Mud Pie ( Lunch and Birthday ).

Hello everybody.

Big day!  lunch in the honor of my cousin and birthday of my big bro, all people around the table today are precious to me that’s why we had great time and enjoyed every minute . WELCOME my dear family,love you <3.

Lunch was many dishes, main was Rice with veggies and chicken (رز بنان) ,steaks with mushroom,hot spicy potatoes,mloukhieh,kibbeh,cheese rolls, marinated salmon,green salad and rocca pomegranate salad.

Dessert was knafeh,strawberries with dips and this new awesome recipe I got from my sis, Mud Pie, it really looks like a plant you can’t tell it’s something edible specially that I inserted a real flower in it 🙂

Oh most important thing I got some beautiful presents ,one of them is a bunch of lovely stuff from my dear cousin living in Rome ,thank you lovely Rita.

Ingredients and method:

* 75 Oreo biscuits.

Mix 1 :

* 1 pack vanilla pudding.

* 2 cups milk.

 

Mix 2:

* 2 packs cream.

* 3/4 cups milk.

 

Mix 3 :

* 2 packets cream cheese.

* 1 tablespoon butter.

* 1/2 cup sugar.

 

*Mix  each one alone then add mix 1 and 2 to 3.

* Mash Oreos in food processor.

 

* In a deep transparent bowl make layers of Oreo then cream but take care not let cream appear on the side so that overall look be all brownish.

* leave in fridge to settle ( I made it yesterday) and decorate with real or artificial plant or flower.

Nutella Christmas Tree.

Hello everybody.

As  promised I’m trying to make a Christmas related recipe each day to give you new ideas of main dishes and sweets to add up to your lunches or dinners.

Today I made this beautiful Nutella Christmas Tree, my son send me the photo the other night and I searched for the easiest recipe, really yummy and not complicated as it looks.

Ingredients and method:

* 3 cups flour.

* 1/3 cup sugar.

* 1 cup warm milk.

* 2 teaspoons instant yeast.

* 1 tablespoon butter.

* 2 eggs.

* 1 cup Nutella.

* some crunch or sesame seeds for decoration.

 

*  Mix dry ingredients well then add egg yolks,milk and butter and knead well for 10 minutes.

* leave covered for one hour in a warm place to rise.

* cut dough to 4 pieces.

* roll each piece into a thin triangle .

* top first layer with a very thin layer of warmed Nutella in a tree shape.

* add second layer on top of it and repeat process.

* add fourth layer on top but without Nutella then cut dough to a tree shape as shown in photos.

* make linear cuts to make branches then twist each one .

* add some milk to egg whites and whisk well together then brush on top of tree.

* bake in a medium heated oven for 30-40 minutes till all golden.

* mix a bit of icing sugar with milk and brush sides so as decorations stick well.

* decorate sides with anything you like, sesame,coconut,almonds, crunch …etc.

 

Oh forgot to mention that lunch is light today, chicken breasts with soy sauce,garlic,coriander and onions with any vegetable you like, I added broccoli today.

Tree looks and tastes AWESOME, a must try this season !

Zaid Cooking / Shawerma.

Hello everybody.

Went to parent’s meeting all morning,last one to attend, hurray :), good results and comments this time thank God.

Went back home with no idea what to cook,my son suggested shawerma and since he’s home and free he did the cooking, I only supervised and did some cheese rolls in thin bread (shark)

To the chicken he added garlic powder,oregano, chili and smoked spices then sautéed them and wrapped all in a sandwich with garlic mayonnaise mix and pickles. He roasted the sandwiches after that.

Lunch was served with French fries and a salad,thank you my handsome young man, wish you best of luck always.

Chicken Ceazar Salad.

Hello everybody.

Cleaning up the kitchen today, though it’s tiring but had to be done every now and then,but results are satisfying at the end.

Lunch was beans from yesterday with a big bowl of Ceazar Salad with grilled chicken on top,refreshing after hard work.

I also planned some nice mints in these cute pots so as upon my son’s advice those tiny ants will go away,they say mint odor repels ants,hope this trick works cause nothing else is.

Couldn’t resist to get this beautiful bunch of flowers and planted it outside by the kitchen door,lovely don’t you think?

Beetroot Roca Salad.

Hello everybody.

Remember the strawberry pineapple cake from last week? Well I did another one today for my friends’ birthdays,we went out for breakfast to Cafe Hanin again and I took it with me. Happy Birthday everybody .

Lunch was spaghetti with chicken,broccoli,sun dried tomatoes,pesto sauce and cream topped with Parmesan cheese,really yummy .

