Hazelnut Caramel Thumbprints.

Hello everybody.

Testing new cookies for Christmas orders, came across this recipe the other day and thought it’ll be a good choice and i was right.

Elegant crispy from the outside cookies , so easy to make and you can always make many variations of them. I mean you can envelope them with either hazelnuts or almonds and fill them with caramel or Nutella , all really tasty for sure.

Ingredients and method:

* 3/4 cup butter.

* 1/2 cup sugar.

* 1 large egg separated.

* 1/2  cup flour.

* pinch of salt

*1/2 cup cocoa.

*2 tablespoons cold water.

* 3/4 roasted finely crushed nuts.(hazelnuts or almonds)

* caramel or Nutella

* beat egg yolk,butter,sugar and salt till creamy.

* add flour and cocoa  knead till you form a ball.

* form small balls then press them  with your thumb a bit in the middle.

* beat the egg white and coat cookies with them.

* roast and crush finely the nuts then coat cookies with them as well.

* bake in a moderate heated oven for 13-15 minutes.

* when cooled add a little bit of caramel  in the thumbprint.

I also made super easy coconut Maltesers balls but this time I roasted the powdered milk till golden , added a caramel taste to them .

Ingredients and method:

*2 cups dry milk powder.

* 2 cups coconut.

* 1/2 cup icing sugar.

* 1 pack cream.

* 1 tablespoon butter.

* 3 packs Maltesers.

* Note: I added some orange zest,goes well with it.

* Mix all ingredients together till they’re like a paste then cover each Maltesers ball with it and roll into a ball .

* cover with coconut and leave to cool in the fridge.

To fill the box for today”s order I added some rock cookies and lemon crinkles I made yesterday, turned out a beautiful colorful Christmas gift.

Mocha Chocolate Mousse.

Hello everybody.

Did the cutest mocha chocolate mousse  cups today.

Dessert after a delicious mansaf for my husband’s cousins.

Recipe is the same old I usually do but with a twist this time, added some strong coffee to half of the mixture and made two layers of the mousse with cream on top as well.

Ferrero Rocher Chocolate Cake.

Hello everybody.

My lovely aunt called yesterday saying she’d like to try one of my cakes, anything with lots of chocolate she said.

First thing that came to my mind was my usual daisies cake but then I thought why not to try another version, chocolate cake filled with chocolate cream and Ferrero Rocher and topped with the same.

Final outcome was really amazing and elegant, something all chocolate lovers will love for sure.

Hello everybody.

Happy birthday to the amazing DJ Badr, did this awesome chocolate cake filled with peanut butter cream and covered with cream and all kinds of Reeses, his favorite chocolate.

Cake turned out really elegant and rich, hope he liked it.