I also made this delicious salad I saw on Pinterest , it contains beetroot,roca leaves,feta cheese,flax seeds,mushrooms and peppers,dressing is simple vinaigrette, so refreshing.

Beetroot is a very healthy nutritious veggie,I always boil some and use in salads or simply sliced with a drizzle of lemon and olive oil when in season, excellent source of vitamins,fibers and anti oxidants  plus having many medical uses such as lowering blood pressure and many many more.

Moroccan Dish: Chicken with lemon and green olives.(دجاج بالزيتون)

Hello everybody.

As I said yesterday today’s lunch will be special to compensate for the lousy one, have this recipe ripped off from some magazine long time ago, really rich and juicy and of course it’ll be much tastier if you cook it in the tajin dish or pot Moroccans usually use.

Ingredients and method:

* chicken pieces with bones.

* 1 big chopped onion.

* 4-5 cloves garlic.

* 1 lemon peeled and slices.

* 1 tsp fresh ginger.

* pinch of saffron (زعفران)

* 1 cup green olives pitted.

* 1 tsp dried thyme.

* salt pepper and olive oil.

* Marinate chicken in salt,pepper,onions,garlic,thyme,saffron and ginger for 1 hour.

* heat the pan then add some olive oil, then add chicken pieces without marinate and saute till golden on all sides.

* add all marinade and leave to simmer for 10 minutes.

* add lemon slices and olives,some more slat and pepper if you like.

* add 1 cup water and leave on very low heat till done or you can put it in the oven if you wish.

* serve with rice or pitta bread .

Welcome Home Lunch.

Hello everybody.

My sister in-law and her son came home to spend Eid holiday today, so lunch was upstairs at my mother in-law’s house.

Upon upon our young handsome guest’s request she made freekeh with chicken,kofta with tahini sauce,mloukhieh and a green salad.

Everything was delicious, great family gathering like old times! tomorrow my turn to cook for iftar cause all will fast Insha’Allah.

Fettuccine Alfredo with Sun-dried Tomatoes.

Hello everybody.

Had to cook something in a hurry this morning, something that can be heated quickly when we arrive home from school ,so fettuccine with cream was a great choice.

I did this dish before,a small addition to chicken,mushrooms,pesto,cheese and cream was sun dried tomatoes,really gave a twist to it , good news many left for tomorrow 🙂

Diet Starts Today !

Hello everybody.

New month resolution DIET and back to daily WALKING habit, too much events and invitations since end of Ramadan,so now after school opened and sadly said goodbyes to most of Summer visitors it’s time to stop our mouths a bit don’t you think? hope this decision holds on cause only today I got two invitations for the next upcoming weeks , well I’ll do my best to compromise 🙁

I won’t start a fixed written diet,will try to cut down bread,carbs in general and portions cause I do have a family to feed and I won’t cook special meals for myself .

Today’s dish is very simple and easy,chicken breasts stuffed with spinach and garlic with herbs, lemon juice and soy sauce for seasoning,no salt and a bit of olive oil.

* Ingredients and method:

* chicken breasts cut in the middle.

* garlic and spinach.

* lemon juice and soy sauce.

* broccoli and mushrooms or any vegetables you prefer.

* oregano,basil or any herbs for seasoning.

* crush garlic and mix with spinach then stuff inside breasts.

* season with lemon juice and herbs.

* heat some olive oil in skillet then add breasts,keep turning till golden on both sides.

* add veggies and sprinkle all with some soy sauce then leave to simmer on low heat till all done.

* serve with simple salad .

Chicken Fajita.

Hello everybody.

Another full of events weekend,last night was the Henna party for our lovely bride Tara,lovely alive party and delicious food catered by Gourmet,wish the bride and groom an everlasting love and happiness. Today we’re invited to a wedding at the Four Seasons,best wishes to newlyweds as well!

Well lunch today was chicken fajita,very hot weather and dinner out needs a light lunch.

Ingredients and method:

* 1 large shredded boneless chicken breast.

* 1 shredded green or dry onion.

* shredded carrots.

* shredded colored peppers.

* fajita spices ready or homemade like the ones I made for quesadillas.

* pitta bread.

 

* marinate chicken in a bit of lemon juice or vinegar and 1 tablespoon of spices .

* heat some vegetable oil then add chicken and stir till dry and colored.

* add the onions,carrots and peppers and stir fry till all done.

* before serving add some sour cream or labaneh or avocado dip on the pitta bread then add chicken mix.

* wrap and toast a bit on the toaster.

Serve with simple lettuce vinaigrette salad or any of your choice.
